1 pound bulk pork sausage
10 cups cubed day-old French bread
2 cups shredded sharp cheddar cheese
1 can (4 ounces) mushroom stems and pieces, drained
5 green onions, chopped
6 large eggs
2-3/4 cups half-and-half cream
1 can (4 ounces) chopped green chiles, drained
1-1/2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon ground mustard
1/4 teaspoon paprika
1/4 teaspoon pepper
1/8 to 1/4 teaspoon hot pepper sauce

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink, breaking into crumbles, 5-7 minutes; drain and set aside. Place bread cubes in a greased 13x9-in. baking dish. Top with cheese, mushrooms, green onions and cooked sausage., In a large bowl, whisk remaining ingredients. Pour over layers. Refrigerate, covered, overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats. Bake, uncovered, until a knife inserted near the center comes out clean, 45-50 minutes. Let stand 5-10 minutes before cutting.

1 package (20 ounces) refrigerated shredded hash brown potatoes
1 can (27 to 28 ounces) whole green chiles
1 cup chunky salsa
1 pound bulk pork sausage or fresh chorizo, cooked, drained and crumbled
2 cups shredded Mexican cheese blend
6 large eggs
1/2 cup 2% milk
1/4 teaspoon ground cumin
Salt and pepper to taste
Optional ingredients: Warm flour tortillas (8 inches), sour cream and salsa

Steps:

  • Preheat oven to 350°. In a greased 13x9-in. baking dish, layer half the potatoes; all the chiles, opened flat; all the salsa; half the sausage; and half the cheese. Repeat layers with remaining potatoes, sausage and cheese., Beat eggs and milk; add cumin, salt and pepper. Pour over potato mixture., Bake, uncovered, until eggs are set in center, 35-40 minutes. Let stand 15 minutes. If desired, serve with warm tortillas, sour cream and additional salsa.

A delicious, easy casserole with sausage, eggs, sour cream, cheese and green chiles--make ahead the night before for a easy, "you'll-want-seconds" meal. This recipe must be prepared the night before it is to be baked.

½ cup salted butter, divided
5 slices white sandwich bread, or as needed
1 pound bulk pork sausage
12 large eggs
⅓ cup sour cream
1 teaspoon ground black pepper
2 cups shredded Cheddar cheese
1 (4 ounce) can chopped green chilies

Steps:

  • Butter the bottom and sides of an 8 1/2x11-inch baking dish with butter.
  • Use remaining butter to coat 1 side of each bread slice. Place bread butter-side down in the prepared pan until entire bottom is covered in a single layer.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned, crumbly, and almost fully cooked, about 5 minutes. Sprinkle sausage over bread in an even layer.
  • Beat eggs, sour cream, and pepper with either a whisk or electric beater. Pour evenly over sausage.
  • Mix Cheddar cheese and green chiles together in a separate bowl. Sprinkle evenly over the egg mixture. Cover and put in the refrigerator for 8 hours, to overnight.
  • To bake: Do not preheat the oven. Place, uncovered, in an oven and set to 350 degrees F (175 degrees C). Bake until brown on top, about 1 hour.

This easy breakfast casserole is made with sausage, tortillas, eggs, and green chile. It refrigerates overnight which makes your breakfast or brunch stress-free!

1 pound hot bulk sausage
8 corn tortillas
16 ounces chopped green chiles
16 ounces shredded Monterey Jack cheese
8 eggs
1/2 cup milk
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon paprika
avocado slices, sour cream, and salsa, to serve

Steps:

  • Cook sausage in a saucepan over medium heat. Use a spoon to break the sausage into crumbles and cook 4-5 minutes, until no longer pink.
  • Cut corn tortillas into strips.
  • Spray a 9x9 or 9x13 pan with nonstick spray.
  • Spread half of the chiles onto the bottom of the baking dish.Sprinkle half of the tortilla strips over the chiles.Add half of the sausage on top of tortilla strips.Top with half of the cheese.
  • Repeat layers.
  • Beat milk and eggs together in a large bowl, until well-beaten. Add in the spices and mix well.
  • Pour the egg mixture evenly over the top of the layered ingredients.
  • Cover and refrigerate overnight.
  • When ready to bake, preheat oven to 350 degrees.For a 9x13 pan, bake 50-60 minutes.For a 9x9 pan, bake 70-80 minutes.Remove from the oven once the middle is fully set. Let stand for 10 minutes before serving.
  • Serve with avocado, sour cream, and salsa.

Steps:
