Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 15

3/4 pound sweet Italian sausage
3/4 pound hot Italian sausage
2 tablespoons extra virgin olive oil, 2 turns of the pan
2 large cloves garlic, crushed
1 large onion, thinly sliced
2 cubanelle peppers (light green mild Italian peppers), seeded and thinly sliced
1 red bell pepper, seeded and thinly sliced
Salt and pepper
2 or 3 jarred hot cherry peppers, banana peppers or pepperoncini, finely chopped
3 tablespoons hot pepper juice, from the jar
4 crusty, semolina submarine sandwich rolls, 8 inches, sesame seeded or plain
1 tablespoon extra-virgin olive oil
3 tablespoons butter
1 large clove garlic
1 1/2 teaspoons dried Italian seasoning, 1/2 a handful or 1/2 teaspoons each oregano, thyme, parsley

Steps:

  • Place the sausages in a large nonstick skillet. Pierce the casings with a fork. Add 1-inch water to the pan. Bring liquid to a boil. Cover sausages, reduce heat and simmer 10 minutes.
  • Heat a second skillet over medium high heat. Add oil, 2 turns of the pan. Add garlic, onion, cubanelle and red peppers. Season vegetables with salt and pepper.
  • Drain sausages and return pan to stove, raising heat back to medium high. Add a drizzle of oil to the skillet, brown and crisp the casings. Remove sausages, slice into 2 inch pieces on an angle and set pieces back into the pan to sear.
  • Split and toast the bread under broiler. Melt oil, butter together in small pan over medium heat. Add garlic and let it sizzle 1 or 2 minutes. Brush rolls with garlic butter and sprinkle with a little dried Italian seasoning blend.
  • Combine the cooked peppers and onions to the sausages. Add hot peppers and hot pepper juice to the skillet. Toss and turn the sausage, peppers and onions, picking up all the drippings from the pan. Pile the meat and peppers into the garlic sub rolls and serve.

Provided by Julissa Roberts

Categories     Main Course

Yield 4

Number Of Ingredients 13

1/2 lb. sweet or hot Italian sausage, casings removed
1/2 small red bell pepper, thinly sliced
1/2 small green bell pepper, thinly sliced
1/2 medium yellow onion, thinly sliced
2 medium cloves garlic, minced
Kosher salt and freshly ground black pepper
1 lb. pizza dough, at room temperature
All-purpose flour, as needed
4 oz. fresh ricotta (1/2 cup)
6 oz. mozzarella, grated (1-1/4 cups)
1 large egg
1/2 tsp. finely chopped fresh rosemary
Flaky sea salt, such as Maldon

Steps:

  • Position a rack in the center of the oven. Put a pizza stone or an upside-down baking sheet on the rack and heat the oven to 450°F. Line a pizza peel or cookie sheet with parchment paper.
  • In a 12-inch nonstick skillet, cook the sausage, peppers, onion, and garlic over medium-high heat, stirring and breaking up the sausage, until the sausage browns and the onions and peppers soften, about 5 minutes. Season to taste with salt and pepper. Remove from the heat and let cool slightly.
  • Divide the dough into 4 equal pieces. Lightly flour a work surface. Using your hands or a rolling pin, stretch each piece into a 6- to 7-inch round.
  • Divide the ricotta among the four rounds, placing it on one half and leaving a little room around the edge. Top with the sausage and pepper mixture and the mozzarella. Fold the dough in half over the filling. Pinch and crimp the dough either with a fork or your fingers to seal tightly.
  • In a small bowl, whisk the egg with 1 Tbs. water. Brush over the calzones and sprinkle with the rosemary and a little sea salt. Transfer to the parchment-lined peel. Slide the parchment and calzones onto the hot pizza stone and bake until golden on top and bottom, 10 to 14 minutes, rotating halfway through baking.

PARTY SAUSAGE PIZZA ROLLS

Party Sausage Pizza Rolls image

This recipe goes overtime on flavor with all the tasty elements of a slice of sausage pizza rolled into a hand-held party treat - and more zesty sauce on the sidelines for dipping.

Provided by Food Network Kitchen

Categories     appetizer

Time 1h10m

Yield 8 servings

Number Of Ingredients 13

2 tablespoons olive oil, plus more for brushing
1/2 small onion, diced
1 teaspoon dried oregano
Kosher salt
1 clove garlic, minced
One 15-ounce can tomato puree
12 large leaves fresh basil
Pinch red pepper flakes
Freshly ground black pepper
12 ounces Italian sausage, sliced into 1/4-inch rounds
2 tablespoons grated Parmesan
1 pound frozen pizza dough, thawed and at room temperature
2 cups Italian blend shredded cheese

Steps:

  • Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
  • Heat 1 tablespoon of the olive oil in a medium saucepan over medium heat. Add the onions and 1/2 teaspoon of the oregano, season with 1 teaspoon salt and cook, stirring occasionally, until soft, about 4 minutes. Add the garlic and cook until fragrant, about 1 minute. Add the tomato puree, 1/4 cup water, 5 torn basil leaves and the red pepper flakes. Bring to a simmer and cook until slightly thickened, about 4 minutes. Season with salt and pepper.
  • Meanwhile, heat the remaining tablespoon olive oil in a large skillet over medium-high heat. Add the sausage rounds and brown on both sides, about 4 minutes. Transfer to a paper-towel-lined plate. Mix the Parmesan with the remaining 1/2 teaspoon oregano in a small bowl.
  • Divide the pizza dough into 8 portions. Flatten into 4-inch squares either by stretching with your hands or using a rolling pin. Spoon 1 tablespoon of sauce onto a square and spread around. Top with 1/4 cup of the Italian cheese blend, one-eighth of the sausage and 1 basil leaf. Wrap the dough around the filling and pinch the edge and ends to seal. Place seam-side down the prepared baking sheet. Repeat with the remaining dough and ingredients.
  • Brush the rolls with olive oil and sprinkle with the Parmesan oregano mixture. Cut 2 slashes across the top. Bake until golden and bubbly, 20 to 25 minutes. Serve warm with the remaining sauce on the side for dipping.

  • In a medium nonstick skillet over medium-high heat, cook sausage, breaking up any large chunks with a wooden spoon, until lightly browned and cooked through, about 5 minutes. Remove from skillet with a slotted spoon and transfer to a small bowl, leaving fat behind in skillet. Add bell pepper and onion to skillet and cook, stirring occasionally, until soft, about 6 minutes, adding 1 Tbsp. olive oil to skillet if mixture looks dry. Transfer to a separate small bowl.
  • Dust a 14-inch-wide pizza peel with flour or cornmeal and generously flour a work surface. Roll dough into a 12-inch round, adding more flour as needed to prevent sticking. Transfer dough to pizza peel and brush with remaining 2 tsp. olive oil.
