1 1/4 cups Bisquick™ Original pancake & baking mix
1 cup milk
1 1/2 teaspoons salt
1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried oregano leaves

12 eggs

Steps:

  • Heat oven to 350°F. Grease rectangular baking dish, 13x9x2 inches. Layer sausage, mushrooms, onions, tomatoes and cheese in dish.
  • Stir remaining ingredients until blended. Pour over cheese.
  • Bake uncovered 30 to 35 minutes or until golden brown and set.

1 tablespoon unsalted butter, plus more for greasing the pie plate
8 ounces sweet Italian sausage
2 shallots, finely chopped
10 ounces frozen chopped spinach, thawed
1 1/2 ounces (about 1/3 cup) chopped sun-dried tomatoes, plus 8 thin strips for garnish
10 large eggs
1/2 cup whole milk
Kosher salt and freshly ground black pepper
2 ounces goat cheese, cut into 7 oblong pieces and 1 circular piece

Steps:

  • Preheat the oven to 325 degrees F. Grease a 9-inch deep-dish pie plate with butter.
  • Heat the butter in a large skillet over medium heat. Remove the sausage from its casing and place in the skillet. Cook, breaking apart the sausage with a wooden spoon, until cooked through and fully browned, about 10 minutes. Remove to a paper-towel-lined tray and set aside.
  • Add the shallots to the same pan and cook until soft, about 2 minutes. Add the spinach, 1/4 teaspoon salt and 1/4 teaspoon pepper and cook until the spinach is tender and its water has evaporated, 5 to 7 minutes. Add the chopped sun-dried tomatoes and cook until heated through.
  • Add the sausage to the prepared pie plate and then top with cooked spinach mixture.
  • In a medium bowl, beat together the eggs, milk, 1/4 teaspoon salt and 1/4 teaspoon pepper until frothy, about 1 minute. Pour the egg mixture over the spinach and sausage. Place the circular piece of goat cheese in the center of the pie dish and arrange the oblong pieces around it like flower petals. Place the sun-dried tomato strips in between the goat cheese "petals."
  • Bake for about 30 minutes, until set.

1 cup chopped onion (optional)
6 eggs
2 cups milk

Steps:

  • Cook sausage and onion until done; break into small pieces. Drain and set aside.
  • Combine eggs, milk, salt, pepper, and mustard into mixing bowl. Mix well.

1 lb smoked sausage
1 large onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
3 garlic cloves
2 cups cheddar cheese, shredded
1 cup mozzarella cheese, shredded
12 eggs
3/4 cup milk
salt and pepper

Steps:

  • Grease a 13x9" pan,.
  • In a skillet, cook sliced sausage until it starts to brown- about 5-7 minutes.
  • Drain sausage if necessary.
  • Add chopped onion, cook 2 minutes.
  • Add chopped green and red peppers, cook 1 minute.
  • Add three cloves finely chopped garlic and cook for about 30 more seconds.
  • Spread half of the potatoes onto the bottom of your cake pan, salt and pepper to taste.
  • Spread on half of your sausage mixture.
  • Spread on 1 cup of cheddar cheese and 1/2 cup mozzarella cheese.
  • Repeat layers.
  • In another bowl, mix together to eggs and milk, salt and pepper.
  • Pour the eggs onto the layers and let sit in the refridgerator for 8 hours.
  • Cook in the oven on 350 for 1 hour and 30-40 minutes.
  • Let stand 5 minutes before cutting.

1/2 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
2 cups milk
2 tsp. curry powder
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
4 green onions, chopped
1/4 cup chopped fresh cilantro
1-1/2 cups KRAFT Finely Shredded Triple Cheddar Cheese

Steps:

  • Heat oven to 350ºF.
  • Crumble sausage into large skillet; cook on medium heat 8 to 10 min. or until done, stirring frequently. Drain.

12 cups seasoned croutons
2 cups sharp cheddar cheese, Grated
1 1/2 lbs bulk sausage
4 eggs
2 1/2 cups milk
3/4 teaspoon dry mustard
1/2 teaspoon salt
1 dash pepper
1 can cream of mushroom soup
1/2 cup milk

Steps:

  • Place croutons on bottom of greased casserole, top with 1 1/2 cups of cheese.
  • Brown and drain sausage, put on top of cheese.
  • Beat eggs with milk and seasonings, pour over top.
  • Refrigerate overnight.
  • Next Day:
  • Dilute soup with 1/2 cup milk.

1/2 tablespoon extra virgin olive oil
1 1/2 bell peppers
1 small onion
8 large eggs
3 chicken-apple sausages
2 ounces shredded cheddar cheese
1/4 cup nonfat milk

Steps:

  • chop up the peppers and onions. turn on stove to medium heat and saute peppers and onions in olive oil until al dente. meanwhile, chop up the sausages and add to a suitable sized baking dish. once peppers and onions are done, add them to the baking dish. add one ounce (2 tbsp) shredded cheddar cheese (save the other ounce for later). add 8 scrambled eggs to the baking dish and any seasonings you prefer. I used rosemary, thyme, and pepper.
  • bake at 400 degrees for 15-20 minutes until the eggs aren't runny. then turn off the oven and scatter the remaining ounce of shredded cheddar to the top. let sit for 5 minutes to melt the cheese and cool.

8 slices sourdough bread (cut into 1/2 - 1 inch cubes)
1 1/2 cups cheddar cheese (Grated. Any other cheese may be substituted.)
10 -14 large eggs
2 cups milk
2 teaspoons dry mustard
1/8 teaspoon salt
1/8 teaspoon pepper (more or less as desired)
2/3 cup diced onion (saute onions until translucent or bit more as desired)
3/4 lb breakfast sausage (Cook sausage separately, then drain and crumble. Any preferred sausage may be substituted.)
1/8 ounce nonstick cooking spray

Steps:

  • Cook sausage then drain, crumble or thinly slice, then set aside.
  • Saute onions and other desired vegetables if any, and set aside. The first two steps can be done ahead of time and refrigerated until needed.
  • Preheat oven to 350 degrees F.
  • Spray 13" x 9" glass pan with cooking spray.
  • Cover the bottom of the pan with the cubed sourdough bread.
  • Layer 1/2 of the grated cheese on top of the bread.

  • Layer the remaining cheese over the sausage.
  • Beat together the eggs, milk, dry mustard, pinch of salt, pepper to taste, and then pour over everything in the pan.
