SAUSAGE SPINACH OMELET ROLL

Steps:
- 1. Preheat oven to 325 degrees F. Spray a 15x10-inch baking pan with cooking spray. Line with a piece of parchment or wax paper. Spray paper with additional cooking spray.
- 2. Beat eggs, milk, flour, green onion, salt and pepper into large bowl with a wire whisk until well blended.
- 3. Carefully pour into pan. Bake for 20 minutes or until eggs are set.
- 4. Cook sausage and mushrooms in a large skillet over medium heat for 4-5 minutes or until mushrooms are tender. Stir in spinach: cook and stir until spinach is wilted.
- 5. Loosen eggs from sides of pan and carefully invert onto another piece of parchment or waxed paper. Top with sausage mixture and 3/4 cup cheese. Roll-up.
- 6. Place on back on baking pan. Top with remaining 1/4 cup cheese. Bake for 5 minutes or until cheese is melted. Cut into slices.

- Line the bottom and sides of a greased 15x10x1-in. baking pan with parchment; grease the paper and set aside. , In a small bowl, beat cream cheese and milk until smooth. Add flour and salt; mix until combined. In a large bowl, whisk eggs until blended. Add cream cheese mixture; mix well. Pour into prepared pan., Bake at 375° until eggs are puffed and set, 30-35 minutes. Remove from the oven. Immediately spread with mustard and sprinkle with 1 cup cheese. - Preheat the oven to 375˚F (190˚C).
- Heat olive oil in a pan and add sliced peppers and onions.
- Stir and add Italian seasoning and garlic. Cook until peppers and onions are soft and set aside to cool.
- In the same pan, brown the sausage until it's fully cooked and remove from heat to cool.
- Roll out pizza dough into an oval about 14 inches (35 cm) wide and about 8 inches (20 cm) long. Place rolled-out dough on a piece of parchment paper.
- Along the center of the dough, layer the sausage, peppers, ham, salami, provolone, and mozzarella.
- Fold the longer sides in first, one at a time, and pinch the edges to seal.
- Cut off any excess dough and pinch together.
- Flip it over and apply an egg wash to the outside of the dough.
- Carefully, make two to three inch slits on the top for ventilation.
- Bake for 30 minutes, or until golden (times & temperatures may vary depending on the oven).
- Cut into 2 inch (5 cm) pieces & serve with marinara sauce for dipping.

- Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
- Heat 1 tablespoon of the olive oil in a medium saucepan over medium heat. Add the onions and 1/2 teaspoon of the oregano, season with 1 teaspoon salt and cook, stirring occasionally, until soft, about 4 minutes. Add the garlic and cook until fragrant, about 1 minute. Add the tomato puree, 1/4 cup water, 5 torn basil leaves and the red pepper flakes. Bring to a simmer and cook until slightly thickened, about 4 minutes. Season with salt and pepper.
- Meanwhile, heat the remaining tablespoon olive oil in a large skillet over medium-high heat. Add the sausage rounds and brown on both sides, about 4 minutes. Transfer to a paper-towel-lined plate. Mix the Parmesan with the remaining 1/2 teaspoon oregano in a small bowl.
- Divide the pizza dough into 8 portions. Flatten into 4-inch squares either by stretching with your hands or using a rolling pin. Spoon 1 tablespoon of sauce onto a square and spread around. Top with 1/4 cup of the Italian cheese blend, one-eighth of the sausage and 1 basil leaf. Wrap the dough around the filling and pinch the edge and ends to seal. Place seam-side down the prepared baking sheet. Repeat with the remaining dough and ingredients.
- Brush the rolls with olive oil and sprinkle with the Parmesan oregano mixture. Cut 2 slashes across the top. Bake until golden and bubbly, 20 to 25 minutes. Serve warm with the remaining sauce on the side for dipping.

- Beat the eggs with a fork; season with a pinch of salt and pepper add any fresh herbs you would like to include
- Melt the butter in an omelet pan or a nonstick 7inch pan with sloping sides. Tilt the pan from side to side to coat the bottom with melted butter. When butter is about to turn brown, add the eggs to the skillet. Over high heat, stir the eggs with your right hand while you shake the pan back and forth, up and down, with your left hand. When the underside of the omelet begins to set, tilt to pan, after you lift the edge of omelet, so that any uncooked egg from the top will run under the cooked egg and set. Run a line of the grated cheese down the middle of the omelet
- Hold the right top or side third of the omelet towards the center, then roll it over onto other third.
- Grab the handle of the omelet pan with your right hand, and roll the omelette onto a plate.
SAUSAGE ROLL

- Set the puff pastry on a baking sheet. Form the sausage into a log and place it onto the pastry. Pull one side of the pastry over the sausage and pinch the edge to create a sausage "roll". - Beat eggs with water; season with salt and pepper. Set aside. Spray an 8-inch omelet pan or nonstick skillet with cooking spray. Heat skillet over medium heat.
- In small saucepan, heat pizza sauce.
- Add sausage to skillet. Cook until browned. Set aside.
- Add pepper, onion, mushrooms, and seasoning to skillet. Cook, covered, over medium heat until peppers are soft, about 2 to 3 minutes.
- Add cooked sausage to pepper mixture. Pour eggs over pepper mixture. (Eggs should set immediately at edges). With an inverted pancake turner, carefully push cooked portions at edges toward center so uncooked portions can reach hot pan surface, tilting pan and moving cooked portions as necessary. Reserving some sauce for topping, when top of omelet is thickened and no visible liquid egg remains, spoon hot sauce over half of the omelet. Top with pepperoni and mozzarella cheese.
