EASY BREAKFAST BURRITOS



Easy breakfast burritos image

Prep this hearty burrito brunch the day before for easy assembling in the morning. The recipe is just what you need after party excesses or on New Year's Day

1 tbsp olive oil
4 red peppers , finely sliced
250g chestnut mushrooms , sliced
8 spicy or herby sausages
1 tbsp olive oil
1 red onion , finely chopped
400g can pinto beans , drained and rinsed
400g can cannellini beans , drained and rinsed
400ml passata
1-2 tbsp chipotle paste
1-2 tbsp red wine vinegar
1-2 tbsp light brown soft sugar
4 vine tomatoes , finely chopped
½ small bunch of coriander , finely chopped
½ small red onion , finely chopped
1 lime , juiced
1 red chilli , deseeded and finely chopped
50g butter
1 tsp cumin seeds
12 large eggs , beaten
8 large or 16 small tortilla wraps
3 large avocados , stoned, peeled and chopped
½ small bunch of coriander , roughly chopped
50g smoked or mature cheddar , grated
lime wedges and chilli sauce (optional)

Steps:

  • To make the beans, heat the oil in a pan and fry the onion for 5 mins until soft. Add both types of beans, the passata, chipotle paste, vinegar and sugar and simmer for 15 mins until thick and saucy. Season. Add more chipotle paste, sugar or vinegar to taste - it should be a balance of sweet, spicy and tangy. To make the salsa, combine all of the ingredients and season.
  • Heat the oil in a large frying pan and fry the peppers and mushrooms for 10 mins until soft. Squeeze small chunks of sausagemeat from the sausage skins into the pan and fry for 10 mins more until golden and cooked through.
  • Warm the tortillas, then keep warm in a clean tea towel. Put the avocados, coriander, cheese and lime wedges (if using) in bowls.
  • Just before serving, make the scrambled eggs. Heat the butter in a pan and add the cumin seeds. Sizzle for 1 min, then add the eggs, stirring slowly, until scrambled. Season and tip into a warmed bowl. Serve everything in the middle of the table with chilli sauce, if using, and let everyone dig in.

  • In a small bowl, whisk the eggs, milk and pepper. In a large skillet, heat oil. Add egg mixture; cook and stir over medium heat until eggs are completely set. This is so easy and delicious whether frozen or eaten fresh and it's very easy to add variety each time.

1 lb turkey sausage, casings removed and crumbled
2 tablespoons butter
6 large egg whites or 6 large egg substitute
1/4 cup chunky mild salsa
8 (8 inch) flour tortillas
3/4 cup shredded monterey jack cheese
1 chipotle chile in adobo, seeded & chopped (optional)

Steps:

  • Over medium-high heat, in a large nonstick skillet, add the crumbled sausage. Stir and break up until sausage is browned and cooked through, about 10 minutes. Place on paper towels to drain and dispose of remaining grease.
  • Place the butter in the skillet and melt over medium-high heat. Add the eggs, stirring frequently until they're scrambled and cooked through, about two minutes. Add the cooked sausage, chipotle peppers if desired, and salsa to the egg mixture and stir gently. Remove from heat.
  • Warm the tortillas as directed on package. Place about 1/2 cup of the egg and sausage mixture onto each tortilla and sprinkle each one with cheese. To form the burrito, fold the sides of the tortilla in toward the middle and then fold up from bottom. Serve immediately or freeze.
  • If the burritos won't be eaten right away, freeze them using the following steps: Lay freezer bag flat and place the burritos inside so they are lying side by side and not overlapping. You may need to use multiple bags depending on how many burritos you are freezing. Close the bag most of the way and then press air out of the bag, gently smoothing the wrinkles so that it clings to the food to protect against freezer burn. Finish closing the bag completely and freeze as soon as possible.
  • When ready to eat, take the burrito out of the bag and wrap in a plain paper towel. Leave it wrapped in the paper towel and microwave until hot, about one to three minutes on high.

My wife and I love eating Mexican so I came up with this recipe so that we could have a little more variety in our morning meals. We are busy people and don't have time to make elaborate meals in the morning. In the past we have bought frozen breakfast burritos, but they are not very tasty and I knew they could be improved upon. This recipe will make a large batch of the burrito fixins that you can freeze, or store in the refrigerator so that you can make great breakfast burritos whenever you please.

⅔ cup milk
½ teaspoon salt
2 tablespoons butter
1 pound bulk pork sausage

  • Whisk together the eggs, milk, and salt in a large bowl. Heat butter in a large skillet over medium-high heat. Pour in the egg mixture; cook and stir until eggs are completely set, about 5 minutes. Chop the cooked eggs and place in a large bowl. Set aside.
  • Heat a large skillet over medium heat and stir in the sausage and garlic. Cook and stir for 5 minutes, then add the onion. 18 maple breakfast sausage links
4 tablespoons (1/2 stick) salted butter
2 large onions, sliced
18 large eggs
1 cup half-and-half
1/2 tablespoon seasoned salt (such as Lawry's)
1 teaspoon freshly ground black pepper
2 cups grated mild Cheddar
18 fajita-size flour tortillas
Two 16-ounce jars store-bought salsa
Green and red hot sauces for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the frozen tater tots on a sheet pan and bake for 20 minutes. Place the sausages on a sheet pan and bake for 5 minutes.
  • Melt 2 tablespoons of the butter in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until golden and caramelized, about 15 minutes.
  • Meanwhile, in a large bowl, whisk together the eggs, half-and-half, seasoned salt, and black pepper. Melt the remaining 2 tablespoons butter in a second large skillet. Add the whisked eggs and cook, stirring gently, until the eggs are set.

My Sausage Breakfast Burritos image

Sausage,Salsa & so easy. I've been making these burros for my kids and grandkids for many years. Quick, easy and oh yum... When picking your flour tortillas, pick the most flexable ones availble. Here in Arizona that's easy, but in the midwest that can be difficult. The trick is heating the tortillas in a hot skillet prior to rolling into the burro. We like Herdez Salsa which is available is most grocery stores, or use your favorite chunky salsa.

4 ounces hot pork sausage
1/2 cup salsa
5 eggs
1/2 cup cheddar cheese (shredded)

  • Cook sausage in a medium hot skillet until no longer pink, add salsa and cook until most of the liquid is gone. (Not completely dry),.
  • In another skillet scrample eggs lightly, before completely done, add to sausage/salsa mixture, set aside.

Chorizo is a Mexican sausage. It's high in fat but it's very flavorful so you don't need much of it. If you can't find it, substitute bulk pork sausage and add 1 t. taco seasoning. It won't be as good, but you'll still have a filling breakfast. If your family is larger, you may want to double this recipe but you'll need a very large skillet. Bonus - these burritos were a huge hit at an early morning tailgate party - we kept them warm in a pan sitting over some simmering water.

1/4 lb chorizo sausage
12 eggs
1/3 cup chunky salsa

  • Heat tortillas - Put 5 tortillas between damp paper towels and microwave 45 seconds. Repeat for other 5 tortillas.
  • Assemble - Put egg mixture onto warm tortilla and roll up. Place each completed tortilla in a piece of waxed paper for easy freezing and removal.
  • To reheat - microwave 2 minutes at 50% power.

I absolutely love the sausage breakfast burritos that McDonald's sells. This recipe is by no means a copycat, but it was definitely an inspiration for this recipe. I have tweaked it for over a year, and this is the final product. This is a terrific recipe if you're on the go, and it's really easy to throw together. I hope you enjoy it as much as my family does!

12 large eggs
1 lb chorizo sausage (Mexican or Argentinian)
1 tablespoon seasoning salt, divided
1 teaspoon pepper
1 (28 ounce) bag O'Brien potatoes, frozen
1/3 cup vegetable oil or 1/3 cup canola oil
2 cups four-cheese Mexican blend cheese or 2 cups cheddar cheese
hot sauce (I use Goya Salsita Chile de Arbol)
8 burrito-size flour tortillas (I use Mission)

Steps:

  • 1. Crack all 12 eggs into a bowl. Poke each yolk with a fork, add 1/2 teaspoons of the pepper and 1 1/2 tsp.of the salt and beat the eggs thoroughly. Set aside.
  • 2. Add oil to a deep skillet over medium-high heat. Cook the potatoes according to package directions, turning every 5 minutes or so until potatoes start to brown. Add the remaining salt and pepper after 10-14 minutes, about halfway through cooking time.
  • 3. While the potatoes are cooking, remove the chorizo from the casings and thoroughly cook the meat in a large fry pan over medium heat, breaking up the meat as it cooks. If there is a large amount of grease, blot away some, but not all away, with a paper towel.
  • 3. Lower the heat to medium, give the eggs a quick scramble and then add them to the chorizo. Continue cooking the eggs and chorizo until the mixture is on the dry side. Use the spatula to break up the eggs and chorizo into "crumbles.".
  • 4. Add the chorizo and egg mixture to the potatoes and gently fold it into the potatoes.
  • 5. Now set up your burrito station. Place a griddle over medium heat. Place a plate near the griddle. Place your shredded cheese in a bowl near the burrito filling. Uncap your hot sauce.
  • 6. Heat a tortillas for about 10 seconds on each side. Put it on the plate. Use a ladle and scoop out a level amount of the mixture into the lower center of the tortilla. Sprinkle a handful of cheese over the filling and shake some hot sauce on top. Fold in the right and left sides of the burrito and then bring the bottom flap over the mixture and roll it up.
  • 7. Eat it and enjoy! Or nuke it for 20-30 secs. if it isn't hot enough for you.
  • 8. For OAMC option, grab a piece of plastic wrap and wrap the burrito, making sure that the seam is down. Freeze the individual burritos for up to two months.
  • 7. To reheat, remove the plastic wrap, place the burrito on a microwave-safe plate seam side down, and microwave it for about 2 1/2 minutes on high. (I have a 1000 watt microwave and this amount of time seems to work well for me. Make adjustments for your microwave.
  • 8. Allow burrito to cool for 2 minutes before handling and ENJOY!

1 lb. chorizo sausage
1 pepper cut up small
1 Tablespoon coconut oil (OR avocado oil)
5 scrambled eggs
1 Tablespoon lemon juice
2 Cups shredded cheddar cheese

Steps:

  • In a large griddle or frying pan start the sausage on medium heat. stirring occasionally.
  • Chop up the peppers and shred the cheese.
  • Whisk the eggs with the lemon juice.
  • melt the coconut oil in the fry pan.
  • When the sausage is half done:
  • Add the chopped peppers in with the sausage and stir around for even cooking of the sausage.
  • Pour the eggs in a frying pan, or griddle, on medium low heat.
  • Scramble the eggs as the sausage is finishing.
  • Heat the tortillas
  • Set down a warm flour tortilla on a plate
  • Spread the cooked chorizo and peppers down the center
  • lay scrambled egg on evenly on top of the sausage.
  • Sprinkle shredded cheese on top of the egg

Like my mother and grandmother, I'm a frugal cook. I purchase meats in bulk, including sausage. This is one creative way I've found to use sausage in an evening entree. Our children often request these zippy burritos. -Eleanor Chlan, Ellicott City, Maryland

3/4 pound bulk pork sausage
1/2 cup chopped green pepper
1/3 cup chopped onion
1 can (15 ounces) black beans, rinsed and drained
1-1/2 cups cooked long grain rice
1-1/2 cups salsa, divided
10 flour tortillas (7 inches)
1 cup shredded cheddar cheese, divided

Steps:

  • In a large saucepan, cook sausage, green pepper and onion over medium heat until meat is no longer pink; drain. Stir in beans, rice and 1 cup salsa; mix well. , Spread about 1/2 cup sausage mixture down the center of each tortilla; sprinkle with 1 tablespoon cheese. Roll up and place, seam side down, in a greased 13x9-in. baking dish. Top with remaining salsa. , Cover and bake at 350° for 30 minutes. Uncover; sprinkle with remaining cheese. Bake 5-10 minutes longer or until cheese is melted.

18 flour tortillas
1 pound breakfast sausage
1/3 stick (about 2 1/2 tablespoons) salted butter
18 large eggs
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon hot sauce, plus more for serving
1/4 of a 16-ounce jar jalapenos plus liquid from the jar, plus more jalapenos for serving
3 cups grated cheese
Salsa, for serving

Steps:

  • Wrap the flour tortillas in paper towels and microwave them for 1 minute to make them pliable. Set them aside.
  • Crumble the sausage finely into a large skillet over a medium heat and cook until brown, 5 to 6 minutes.
  • Add the butter to a large nonstick skillet over a medium heat. Beat the eggs in a large bowl with the salt and pepper. Stir in the hot sauce, jalapenos and a splash of jalapeno juice. When the butter has melted, turn the heat to low and pour in the eggs, then add the sausage. Slowly cook the mixture, using a wooden spatula to push it around the skillet, until the eggs are totally cooked through, 8 to 10 minutes.
  • Place approximately 1/2 cup of the egg and sausage mixture into a warm tortilla, then add a pinch of cheese and roll up (do not tuck in the ends). Wrap in a foil square and keep warm until ready to serve. Repeat with the remaining ingredients. Serve with more hot sauce, jalapenos and salsa.

1/4 cup whole milk
Salt to taste
Pepper to taste
1 cup shredded cheese (Mexican, cheddar, or pepper jack, shredded)
Optional: taco sauce, hot sauce, or salsa
6 tortillas (burrito-sized flour or corn)

Steps:

  • Cook the breakfast sausage according to package directions. Make sure it is completely cooked and that there is no pink, about 170 F is appropriate.
  • In a medium bowl, whisk together the eggs, milk, salt, and pepper. Cook in a nonstick skillet as for an omelet or scramble them.
  • Spread out the tortillas onto a baking sheet. Place an equal portion of the sausage and egg on each tortilla.
  • Sprinkle an equal amount of shredded cheese on top of each tortilla. Place under the broiler of your oven to melt the cheese. Drizzle each burrito with hot sauce, taco sauce, or salsa.
  • Roll up the burrito and serve.

These easy make ahead breakfast burritos are quick, easy, and freezer friendly! A flour tortilla stuffed with sausage, eggs, cheese, and veggies! A perfect on-the-go breakfast.

16 oz roll breakfast sausage (I use hot)
1 yellow onion (diced)
1 red bell pepper (diced)
1 green bell pepper (diced)
salt (to taste)
pepper (to taste)
8 large eggs (whisked)
1 cup shredded cheddar cheese
8 burrito sized flour tortillas

Steps:

  • Heat a large non-stick sauté pan over medium heat.
  • Once hot, add in sausage, onion, and bell peppers.
  • Cook, breaking up the meat as you go, until the sausage is no longer pink and the peppers are tender.
  • Season with salt and pepper, to taste, then remove from pan and set aside in a large bowl.
  • In the same pan, add in whisked eggs. Cook until the eggs are scrambled to your liking, then season with salt and pepper.
  • Place the eggs into the large bowl with the meat mixture and stir to combine.
  • Assemble the burritos: scoop meat/egg mixture (about 3/4 cups) onto a tortilla, top with 2 tablespoons of cheese, and roll. Repeat with remaining ingredients.
  • Bake immediately (425 degrees F for about 10 minutes) or store for later.*

2 cups frozen tater tots
2 tablespoons olive oil
8 links breakfast sausage, casing removed
8 large eggs, lightly beaten
1/3 cup half and half*
Kosher salt and freshly ground black pepper, to taste
1 (16-ounce) can refried beans
8 (8-inch) flour tortillas
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
2 Roma tomatoes, diced
1/4 cup chopped fresh cilantro leaves

Steps:

  • Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray. Cook tater tots according to package instructions; set aside. Heat olive oil in a large skillet over medium high heat. Add sausage and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks; drain excess fat, reserving 1 tablespoon in the skillet. Add eggs to the skillet and cook, whisking, until they just begin to set. Gently whisk in half and half; season with salt and pepper, to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes; set aside. Spread beans down centers of tortillas; top with tater tots, sausage, eggs, cheeses, tomatoes and cilantro. Fold in opposite sides of each tortilla, then roll up, burrito-style.* Place, seam-sides down, onto preparing baking sheet; cover. Place into oven and bake until heated through, about 12-15 minutes. Serve immediately.
