SAUSAGE, ONION AND FENNEL PIZZA
Sweet caramelized onion and fennel pair perfectly with cooked pork sausage and cheese atop this delicious pizza.

Steps:
- Heat oven to 450°F. Spray cookie sheet with cooking spray.
- In 12-inch skillet, cook sausage over medium-high heat 6 to 8 minutes, stirring occasionally, until no longer pink; drain. With slotted spoon, remove sausage; set aside. Add oil to drippings in skillet; add onion and fennel. Cook over medium heat 15 minutes, stirring frequently, until golden brown. Remove from heat. Stir in pepper.
- Unroll dough on cookie sheet. Starting at center, press out dough to 16x13-inch rectangle. Prick crust generously with fork. Bake 5 minutes.
- Spread pasta sauce over partially baked crust. Top with onion mixture, sausage and cheeses. Bake on lower oven rack 10 to 12 minutes or until cheese is golden brown. Sprinkle with oregano.

I made this fennel and sausage pizza one night and it was the best pizza we have had in a long time. You can adjust the amount of toppings and sauce and cheese to your preference. For the dough, I like Jay's Signature Crust from this site.

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with foil.
- Toss fennel and onion slices with olive oil; spread out on the baking sheet.
- Roast in the preheated oven until golden, 10 to 15 minutes. Remove from the oven. Increase oven temperature to 450 degrees F (230 degrees C).
- Cook and stir sausage in a skillet over medium heat until no longer pink, about 5 minutes.
- Roll out pizza dough on a lightly floured surface. Transfer to a pizza pan or clean baking sheet. Spread sauce on top and cover with mozzarella cheese. Top with fennel, onion, sausage, and garlic slices.
- Bake in the preheated oven until cheese is melted, 15 to 17 minutes. Garnish with chopped fennel fronds.

- Preheat the oven to 400 degrees F (200 degrees C).
- Heat a frying pan over medium heat. Add olive oil. Add tomatoes, garlic, Italian seasoning, red pepper, and salt. Cook, stirring often, until tomatoes have mostly broken down, about 5 minutes. Spread tomato mixture over the pizza crust.
- Heat the same pan over medium-high heat. Add sausage and cook until browned, about 6 minutes. Remove cooked sausage from the pan and set aside, reserving grease in the pan. Add onion and fennel to the pan and cook until softened, about 5 minutes. Add spinach and cook until leaves begin to wilt, about 30 seconds.
- Spread sausage and vegetable mixture over tomato-covered crust. Scatter dollops of ricotta cheese on top. Sprinkle with shaved Parmesan cheese.
- Bake in the preheated oven until cheese is melted and top is beginning to brown, 8 to 10 minutes.

I usually make it without the chives because the flavor is still so zesty without it. This recipe is also very very easy...great for a weekday night dinner.

- Preheat oven to 450 degrees.
- Heat a non-stick skillet over medium-high heat. Add sausage to pan; saute 4 minutes or until browned, stirring occasionally. Remove from pan.
- Add oil to pan. Add fennel, onion, and salt; cover and cook 10 minutes or until tender and lightly browned, stirring occasionally.

- Trim fennel, reserving fronds and bulb. Cut fennel bulb in half lengthwise; cut each bulb half lengthwise into (1/4-inch-thick) slices. Cut bulb slices into 2-inch-long pieces. Chop fennel fronds to measure 1/3 cup.
- Bring 6 quarts water and 2 teaspoons of salt to a boil in a large stockpot. Stir in pasta; partially cover, and return to a boil, stirring frequently.
- Cook 8 minutes or until the pasta is almost al dente, stirring occasionally. Drain pasta in a colander over a bowl, reserving 2 cups cooking water.
- While pasta cooks, heat oil in a large Dutch oven over medium-high heat. Remove sausage from casings.
- Add sausage to Dutch oven; cook 2 minutes or until lightly browned, stirring to crumble. Push sausage to one side of pan.
- Add onion to open space in pan; cook 1 minute or until onion begins to soften. Stir onion into sausage.
- Push onion mixture to one side of the pan. Add fennel bulb to open space in pan; cook 1 minute or until fennel begins to soften.
- Stir fennel into onion mixture. Stir in pepper and 1/4 teaspoon salt; cook 1 minute. Move the sausage and fennel mixture to outside edges of pan, leaving an open space in center.
- Add 1/4 cup tomato paste to open space in pan; cook 1 minute, stirring constantly. Stir tomato paste into fennel mixture.
- Add reserved 2 cups cooking water to pan; bring to a boil. Reduce heat, and simmer 6 minutes or until fennel is tender.
- Add fennel fronds and pasta; cook 2 minutes or until pasta is al dente, tossing to combine. Remove from heat; stir in cheese. Serve immediately.

- Toast the nuts in a skillet over medium heat until golden, about 5 minutes. Remove them and reserve.
- Pierce the sausages with a fork and arrange in the skillet. Add 1/4 inch water and 2 tablespoons of the EVOO. Place the pan back on the heat and raise the temperature to medium-high.
- Allow the water to boil away completely, about 7 minutes. The EVOO left will coat and crisp the casings. Brown the sausages on all sides, 3-5 minutes.
- While the sausages work, heat another medium skillet over medium-high heat and add the remaining EVOO, the fennel, and the onions. Season with a little salt and pepper.
- Cook the vegetables, stirring and tossing frequently, for 5 minutes, or until just tender.
- Add the white vermouth and deglaze the pan. Add the toasted nuts and the parsley and cook for another minute, then turn off the heat.
- Slice the sausages thick, on an angle. Pile one quarter of the fennel and onions on each dinner plate and top with sliced sausages.
