This recipe for golden-brown, pan-seared pork chops livened with an apricot and Dijon mustard sauce is to die for. Tender, meaty, sweet, and savory, these pork chops are the perfect weeknight dinner, but they're definitely nice enough for any special occasion.

4 boneless, 1" thick pork chops
¼ to ½ teaspoon sea salt available in our online shop
¼ teaspoon ground black pepper
2 teaspoons Ladi Extra Virgin Olive Oil available in our online shop
3/4 cup unsalted chicken stock
6 Tablespoons L'Epicurien Apricot Preserve available in our online shop
5 Tablespoons apple-cider vinegar
4 teaspoons Edmond Fallot Traditional Dijon Mustard available in our online shop
4 teaspoons finely chopped fresh sage

Steps:

  • both sides of the pork with sea salt and pepper.
  • the olive oil in a large skillet over medium-high heat until it is shimmering. Add the chops and cook the first side for four minutes. Turn over the chops and cook the other side for three minutes or until the internal temperature reaches 140°F. Remove chops to a plate and cover with aluminum foil to rest while you make the apricot-mustard sauce.
  • the heat to low, and to the pan you just cooked the pork chops, add the stock and stir to scrape any browned bits from the bottom of the pan. Cook until the liquid is reduced by half, then add the apricot preserves, vinegar, mustard, and sage, and whisk until smooth. Add in the pork and any juices from the plate, and season the sauce to taste with salt and pepper. Serve the chops with the sauce.

1/3 cup reduced-fat sour cream
1/3 cup Dijon mustard
3 tablespoons whole-grain mustard
2 tablespoons apricot jam
Sauteed Pork Chops, grilled chicken, or turkey cutlets (for serving)

Steps:

  • In a medium bowl, stir together sour cream, Dijon and whole-grain mustards, and jam until blended. Serve with Sauteed Pork Chops, grilled chicken, or turkey cutlets. Refrigerate, covered, up to 1 week.

APRICOT HABANERO PORK CHOPS

4 bone-in center-cut pork chops
Kosher salt and freshly ground black pepper
1 cup apricot preserves
2 tablespoons soy sauce
1 tablespoon grated ginger
2 cloves garlic, grated on a rasp grater
1 orange, zested and juiced
1/2 to 1 habanero pepper, seeded and diced
Vegetable oil, for the grill grates
1 tablespoon chopped fresh mint
1 green apple, peeled, cored and finely diced
1 red bell pepper, finely diced
1 scallion, thinly sliced on the bias
1 lime, zested and juiced

Steps:

  • For the pork chops: Season the pork chops with salt and pepper; set aside while making the glaze.
  • Add the apricot preserves, soy sauce, ginger, garlic, orange zest and juice and habanero to a small pot and bring to a simmer. Simmer until the sauce is reduced and thickened, 10 to 15 minutes; let cool. Divide the glaze between 2 bowls, reserving 1 bowl for basting and one for serving with the cooked chops.
  • Preheat a grill to medium-high heat. Coat the grates with plenty of vegetable oil to help create a nonstick surface.
  • Using a brush, coat the chops with the first round of glaze. Place them on the grill glazed-side down and grill without moving until the glaze begins to caramelize, about 5 minutes. Brush the tops with glaze, flip the chops, brush the other side with more glaze and continue cooking until the chops are caramelized, charred and sticky and the internal temperature registers 135 degrees F, another 7 to 10 minutes. Discard the basting glaze. Let the chops rest for 5 to 10 minutes, coating them once with the reserved serving glaze while resting.
  • For the relish: Combine the mint, apple, bell pepper, scallion and lime zest and juice in a bowl and toss to coat.
  • Top the pork chops with some green apple relish and serve with the remaining serving glaze and relish.

2 tablespoons olive oil
1 cup finely chopped onion
3 cloves garlic, finely chopped
1 cup white wine
3 1/2 cups water
1 cup white cornmeal, plus 1 cup for dredging the croutons
Salt and freshly ground pepper
3 cups canola oil
1 cup grated Parmesan cheese
1 cup grated Asiago cheese
1 tablespoon flour
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
Salt and freshly ground pepper
1 teaspoon pureed canned chipotles
Few dashes Worcestershire
Few drops hot pepper sauce
1/4 cup red wine vinegar
1 teaspoon capers
4 anchovy fillets
8 cloves garlic, roasted
3/4 cups olive oil
5 cups romaine lettuce, torn into bite sized pieces
4 (1 1/2-inch) thick center-cut loin pork chops, with bone
Salt and pepper
Olive oil

1 teaspoon Dijon mustard
1 teaspoon coarse-grained mustard

Steps:

  • Hominy Croutons:
  • Heat oil in a small saute pan. Cook onions and garlic until soft. Add wine and reduce by half. Place the water in a medium saucepan and add 2 tablespoons of salt, bring to a boil. Slowly whisk in the cornmeal and cook for, 15 to 20 minutes. Season with salt and pepper and spread into a buttered 11 by 17 inch baking sheet. Chill in the refrigerator for at least 1 hour. Heat the oil in a cast iron skillet or a deep fry to 350 degrees F. Cut the polenta into 1/2-inch squares. Dredge lightly in cornmeal and fry in batches until golden brown.
  • Parmesan Crisps:
  • Heat a large saute pan over medium heat. Combine the cheese and flour in a medium bowl. Sprinkle 2 tablespoons of the cheese into the pan to form a 4-inch circle. Cook until the cheese is somewhat melted but not firm. Using a spatula, turn the cheese over and cook until firm. Drape the crisp over a large rolling pin until cool. Repeat.
  • Salad:
  • Put all ingredients except oil in a blender and blend until smooth. Slowly add the oil and season with salt and pepper. Place the romaine in a large bowl and toss with some of the dressing. Divide among 4 plates. Scatter croutons around and place a Parmesan crisp in the center of the salad.
  • Pork:
  • Season pork with salt and pepper on both sides. Heat a few tablespoons of oil in a large saute pan until almost smoking. Cook the pork for 3 to 4 minutes on 1 side or until golden brown, turn over, reduce heat to medium and continue cooking to medium doneness. Remove to a plate and keep warm. Pour off all but 2 tablespoons of the fat. Add the garlic and onions and cook until soft. Add the wine and cook until reduced by half. Add the stock and cook to a sauce consistency. Whisk in the mustards and thyme and season with salt and pepper to taste.

  • Preheat oven to 350°F. Mist a baking dish with cooking spray. Season pork chops with salt and pepper. Warm oil in a large skillet over medium-high heat until hot but not smoking. Add chops and cook until nicely browned, about 3 minutes per side. Transfer chops to prepared baking dish and cook through in oven, 7 to 10 minutes.
  • Pour off fat from skillet and add chicken broth. Bring to a boil over high heat, stirring with a wooden spoon or heatproof spatula to pick up any browned bits on bottom of skillet. Boil rapidly until liquid is reduced by half, 3 to 5 minutes. Add apricot jam and bring mixture back to a boil. Cook sauce, stirring, until thick and syrupy, about 2 minutes. Stir in mustard.
  • Lower heat on stove to medium and return cooked pork chops to skillet along with any accumulated juices in baking dish. Turn pork chops several times in sauce to coat. Spoon remaining sauce over chops and serve hot.
