3-INGREDIENT VEGAN ALMOND FLOUR COOKIES {VEGAN, OIL-FREE, KETO OPTION}
Irresistible almond cookies that taste rich and buttery, despite being free of oil, eggs, butter and dairy. They are naturally grain-free, gluten-free & vegan, plus, they can be made keto-friendly with 1 substitution.

Steps:
- Preheat the oven to 350F (175C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk the almond flour, coconut sugar, baking powder and (optional) salt (breaking up all lumps in the flour). Add the water and stir until blended.
- Drop by scant tablespoons (I use a small cookie scoop, which is just shy of a tablespoon) on the prepared baking sheet, spacing 2 inches apart.
- Bake in the preheated oven for 13 to 16 minutes until golden brown and set at the centers.
- Remove from the oven and cool for 10 minutes on the baking sheet. Transfer cookies to a cooling rack and cool completely.

VEGAN ALMOND BUTTER COOKIES
These cookies are simple, fast, relatively healthy-- and vegan. We're not vegan by any means, but my 2 and 4 year-old kids love to prepare these so they have become a staple in our home! We have also tried 50% whole wheat flour / 50% white flour to satisfying results.

- 1. Preheat oven to 350 degrees.
- 2. Mix dry (first five ) ingredients together.
- 3. Separately, mix wet (last 4) ingredients together.
- 4. Combine wet mixture into dry until you achieve a consistent paste.
- 5. Form into 1-inch balls on non-stick or silicon baking sheet, spaced 2-3 inches apart.
- 6. Bake for approximately 9 minutes, or until bottoms are lightly browned; Cool on rack.

- In a medium-sized bowl whisk together the flour, sugar, cinnamon, baking powder and salt. Whisk till there are no clumps. Add your warm water and stir till everything is combined. I used a wooden spoon to do this.
- Roll into balls using a cooking scoop or around 1 1/2 tbsp. Dip into the cinnamon sugar, coat well and place onto a baking sheet. Place balls in the fridge and cool for around 30 minutes before baking at 350F for 15 minutes or until just lightly golden.

- Combine the almond flour, coconut sugar, baking powder and salt in a medium bowl and mix together. Then pour the maple syrup in the same bowl and mix well. Use a fork to help get the syrup combined and keep mixing until you have a slightly sticky batter.
- Roll the batter into half inch balls and place onto your baking sheet, spacing them at least 2 inches apart to allow for spreading. You should get about 9-10 cookies.
- Bake until edges are lightly golden, about 13-15 minutes, remove from the oven and let cool for 10 minutes before transferring to a cooling rack to cool completely.
