Since receiving this easy-to-prepare recipe from a dear friend, I've made these rolls often for the holidays. -Geraldine West, Ogden, Utah

Number Of Ingredients 8

2 packages (1/4 ounces each) active dry yeast
1 cup warm whole milk (110° to 115°)
1/2 cup shortening
2 tablespoons sugar
1 teaspoon salt
2 large eggs, room temperature
3-1/2 cups all-purpose flour
Melted butter

Steps:

  • In a large bowl, dissolve yeast in warm milk. Add the shortening, sugar, salt, eggs and 2 cups flour; beat on medium speed 3 minutes. Stir in remaining flour until smooth. Cover and let rise in a warm place until doubled, about 30 minutes., Stir batter vigorously for 25 strokes (dough will be slightly sticky). Spoon into 12 greased muffin cups. Tap pans to settle the batter. Cover and let rise until batter reaches tops of cups, about 20 minutes. Meanwhile, preheat oven to 400°., Bake 10-15 minutes or until golden brown. Brush with butter.

2 (.25 ounce) packages active dry yeast
1 ½ cups warm water (110 degrees F/45 degrees C)
½ cup shortening, melted and cooled slightly
½ cup white sugar
2 teaspoons salt
4 ½ cups all-purpose flour
2 tablespoons butter, melted

Steps:

  • In a large bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • Stir in shortening, sugar, salt and 2 cups flour; beat well. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. Scrape sides of bowl, cover and let rise until doubled in size, about 1 hour.
  • Grease 12 muffin cups. Spoon in batter until cups are half full. Let rise in warm place until batter reaches top of the cup, about 20 to 30 minutes.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Bake in preheated oven for 10 to 15 minutes. Remove from pans and brush tops with melted butter.

¾ cup milk
¼ cup butter
¼ cup white sugar
1 teaspoon salt
4 ½ teaspoons active dry yeast
1 teaspoon white sugar
½ cup warm water (110 degrees F/45 degrees C)
3 ½ cups bread flour, divided, or as needed
1 egg, lightly beaten
1 tablespoon all-purpose flour, or more as needed, for dusting

Steps:

  • Pour milk into a glass 2-cup measuring cup and heat in the microwave until it starts to boil and climb the sides, about 1 minute. Add butter, 1/4 cup sugar, and salt to the scalded milk; set aside to cool until it gets below 110 degrees F (45 degrees C).
  • Dissolve yeast and 1 teaspoon sugar in warm water in a large bowl. Let stand until the yeast softens and begins to form a creamy foam, about 10 minutes.
  • Pour milk mixture into the yeast mixture; add 2 cups bread flour and egg. Stir the mixture with a wooden spoon until smooth. Add remaining flour, 1/2 cup at a time, mixing thoroughly after each addition, until the dough is smooth and a little tacky.
  • Turn dough out onto a sheet of flour-dusted waxed paper and lightly knead to pull dough together; shape into a ball. Place dough in a large, lightly-oiled bowl, and turn to coat. Cover with a towel and let rise in a warm place for about 30 minutes.
  • Line a baking sheet with parchment paper. Divide dough into thirds. Break each third into six evenly sized balls and arrange onto prepared baking sheet. Cover balls with a towel to rise further for another 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake in preheated oven until browned, about 15 minutes.

We're going to make our own, and not only are these going to be the perfect shape, they're going to taste way better than anything that comes out of a plastic bag. The total time takes almost 4 hours, but the actual amount of work involved is maybe 10 minutes.

1 (.25 ounce) package active dry yeast (such as Fleischmann's ActiveDry Yeast®)
1 pound all-purpose flour, or as needed - divided
1 cup warm water (105 degrees F/41 degrees C)
1 large egg
3 tablespoons butter, melted
3 tablespoons white sugar
1 ¼ teaspoons salt
1 teaspoon olive oil
1 egg, beaten
1 tablespoon milk
1 teaspoon sesame seeds, or as needed

Steps:

  • Line a baking sheet with a silicone mat or parchment paper.
  • Place yeast into bowl of a large stand mixer; whisk in 1/2 cup flour and warm water until smooth. Let stand until mixture is foamy, 10 to 15 minutes.
  • Whisk 1 egg, melted butter, sugar, and salt thoroughly into yeast mixture. Add remaining flour (about 3 cups).
  • Fit a dough hook onto stand mixer and knead the dough on low speed until soft and sticky, 5 to 6 minutes. Scrape sides if needed. Poke and prod the dough with a silicone spatula; if large amounts of dough stick to the spatula, add a little more flour.
  • Transfer dough onto a floured work surface; dough will be sticky and elastic but not stick to your fingers. Form the dough lightly into a smooth, round shape, gently tucking loose ends underneath.
  • Wipe out stand mixer bowl, drizzle olive oil into the bowl, and turn dough over in the bowl several times to coat surface thinly with oil. Cover bowl with aluminum foil. Let dough rise in a warm place until doubled, about 2 hours.
  • Transfer dough to a floured work surface and pat to flatten bubbles and form into a slightly rounded rectangle of dough about 5x10 inches and about 1/2 inch thick. Dust dough lightly with flour if needed. Cut dough into 8 equal pieces. Form each piece into a round shape, gently tucking ends underneath as before.
  • Use your hands to gently pat and stretch the dough rounds into flat disc shapes about 1/2 inch thick. Arrange buns about 1/2 inch apart on prepared baking sheet. Dust buns very lightly with flour. Drape a piece of plastic wrap over the baking sheet (do not seal tightly). Let buns rise until doubled, about 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat 1 egg with milk in a small bowl, using a fork, until mixture is thoroughly combined. Very gently and lightly brush tops of buns with egg wash without deflating the risen dough. Sprinkle each bun with sesame seeds.
  • Bake in the preheated oven until lightly browned on top, 15 to 17 minutes. Buns will stick together slightly where they touch. Let cool completely, tear the buns apart, and slice in half crosswise to serve.

150 g plain flour
1 teaspoon superfine sugar (caster sugar)
2 teaspoons dried yeast (or 1/2 oz fresh yeast)
150 ml milk, hand hot (110-125F)
150 ml water, hand hot (110-125F)
300 g plain flour
50 g butter, diced
2 eggs, beaten
75 g superfine sugar (caster sugar)
175 g sultanas (or raisins)
50 g cut mixed peel
1 egg
1 teaspoon superfine sugar (caster sugar)
1 tablespoon water
40 g lumps of sugar or 40 g sugar cubes, crushed coarsely

Steps:

  • Place the batter ingredients (flour, sugar, yeast, warm milk and water) in a large bowl and beat with a wooden spoon, or on low in a mixer.
  • Leave in a warm place until frothy for about 20 minutes.
  • If you use Fast Action, bread maker, or quick yeast, omit the "leave until frothy" step.
  • For the dough, place the flour in a bowl and rub in the butter until it resembles fine breadcrumbs.
  • Add the flour and butter mixture, eggs, sugar, sultanas and mixed peel to the batter.
  • Beat well for about 10 minutes (this is a lot easier with an standing mixer!) Cover (with plastic wrap or a clean damp tea towel) and leave to rise for 1 1/2 hours or until dough has doubled.
  • Pre-heat oven to 220°C/425°F/Gas mark 7 and lightly butter or grease 2 baking sheets.
  • Beat the dough well for a few minutes, place large tablespoonfuls/globs of dough on the baking sheets (6 per sheet).
  • Cover (if you use plastic wrap, remember to oil it before hand!) and leave in a warm place for 30 minutes until doubled in size.
  • Place egg glaze ingredients in a bowl and beat until well combined.
  • Uncover buns and brush with egg glaze, then sprinkle with the crushed sugar lumps.
  • Bake for 15 to 20 minutes.
  • Leave to cool on wire rack.
  • You can also replace the sultanas and mixed peel with 225g mixed dried fruit, as long as it contains some mixed peel.

  • Stir together 2 cups flour and the yeast. In a separate bowl, heat milk, water, oil, sugar and salt to lukewarm in microwave. Add all at once to the flour mixture, and beat until smooth, about 3 minutes.

1/2 cup water
1 (1/4 ounce) packet dry yeast
1 1/2 cups milk
1/4 cup granulated sugar
1/4 cup shortening
2 teaspoons salt
2 eggs
3 3/4 cups flour

Steps:

  • Dissolve 1 tsp sugar in warm water in large bowl.
  • Sprinkle in yeast. Let stand 10 minutes, then stir well.
  • Combine milk, 1/4 cup sugar, shortening and salt in saucepan.
  • Heat until lukewarm and shortening is melted. Stir well.
  • Add to yeast mixture.
  • Add 2 3/4 cups flour and beat vigorously with wooden spoon or electric mixer until smooth.
  • Gradually stir in remaining 1 cup flour.
  • Batter will be soft.
  • Cover with tea towel.
  • Let rise in warm place until doubled about 1 hour.
  • Stir down dough and let stand 10 minutes.

  • Let rise until doubled 45 minutes.
  • Bake at 375°F for 20-25 minutes or until golden.
  • Turn out of pans immediately.
  • Serve warm and cool.

4 1/2 cups flour

1 cup milk, warmed (110*)

Steps:

  • In a large bowl, dissolve yeast in warm water (110); let stand until bubbly (about 15 minutes).
  • Stir together 2 cups of flour, sugar and salt.
  • Add 6 tablespoons of melted butter, along with egg, yeast mixture and milk.
  • Beat 5 minutes to blend well.
  • Gradually add remaining flour.
  • Cover bowl; Let batter rise for about 45 minutes or until doubled in size.
  • Pour the remaining melted butter into a 9" X 13" baking pan; Tilt pan to coat the bottom.
