MUSHROOM SAUSAGE OMELETS
When our children were young, I prepared this recipe regularly because it's fast and easy. Loaded with cheese, Italian sausage, fresh mushrooms and garlic, the recipe makes two omelets, but the ingredients can easily be increased to suit larger families.-Catherine Fontana, Fox Lake, Illinois

Steps:
- In a 10-in. nonstick skillet, cook sausage and mushrooms over medium-high heat 4-6 minutes or until sausage is no longer pink, breaking up sausage into crumbles. Remove with a slotted spoon; wipe skillet clean., In a large bowl, whisk eggs, cheese, garlic and pepper until blended. Stir in parsley., In same skillet, heat 2 teaspoons oil over medium-high heat. Pour in half of the egg mixture. Mixture should set immediately at edges. As eggs set, push cooked portions toward the center, letting uncooked eggs flow underneath. When eggs are thickened and no liquid egg remains, spoon half of the sausage mixture on one side; fold omelet in half., Cut omelet in half; slide onto serving plates. Repeat with remaining ingredients.

MUSHROOM, TOMATO AND ONION OMELET WITH HOME FRIES AND BACON
Steps:
- Preheat the oven to 400 degrees F.
- Place the bacon on a baking sheet and bake to the desired crispness, 12 to 15 minutes.
- Meanwhile, quarter the potatoes and place them and the garlic in a medium pot with cold water to cover; add salt. Bring to a boil over high heat, then lower the heat and simmer until potatoes are fully cooked and soft, about 15 minutes. Drain well.
- While potatoes are cooking, start on the omelet filling: Cut the onion into small dice; you'll need 1/2 cup. Remove and discard the stems from the mushrooms, then thinly slice the caps. Seed the tomatoes and cut into small dice.
- In a skillet over medium heat, sweat half of the onions, seasoned with salt, in some olive oil until translucent and soft, about 5 minutes. Add the mushrooms, season with salt, and continue cooking until slightly soft, another 5 minutes. Add the tomatoes; cook for 3 to 4 more minutes. Add salt to taste.
- Whisk the eggs together with 2 tablespoons water and 1/2 teaspoon salt until fluffy. Set aside.
- Heat a cast-iron skillet over medium-high heat; add olive oil to coat the pan. Add the remaining 1/4 cup diced onions and cook for 2 minutes. Add the potatoes; cook until golden brown and crispy, about 6 minutes.
- Place a nonstick skillet over medium heat; add olive oil to coat. Add the egg mixture and cook until set, frequently moving the edges away from the pan with a rubber spatula. Sprinkle with a layer of shredded fontina, add the filling to the middle, and fold the omelet. Cook until the cheese has melted, another minute or two.
- Arrange all--bacon, home fries and omelet--on a serving platter, sprinkle with fresh chives, and serve with pumpernickel toast on the side.
SAUSAGE, MUSHROOM, AND TOMATO OMELET

- Turn the stove on medium. Butter two pans and put them on the stove. Get a little bowl, and mix the eggs (hand mix them). Once you are done, add the cream (or the milk) to the eggs and mix them together.
- Set the mixture aside. Cut the sausage link to desired size and put them in one of the pans. Cut the mushrooms into fourths and put them in the pan with the sausage. Once they are done cooking, put them in a bowl. Note: the sausage should be half way cooked. If you are not done cutting the mushrooms when the sausage is half way cooked, turn it on low. Remember to turn it back on medium!
- Take the second pan and put the egg mixture in the pan, covering the hole pan. let it cook for about 4 minutes. Add cheese on the eggs. Note: Take your spatula and push the eggs on the side of the pan and push it in the pan. While you are doing that hold the pan a little bit downwards so the liquid cooks.
- Add the mushrooms, sausage, and tomatoes on ONE SIDE ONLY. Flip the side with nothing on it on top of the other side. cook about 30 seconds more. Tip: Slide the omelet off the pan by tipping the pan over slowly.

TOMATO AND MUSHROOM OMELETTE

- Whisk eggs in a bowl and stir in potato, cheese and chives.
- Pour mixture into a small frypan (preferably with a lid) that has been lightly sprayed with cooking oil.
- Evenly spread tomato and mushroom pieces over the top and season generously with black pepper.
- Cook over low-medium heat for 10-15 minutes until egg has set. You can set under a grill but I find this isn't necessary at a fairly low temperature especially if you cover the frypan during cooking.

- Crumble sausage into 10-inch nonstick skillet. Cook, stirring occasionally, over medium heat until lightly browned. Remove sausage with slotted spoon to medium bowl; discard all but 1 T. drippings.
- Stir onion into skillet. Cover and cook over low heat until onion is tender, about 5 minutes. Add potatoes and stir to coat with drippings. Cover and cook over medium-low heat 6-10 minutes. Turn potatoes with spatula. cover and cook until edges brown and potatoes are tender, 6-8 minutes longer. Sprinkle with pepper and arrange potatoes evenly in skillet. Sprinkle with layer of sausage, then layer of cheese.
- Beat eggs with milk and carefully pour over mixture in skillet. Cook covered over medium heat until eggs are set, 12-15 minutes.
- Cut into wedges and serve.

- Saute sausage in heavy large pot over medium-high heat until brown, about 12 minutes.
- Using slotted spoon, transfer sausage to large bowl.
- Add oil to drippings in pot.
- Add mushrooms and onions; saute until tender and brown, about 15 minutes.
- Stir in 1 cup chopped basil, oregano, and garlic; sauté 1 minute.
- Add wine; cook until almost absorbed, about 4 minutes.
- Add sausage and crushed tomatoes; cover and simmer over medium heat until thickened, about 25 minutes.
- Add diced tomatoes and butter; simmer until tomatoes are soft, stirring frequently, about 15 minutes.
- Season with salt and pepper.
- (Can be made 1 day ahead. Cool slightly. Chill uncovered until cold, then cover and refrigerate. Bring to simmer before continuing.).
- Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally.
- Drain well; return to pot.
- Pour sauce over pasta; toss to coat.
- Add 1/2 cup cheese and 1/2 cup basil; toss to combine.
- Season with salt and pepper.
- Transfer pasta to serving dish.
- Serve, passing remaining cheese separately.

SHEET-PAN SAUSAGES AND MUSHROOMS WITH ARUGULA AND CROUTONS
If stuffed mushrooms grew up into a main course, it would be this one-pan dinner. To start, sausages and mushrooms roast on a sheet pan, leaving behind seasoned pan drippings. Next, in a move inspired by Judy Rodgers's roast chicken with bread salad from Zuni Café in San Francisco, torn bread pieces are tossed with the drippings, then sent back to the oven to toast. The toasted bread is then tossed with arugula, red-wine vinaigrette and the roasted mushrooms, making a great mix of crispy, tangy and spicy bites. Crusty bread can be hard to tear from the loaf, but the rough edges make a more interesting final product: To ease the process, slice the bread 1/2-inch-thick, then slice crosswise 1/2-inch thick, then tear little pieces from there.

- Heat the oven to 450 degrees. Score the sausages in a few places on both sides, making sure not to cut all the way through. Toss the sausages and mushrooms on a sheet pan with 2 tablespoons olive oil, salt and pepper. Spread in an even layer and roast, shaking the pan once or twice, until browned and cooked through, 20 to 25 minutes.
- Meanwhile, in a small bowl, combine the remaining 3 tablespoons olive oil with the vinegar and garlic; season to taste with salt and pepper.
- When the sausages and mushrooms are done, use a slotted spoon or tongs to transfer to a plate, leaving the drippings behind. Add the torn bread and 1 teaspoon of the dressing to the baking sheet. If the bread seems dry, add more dressing, 1 teaspoon at a time. Roast until the bread is lightly toasted, 5 to 10 minutes.
- Add the mushrooms and arugula to the pan. Drizzle and toss with the remaining vinaigrette until lightly coated. Stir in the parsley, then season to taste with salt, pepper, oil and vinegar. Sprinkle with Parmesan and eat with the sausages.
