A comforting and hearty one-pot sausage stew with chorizo, smoked paprika and plenty of vegetables

2 tbsp olive or rapeseed oil
1 onion, finely chopped
2 medium sticks celery, finely chopped
1 yellow pepper, chopped
1 red pepper, chopped
6 cooking chorizo sausages (about 400g)
6 pork sausages (about 400g)
3 fat garlic cloves, chopped
1 ½ tsp sweet smoked paprika
½ tsp ground cumin
1 tbsp dried thyme
125ml white wine
2 x 400g cans cherry tomatoes or chopped tomatoes
2 sprigs fresh thyme
1 chicken stock cube
1 x 400g can aduki beans, drained and rinsed
1 bunch chives, snipped (optional)

Steps:

  • Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
  • Add 1 finely chopped onion and cook gently for 5 minutes.
  • Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
  • Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
  • Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
  • Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
  • Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
  • Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
  • Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.

1 pound bulk pork sausage (or turkey sausage)
2 stalks celery (sliced)
1 onion (medium, chopped)
1 clove garlic (crushed)
42 ounces canned baked beans ( in tomato sauce)
15 ounces canned lima beans (drained)
15 ounces canned kidney beans (drained)
8 ounces canned tomato sauce
1 tablespoon dry mustard
2 tablespoons honey
1 tablespoon white vinegar
1/4 teaspoon red pepper sauce

Steps:

  • Heat the oven to 400ºF.
  • If you have sausage meat that is in casings, remove the casings from the meat. Cook the sausage, celery, onion and garlic in a 10 inch skillet over medium heat for 10 minutes, stirring occasionally, until the sausage is no longer pink. Drain of the fat.
  • Mix the sausage mixture with the remaining ingredients in an ungreased 3 quart casserole. Bake at 400ºF, uncovered, for about 45 minutes, stirring once, until everything is hot and bubbly.

1 (16 ounce) package pork sausage
2 (10.75 ounce) cans condensed cream of mushroom soup
1 cup milk
1 tablespoon soy sauce
1 clove garlic, minced
ground black pepper to taste
2 (16 ounce) packages frozen cut green beans
1 (2.8 ounce) can French-fried onions

Steps:

  • Crumble the pork sausage into a large skillet over medium-high heat. Cook and stir until evenly browned. Drain grease, and set aside.
  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13 inch baking dish with nonstick cooking spray.
  • In a large bowl, stir together the cream of mushroom soup, milk, soy sauce, garlic, and pepper. Mix in the sausage, then add the green beans, and stir until evenly coated. Pour half of the mixture into the prepared baking dish. Top with half of the fried onions. Spread remaining green bean mixture over the onions.
  • Bake for 30 minutes in the preheated oven. Remove from the oven, and sprinkle the rest of the fried onions over the top. Return to the oven for 5 to 10 more minutes, or until the onions are toasty, and green beans are cooked to your desired doneness. Let rest 5 minutes before serving.

1 pound bulk Italian sausage (spicy, turkey, chicken, pork - your choice*)
1 medium onion (chopped)
3 cloves garlic (minced)
3 cups cooked white beans (= 2 cans - or any bean you have)
1 14- ounce can diced tomatoes
1/3 cup water or chicken broth
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt (or to taste)
1/2 teaspoon black pepper (or to taste)
Cayenne pepper to taste (omit if using spicy sausage)
3 cups chopped kale (spinach or chard)
1 1/2 cups grated cheese like mozzarella (fontina, cheddar, or parmesan)

Steps:

  • Brown sausage in a large skillet (use cast iron or other 0ven-proof skillet if making as a skillet dinner) over medium-high heat. Add onion and garlic and cook until onion is softened.
  • Add beans, water or broth, tomatoes, and spices. Bring to a boil, lower heat and cook, stirring occasionally, for about 15 minutes. If it seems dry, add more water/broth at this point and taste for seasoning with salt and pepper.
  • Turn heat up to medium and add greens. If using spinach, cook only until the spinach wilts; if using kale or chard, cook until tender, about 5 to 10 minutes.
  • Preheat broiler and set rack a few inches below.
  • For Skillet: Top mixture with cheese and place skillet on rack, broiling until cheese is brown and bubbly (about 3 minutes).
  • For Ramekins: Divide the mixture between 6 one-cup ramekins and top each with about 1/4-cup of cheese. Place the ramekins on a cookie sheet and broil a few inches from the heat until the cheese is melted and browned.
  • Serve immediately with bread to sop up all the lovely juices.

3/4 cup chopped onion
1 teaspoon minced garlic
1 (16 ounce) can diced tomatoes with juice
1 teaspoon dried thyme leaves
1/2 teaspoon crushed red pepper flakes
1 (19 ounce) can cannellini or 1 (19 ounce) can other white beans, rinsed and drained
1 (10 ounce) package frozen chopped spinach, thawed and drained

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 2-quart baking dish.

1 lb. pork breakfast sausage (or turkey breakfast sausage, 12 links)
2 Tbsp. unsalted butter
4 oz. canned sliced mushrooms (drained well)
1 lb. frozen cut green beans (defrosted)
1 serving Savory Chicken Soup Keto Chow
3/4 cup low-sodium chicken broth (or mushroom broth)
1/2 cup heavy cream
1 tsp. poultry seasoning
1 tsp. granulated garlic ( or garlic powder)
1/2 tsp. ground black pepper

Steps:

  • Heat a 12-inch oven-safe frypan over medium heat.
  • Add the avocado oil* to the hot pan and swirl to coat the pan.
  • Place the sausage links in the pan, turning them regularly to brown on all sides. Once browned, remove from the pan and set aside.
  • Lower the heat and add the butter* to the pan.

1 c milk
1 Tbsp soy sauce
15 slice turkey sausage about 1/2 inch thick
1 c shredded swiss cheese

1 box stuffing mix, corn bread
1 c chopped mushrooms

  • 1. Preheat oven to 350 degrees. Grease a 3quart casserole dish.

  • Heat a Dutch oven over medium-high heat. Coat pan with cooking spray. Add onion and turkey sausage to pan; sauté for 5 minutes or until browned. Add garlic, and sauté for 2 minutes.
