6 sweet Italian sausage links
1 large orange bell pepper, stemmed, seeded and thinly sliced
1 large green bell pepper, stemmed, seeded and thinly sliced
1 small yellow onion, halved and thinly sliced
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
4 hoagie rolls, for serving

Steps:

  • Preheat the oven to 425 degrees F and line a rimmed baking sheet with parchment paper. Place the onions on the prepared baking sheet and toss with 1 tablespoon olive oil and some salt and pepper. Spread the onions in an even layer and roast for 5 minutes. Remove the pan from the oven and push the onions over to one side.
  • Toss the orange and green bell peppers in a medium bowl with the remaining tablespoon olive oil and some salt and pepper. Place the seasoned peppers in the center of the baking sheet. Place the sausages in the empty area next to the peppers, spacing them evenly apart.
  • Roast until the onions are translucent and tender, the peppers are soft and charred in spots, and the sausage is completely cooked through, about 25 minutes. (For even cooking, turn the vegetables halfway through cooking.)
  • Cut the sausages into bite-size pieces and divide evenly between four hoagie rolls. Top with the peppers and onions.

1 bell pepper
1 pkg chicken apple sausage
Olive oil
1 oz Ranch dressing packet

Steps:

  • Grab a sheet pan. Then take some red potatoes and cut them into about 8 pieces. Place the cut potatoes on the sheet pan. Drizzle with olive oil. Then take the ranch packet and sprinkle about half of the packet onto the potatoes. Then mix all together so potatoes are coated with olive oil and dry ranch dressing. Then make sure they are evenly spread on the pan.
  • Then cut the carrots into the same size of pieces as the potatoes and arrange them on the pan in between the potato pieces. Then pepper the veggies.
  • Then place them in the oven that is preheated to 400 degrees for 20 minutes.
  • Then remove from oven and add the onions and bell peppers that have been cut into 1 inch squares. Arrange them on top of the cooked potatoes. And then add the chicken sausage that has been cut into 1/2 inch rounds.
  • Sprinkle the remaining ranch dressing packet on top of the ingredients on the sheet pan and then mix all together.
  • Pop back in the oven for 15 minutes. Then remove and serve!

  • Break 1 small head of cauliflower into florets. Cut any larger pieces into smaller florets, making sure they are all relatively the same size to ensure even cooking. This yields roughly 4 cups of chopped cauliflower.
  • Remove the stem, seeds, and membranes from 1 bell pepper (any color). Cut the pepper into chunks.
  • Place the green beans, cauliflower, and bell peppers onto a large sheet pan (I find that either 11x17" or 12x16" works great).
  • Drizzle the vegetables with 2 tablespoon olive oil and sprinkle with 2 teaspoon each of garlic powder and onion powder. Sprinkle ¼ teaspoon kosher salt and pepper over the top. Toss the veggies in the olive oil and spices until completely coated.
  • Cut 1 12 oz. package of sausages into large chunks. Place the sausages over the top of the vegetables, being sure not to overcrowd the pan.
  • Place the sheet pan in the oven and roast for 30 minutes or so, or until the vegetables are softened and golden brown on the outside. The sausages should be fully cooked and slightly crispy. (The safe internal temperature for sausage is 160 degrees Fahrenheit and can use checked using a food thermometer).
  • Remove the pan from the oven when finished.
  • To Serve: Serve with Parmesan cheese and fresh herbs such as basil or parsley (optional). Other serving suggestions include pickled peppers, onions, or Italian giardiniera (optional).
