Steps:
- Cream together sugar and butter in a bowl; add milk. Stir in almond, coconut, and nuts; mix well.
- Form candy into 1-inch balls. Place on waxed paper and refrigerate at least 3 hours.
- Melt chocolate in top of double boiler, stirring well. Remove from heat but allow chocolate to remain over hot water. (If chocolate becomes too thick, return to heat for a minute or so to thin). With a toothpick, dip each ball in chocolate and place on waxed paper until set.

CHOCOLATE COCONUT BALLS
Steps:
- In a bowl mix together the nuts, condensed milk, almond extract and coconut. Using your fingers, press the mixture into balls about 3/4-inch round. Place onto sheet trays and let rest at room temperature for 4 hours or in the refrigerator for 1 hour.
- After the balls have set up, melt the chocolate and shortening until smooth. Dip into the chocolate to coat evenly and lightly. Place onto a parchment or foil lined sheet pan to dry.
PAULA DEEN'S CAJUN SEAFOOD BALLS
Seafood for me is like a lollipop to a five-year-old. I get giddy when I have it. It can be expensive but worth it. These looked easy enough for me to do and cheap enough too buying when it's on sale and using canned products. This one I have adapted to fit my pocket book. I buy the frozen cocktail shrimp, but canned would work and I omitted the corn, but I went ahead and put it in this recipe to post the original. I think these are great for any time you're in the mood for seafood or having the boss and his wife over.

Steps:
- Pulse the shrimp in a food processor until finely chopped.
- Transfer the shrimp into a large mixing bowl.
- Add all the remaining ingredients except 1 of the beaten eggs and the bread crumbs, and fold together gently but thoroughly.
- Roll the mixture into 1 1/2-inch balls and dip into the beaten egg and then dredge in the bread crumbs.
- Deep-fry in 350 degree F oil until golden brown.
- Drain on paper towels.
- Serve with lemon wedges and more tartar or remoulade sauce for dipping.

- Dredge in powdered sugar and dip in the chocolate fountain.
- (I did not have a chocolate fountain so I skipped the powdered sugar and pressed a few milk chocolate chips into each one.).

Hubby and I watched Paula Deen make this yummy pie, and he just HAD to have some. It is well worth the effort.....and it's relatively quick and easy. Time to make includes time to allow chocolate to cool.

- Melt marshmallows and candy bars in milk in a double boiler.
- Remove from heat and allow to cool, and add vanilla.
- If using whipped cream, whip until set.
- Combine whipped cream/Cool Whip thoroughly, and pour into prepared crust and chill.
- Delicious with a dollop or whipped cream.

CAKE BALLS
A co-worker gave me this recipe. You can use any flavor cake mix and icing you choose. My preference is lemon, but I have used a red velvet mix and tinted almond bark with green coloring for christmas. You must refrigerate cake mix in order to roll into balls. I find it is easier to work with half of cake and leave other half in the freezer while dipping. Have fun experimenting with different flavors.

Steps:
- Bake cake according to directions on package.
- Let cool completely.
- Crumble cake mix in large bowl and mix in container of icing.
- Mix well (I find it is easiest to use hands).
- Refrigerate for approximately 30 minutes or until it will hold together when rolled into a 2 inch ball.
- In saucepan over low heat or double boiler, melt almond bark.
- Roll cake mixture into 2 inch balls.
- Dip balls in melted almond bark and set on waxed paper to dry.
