Provided by Food Network Kitchen

Time 30m

Yield 4 servings

Number Of Ingredients 11

4 teaspoons extra-virgin olive oil
1 pound refrigerated pizza dough, at room temperature
1/2 cup ricotta cheese
Kosher salt and freshly ground pepper
2 teaspoons chopped fresh thyme
2 ounces Cambozola cheese, rind removed, cut into 1/4-inch pieces
2/3 cup red seedless grapes, halved
2 links hot Italian sausage (about 6 ounces), casings removed, broken into marble-size pieces
1/2 small shallot, thinly sliced and separated into rings
1 tablespoon honey
1 cup baby arugula

Steps:

  • Put a pizza stone or an inverted baking sheet on the lowest rack of the oven and preheat to 450 degrees F. Place a piece of parchment on another inverted baking sheet and brush with 2 teaspoons olive oil. Stretch and lightly pat the pizza dough into a 10-by-14-inch rectangle on the parchment. Prick the dough with a fork everywhere but the edges. Brush with the remaining 2 teaspoons olive oil. Slide the dough (on the parchment) onto the hot stone or baking sheet and bake until lightly browned on the bottom, about 8 minutes.
  • Season the ricotta with 1/4 teaspoon salt and a few grinds of pepper. Remove the crust from the oven and spread the ricotta on top. Sprinkle with the thyme and top with the Cambozola, grapes and sausage. Slide back onto the hot stone or baking sheet and continue baking until the sausage is cooked through and the crust is golden, about 10 minutes.
  • Remove from the oven and immediately scatter the shallot rings on top. Drizzle with the honey and top with the arugula.

HEALTHY WHOLE-WHEAT PIZZA WITH ARUGULA PARSLEY PESTO

Healthy Whole-Wheat Pizza with Arugula Parsley Pesto image

This nutrient-packed pesto is made with arugula for a snappy change of pace. Just a little perks up a hearty whole wheat crust-but you'll quickly find other uses for it, too. It's a great topper for crostini, elegant with grilled chicken and (surprise!) a perfect partner to pasta. The dough is just as versatile. Make a batch to keep on hand in the freezer and defrost to room temperature as needed.

Provided by Food Network Kitchen

Time 3h5m

Yield 2 pizzas (4 servings)

Number Of Ingredients 19

3/4 cup plus 2 tablespoons warm water (100 to 110 degrees F)
1 teaspoon honey
1 teaspoon active dry yeast
2 cups white whole-wheat flour, plus more for dusting
Kosher salt
1 tablespoon extra-virgin olive oil
One 14-ounce can whole plum tomatoes
1 teaspoon extra-virgin olive oil
2 cloves garlic, minced
Kosher salt
Pinch crushed red pepper flakes
3 tablespoons unsalted pistachios
1 1/2 cups packed baby arugula
1 cup packed flat-leaf parsley leaves
Kosher salt
3 tablespoons extra-virgin olive oil
1 tablespoon extra-virgin olive oil
2/3 cup shredded low-fat part-skim mozzarella
Crushed red pepper flakes, for sprinkling

Steps:

  • For the dough: Stir together the warm water, honey and yeast in a measuring cup or small bowl. Let sit until a small layer of foam develops at the top, 3 to 5 minutes. (If this doesn't happen, your yeast is old; discard it and try again with new yeast.)
  • Combine the flour and 1/2 teaspoon salt in a medium bowl and make a well in the center. Add the yeast mixture and oil to the well and incorporate with a wooden spoon until a sticky dough forms. Scrape down the sides of the bowl with a silicone spatula to reincorporate any dough stuck to the sides. Cover the bowl tightly with plastic wrap or a damp kitchen towel and keep in a warm place until the dough has doubled in size, about 1 1/2 hours.
  • Knead the dough on a floured surface just until smooth, a few seconds. Divide the dough into 2 balls, cover with plastic wrap or a damp kitchen towel and let rest on the counter for 30 minutes.
  • For the sauce: Put the tomatoes in a small bowl and rinse the can with about 2/3 cup of water into the bowl.
  • Add the oil, garlic, 1/4 teaspoon salt and crushed red pepper to a large skillet. Cook over medium heat, stirring, until the garlic just starts to turn golden, 3 to 4 minutes. Add the tomato mixture and simmer, stirring occasionally, until the sauce thickens, 15 to 20 minutes.
  • For the pesto: Preheat the oven to 400 degrees F. Spread the pistachios on a baking sheet and toast, tossing once, until slightly browned and aromatic, about 8 minutes. Let cool, then pulse in a food processor until the texture of coarse sand. Add the arugula, parsley and 1/4 teaspoon salt and pulse until the mixture is evenly chopped. Drizzle the oil through the feed tube with the machine running until well incorporated.
  • When you are ready to bake the pizza, place a pizza stone in the bottom of the oven and heat it to 450 degrees F. If you do not have a pizza stone, preheat a baking sheet that has been flipped over bottom-side up. Cut two 12-inch squares of parchment and dust with flour.
  • On a floured surface, stretch one ball of dough to a 12-inch round, leaving a thick 3/4-inch border on the edge. Slide the dough onto one of the parchment squares, then slide the square onto the back of a baking sheet. Brush the entire round with 1/2 tablespoon oil. Spread the dough up to the border with half the tomato sauce. Dollop the pizza with half the pesto using a teaspoon. Sprinkle with 1/3 cup of the mozzarella and a pinch crushed red pepper. (Don't worry if it looks like too little cheese. It will melt and spread.) Slide the pizza and parchment from the baking sheet onto the hot pizza stone.
  • Bake the pizza until the edges turn golden brown, 6 to 8 minutes, rotating halfway through cooking. Let cool for 2 minutes before slicing. Repeat with the remaining dough and toppings.

SHEET-PAN PIZZA WITH ASPARAGUS AND ARUGULA

Sheet-Pan Pizza With Asparagus and Arugula image

You might be tempted to call this a focaccia, not pizza, and you might be right, but it probably falls somewhere in between. Store-bought pizza dough can be a real time-saver, but if you can't find it refrigerated, you'll need to plan ahead to defrost frozen dough. Defrosting is best done for 24 hours or so in the fridge - or longer, as the dough will continue to ferment and improve in flavor after a day or two. The dough is easier to stretch if it's not ice cold, so let it come to room temperature. The pancetta can be omitted for vegetarians, but the lemony herb and arugula salad on top is not to be missed.

Time 35m

Yield 4 servings

Number Of Ingredients 12

4 tablespoons olive oil
1 pound fresh or thawed frozen pizza dough, at room temperature
1/2 cup fresh ricotta (about 4 ounces)
5 ounces fresh mozzarella, sliced into 1/4-inch-thick rounds
1/2 bunch asparagus (about 1/2 pound), trimmed and cut into 5-inch pieces
1 or 2 serrano or jalapeño peppers, thinly sliced
4 thin slices pancetta (optional)
1/2 cup pitted and torn green olives, like Castelvetrano
Flaky sea salt and black pepper
1 cup loosely packed Italian parsley
1 cup loosely packed baby arugula
2 teaspoons lemon juice

Steps:

  • Heat oven to 500 degrees. Pour 3 tablespoons oil into a 9-by-13-inch rimmed baking sheet and brush to coat. (If you don't have a quarter sheet pan, you can use a larger one and aim to stretch the dough into a 9-by-13-inch rectangle.) Carefully stretch dough evenly to fill the baking sheet, avoiding creating holes or thin spots. The dough probably won't fit the baking sheet, so let it rest while you prepare the rest of the ingredients. If it still resists, layering the ingredients on top will help it keep its shape.
  • Dollop the ricotta around the dough. Tear the mozzarella into pieces and distribute evenly. Toss the asparagus with the peppers and 1 teaspoon oil; arrange randomly over the cheese. Cut the pancetta slices in half, if using, and tuck them in here and there.
  • Bake on bottom rack of oven for 15 minutes. If it seems to be darkening too quickly, lower heat to 450 degrees. Remove from oven, top with olives and return to oven for another 5 minutes until cheese is starting to brown and the crust is browned and crisp. Remove pan from the oven and immediately slide the pizza off the pan and onto a wire rack to prevent sogginess. After a few minutes, slide onto a board for serving. Season with flaky salt and pepper.
  • In a medium bowl, toss parsley and arugula with lemon juice and remaining 2 teaspoons olive oil. Season with flaky salt and pepper. Garnish pizza with salad and serve.
