8 eggs
1 can (18.5 oz) Progresso™ Light vegetable and noodle soup
5 frozen soy-protein breakfast sausage links (4 oz), thawed, cut into 1/4-inch pieces
1/2 medium red bell pepper, cut into bite-size strips
1 teaspoon Italian seasoning or dried basil leaves
1/2 cup shredded reduced-fat Cheddar cheese (2 oz)
Chopped fresh basil leaves, if desired

Steps:

  • Heat oven to 425°F. In medium bowl, beat eggs with wire whisk until blended. Stir in soup, sausage, bell pepper and Italian seasoning. Pour into 12-inch ovenproof nonstick skillet.
  • Bake 25 to 30 minutes or until set. Sprinkle cheese over top. Cover; let stand 5 minutes before serving. Cut into wedges to serve. Sprinkle basil leaves over top.

8 large eggs
¼ cup milk
½ cup shredded mozzarella
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon garlic powder
1 tablespoon canola oil
1/2 (1-pound) package Jimmy Dean Premium Pork Sausage
1 ½ cups arugula
½ cup grape tomatoes, halved

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a cast iron skillet or 8-inch cake pan with oil and set aside. In a bowl, beat eggs and milk together until they are an even consistency. Add cheese, salt, pepper, and garlic powder, and mix.
  • In a small frying pan, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain.
  • Place sausage, arugula, and tomatoes in the sprayed pan and spread into an even layer. Pour the egg mixture over the vegetables and sausage. Put the pan into the oven and cook for about 20 minutes, until the center is set.
  • Carefully remove the frittata from the oven and let cool for 10 minutes before slicing.

2 cups cubed cooked red potatoes
8 eggs
¼ cup grated Parmesan cheese
¼ teaspoon salt
¼ teaspoon ground black pepper
½ cup chopped seeded tomato
2 green onions, thinly sliced

Steps:

  • Cook sausage in large nonstick skillet over medium heat 4-5 minutes or until hot. Stir in potatoes.
  • Beat eggs, cheese, salt and pepper in large bowl with wire whisk. Pour over sausage mixture.
  • Cook over medium-high heat 2 minutes, occasionally lifting edge with spatula and tilting skillet to allow uncooked egg to flow underneath. (Do not stir.)
  • Reduce heat to medium-low; cover. Cook 14-17 minutes or until eggs are set.
  • Top with tomato and onions. Cut into 8 wedges to serve.

Potato, Sausage and Broccoli Frittata image

Nonstick cooking spray, for the pan
Olive oil, as needed
1 pound loose breakfast sausage
1 Spanish onion, finely diced
1 large russet potato, diced
1 head broccoli, stem removed, cut into small florets
Kosher salt and freshly ground black pepper
3/4 cup whole milk
1/2 cup heavy cream
10 large eggs
1/2 bunch fresh dill, roughly chopped

Steps:

  • Preheat the oven to 400 degrees F. Grease a 9-by-13-inch casserole pan with cooking spray.
  • Set a medium pan over medium heat and add 1 tablespoon olive oil. Add the sausage and cook, breaking it up with the back of a wooden spoon or spatula, until cooked through and beginning to brown, about 5 minutes. Remove to a bowl and set aside. Add the onion to the pan and saute until translucent and the browned bits of sausage in the pan have been picked up by the onion, about 5 minutes -- this will add lots of flavor! Once the onions are cooked, add the potatoes. Cook until they are tender and just beginning to brown, about 7 minutes. If necessary, add more olive oil so the potatoes don't burn or stick to the bottom of the pan. Remove the potatoes and onions to the bowl of sausage. Coat the pan with a bit of olive oil and add the broccoli. Saute until just tender, about 5 minutes. Season with salt and pepper. Transfer to the sausage bowl.
  • Add the milk, cream, eggs and some salt and pepper to a separate medium bowl and whisk to combine.
  • Transfer the sausage and vegetable mixture to the prepared casserole pan. Toss and distribute evenly on the bottom of the pan. Gently pour the egg mixture over the top. Bake until the frittata is puffed and beginning to brown and the egg is set in the middle, about 30 minutes. Allow to set for 5 minutes before slicing. Garnish with the dill and serve. The frittata is delicious hot out of the oven, room temperature or even cold!

3 links hot Italian sausage, removed from the casing and crumbled
1 red bell pepper, 1/4-inch dice
1 yellow bell pepper, 1/4-inch dice
1 cup grated Parmigiano-Reggiano
12 eggs, beaten with 1/4 cup water

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat a nonstick 10-inch saute pan with olive oil. Add the sausage and brown. Add the peppers and saute until they are soft.
  • In a bowl, add the Parmigiano to the beaten eggs and season lightly with salt. Using a heat-proof rubber spatula, stir the eggs into the pan with the sausage and peppers. Stir the eggs to evenly distribute the sausage and peppers throughout the eggs. Once the eggs set on the bottom and around the sides of the pan, place the pan in the preheated oven for 7 to 8 minutes or until the eggs are cooked through. Remove from the pan. Cut into wedges and serve hot or a room temperature.

1 ounce parmesan cheese, grated (1/2 cup)
3 tablespoons extra-virgin olive oil
3 tablespoons coarsely chopped jarred hot cherry peppers
2 tablespoons chopped fresh parsley
salt and pepper
8 ounces sweet Italian sausage, casings removed, crumbled
2 garlic cloves, sliced thin
3 cups water
6 ounces angel hair pasta, broken in half
3 tablespoons vegetable oil

Steps:

  • Whisk eggs, Parmesan, olive oil, cherry peppers, parsley, 1/2 teaspoon salt, and 1/2 teaspoon pepper in large bowl until egg is even yellow color; set aside.
  • Cook sausage in 10-inch nonstick skillet over medium heat, breaking up sausage with wooden spoon, until fat renders and sausage is about half cooked, 3 to 5 minutes. Stir in garlic and cook for 30 seconds. Remove skillet from heat. Transfer sausage mixture (some sausage will still be raw) to bowl with egg mixture and wipe out skillet.
  • Bring water, pasta, vegetable oil, and 3/4 teaspoon salt to boil in now-empty skillet over high heat, stirring occasionally. Cook, stirring occasionally, until pasta is tender, water has evaporated, and pasta starts to sizzle in oil, 8 to 12 minutes. Reduce heat to medium and continue to cook pasta, swirling pan and scraping under edge of pasta with rubber spatula frequently to prevent sticking (do not stir), until bottom turns golden and starts to crisp, 5 to 7 minutes (lift up edge of pasta to check progress).
  • Using spatula, push some pasta up sides of skillet so entire pan surface is covered with pasta. Pour egg mixture over pasta. Using tongs, lift up loose strands of pasta to allow egg to flow toward pan, being careful not to pull up crispy bottom crust. Cover skillet and continue to cook over medium heat until bottom crust turns golden brown and top of frittata is just set (egg below very top will still be raw), 5 to 8 minutes. Slide frittata onto large plate. Invert frittata onto second large plate and slide it browned side up back into skillet. Tuck edges of frittata into skillet with rubber spatula. Continue to cook second side of frittata until light brown, 2 to 4 minutes longer.
  • Remove skillet from heat and let stand for 5 minutes. Using your hand or pan lid, invert frittata onto cutting board. Cut into wedges and serve.
