PROSCIUTTO-WRAPPED SHRIMP AND MELON

Kosher salt
16 large shrimp, peeled and deveined (about 1 pound)
16 small thin slices melon (honeydew, cantaloupe and/or watermelon)
6 tablespoons extra-virgin olive oil
3 tablespoons white balsamic vinegar
1 teaspoon honey
Freshly ground pepper
8 thin slices prosciutto, halved lengthwise
1/2 cup fresh basil
1/2 cup fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the shrimp and simmer until cooked through, about 2 minutes. Drain and rinse under cold water; pat dry and transfer to a large bowl. Add the melon, 4 tablespoons olive oil, 2 tablespoons vinegar, the honey, 1/2 teaspoon salt and a few grinds of pepper; gently stir. Let marinate 15 minutes.
  • Wrap 1 melon slice and 1 shrimp in a piece of prosciutto; secure with a toothpick. Repeat with the remaining ingredients.
  • Transfer the remaining marinade to a blender. Add the remaining 2 tablespoons olive oil, 1 tablespoon vinegar and the herbs; puree. Season with salt and pepper. Serve the prosciutto-shrimp bundles with the dressing.

1 medium honeydew melon (or any kind of melon except watermelon)
1/2 lime, juice of
1/2 teaspoon red pepper flakes
1/4 teaspoon kosher salt
4 mint leaves, torn onto small pieces
6 ounces prosciutto, paper thin slices
1 tablespoon olive oil

Steps:

  • Stand the melon on one cut end and slice off the remaining rind.
  • Cut the melon in half lengthwise and scoop out the seeds.
  • Halve each melon half, so that you have four long wedges. Slice the wedges crosswise about 1/4" thick. Gently toss the melon in a bowl with the lime juice, red pepper flakes, salt and half of the mint.
  • Arrange on a platter, drape the prosciutto on top, and drizzle with the olive oil.
  • Sprinkle with the remaining mint and serve immediately.

2/3 pound prosciutto di Parma
1 ripe cantaloupe

Steps:

  • Transfer the prosciutto from the deli papers to a serving dish, separating the slices and lay them out like a ribbon on to the plate. "Fluffed up" prosciutto is much easier to pull from a serving plate.
  • To choose a ripe melon, give it a sniff and a good squeeze. Melon will be very fragrant and will give slightly to pressure when squeezed. Cut a thin slice of the melon skin away where it was attached to the vine. Trim a thin slice off the opposite side. Stand the melon upright. Using a sharp knife, clean the skin off the melon by cutting strips working from the top to the bottom all around the circumference. Turn the cleaned melon upside down and trim away any missed spots. Cut it in 1/2 and scoop out the seeds. Cut cleaned cantaloupe into thin slices or wedges and arrange on a serving plate. Pile prosciutto onto melon slices and enjoy!

about 500g different-coloured heirloom tomatoes , chopped into large chunks (smaller ones left whole or halved)
1 Charentais melon , segmented and cut into chunks roughly the same size as the tomatoes
12 slices prosciutto - the best you can afford
handful mint , leaves picked, shredded
crusty bread , to serve
1½ tbsp sherry or red wine vinegar
3 tbsp olive oil
1 tsp honey

Steps:

  • To make the dressing, whisk all the ingredients together in a bowl and set aside.
  • Toss the tomatoes and melon together in a bowl with a little dressing, some sea salt and black pepper. Loosely lay the prosciutto over a platter and pile the tomatoes and melon on top. Drizzle with extra dressing, scatter with mint and serve straight away with crusty bread.
