- Place the sausages in a large nonstick skillet. Pierce the casings with a fork. Add 1-inch water to the pan. Bring liquid to a boil. Cover sausages, reduce heat and simmer 10 minutes.
- Heat a second skillet over medium high heat. Add oil, 2 turns of the pan. Add garlic, onion, cubanelle and red peppers. Season vegetables with salt and pepper.
- Drain sausages and return pan to stove, raising heat back to medium high. Add a drizzle of oil to the skillet, brown and crisp the casings. Remove sausages, slice into 2 inch pieces on an angle and set pieces back into the pan to sear.
- Split and toast the bread under broiler. Melt oil, butter together in small pan over medium heat. Add garlic and let it sizzle 1 or 2 minutes. Brush rolls with garlic butter and sprinkle with a little dried Italian seasoning blend.
- Combine the cooked peppers and onions to the sausages. Add hot peppers and hot pepper juice to the skillet. Toss and turn the sausage, peppers and onions, picking up all the drippings from the pan. Pile the meat and peppers into the garlic sub rolls and serve.

- Remove sausage from casings and saute sausage in 2 tablespoons olive oil until browned. Drain to remove excess oil. Remove from skillet and set aside. In skillet, heat 3 tablespoons olive oil, add onions, garlic and saute stirring until onions wilt down. Add tomato sauce, salt, pepper and red pepper to taste. Simmer about 5 minutes on low.
- Stir together the sausage and onion and chopped olives. Toast bread lightly under broiler. Top with sausage mix and sprinkle grated mozzarella over all. Broil about 3 minutes under broiler until cheese melts. Watch carefully with oven door open. Remove from broiler, slice and serve.

- Position a rack in the center of the oven. Put a pizza stone or an upside-down baking sheet on the rack and heat the oven to 450°F. Line a pizza peel or cookie sheet with parchment paper.
- In a 12-inch nonstick skillet, cook the sausage, peppers, onion, and garlic over medium-high heat, stirring and breaking up the sausage, until the sausage browns and the onions and peppers soften, about 5 minutes. Season to taste with salt and pepper. Remove from the heat and let cool slightly.
- Divide the dough into 4 equal pieces. Lightly flour a work surface. Using your hands or a rolling pin, stretch each piece into a 6- to 7-inch round.
- Divide the ricotta among the four rounds, placing it on one half and leaving a little room around the edge. Top with the sausage and pepper mixture and the mozzarella. Fold the dough in half over the filling. Pinch and crimp the dough either with a fork or your fingers to seal tightly.
- In a small bowl, whisk the egg with 1 Tbs. water. Brush over the calzones and sprinkle with the rosemary and a little sea salt. Transfer to the parchment-lined peel. - Prepare and have all ingredients ready at room temperature by the grill.
- Heat a clean well oiled grill to medium high.
- Divide dough into 2 or 4 pieces roll out on a well floured board or sil pad to 1/4 inch.
- Lightly spread olive oil on one side of the dough rounds.
- Grill the dough oil side down over direct medium/ high heat until the underside of the dough is marked and can be lifted away from grill, 1 to 2 minutes.

- Preheat the oven to 375˚F (190˚C).
- Heat olive oil in a pan and add sliced peppers and onions.
- Stir and add Italian seasoning and garlic. Cook until peppers and onions are soft and set aside to cool.
- In the same pan, brown the sausage until it's fully cooked and remove from heat to cool.
- Roll out pizza dough into an oval about 14 inches (35 cm) wide and about 8 inches (20 cm) long. Place rolled-out dough on a piece of parchment paper.
- Along the center of the dough, layer the sausage, peppers, ham, salami, provolone, and mozzarella.

- In a large nonstick skillet over medium heat, add the olive oil and swirl to coat the pan.
- Add the sausage, oregano, and 1/2 teaspoon of the garlic powder. Cook for 1 minute, and then add the peppers, onions, and salt. Cook, stirring occasionally, until the sausage is no longer pink and the veggies are crisp-tender, about 3-5 minutes.
- Using a slotted spoon, remove the sausage mixture and set it aside in a bowl. Fold in the ricotta and mozzarella cheese, and season to taste with additional salt if necessary.
- Preheat the oven to 400°F.

- Heat 1 tablespoon of the olive oil in a medium saucepan over medium heat.
