Fusilli with Sausage and Oyster Mushrooms image

Provided by Geoffrey Zakarian

Categories     main-dish

Time 40m

Yield 2 to 4 servings

Number Of Ingredients 14

Kosher salt and freshly ground black pepper
8 ounces fusilli
4 tablespoons extra-virgin olive oil, plus more for drizzling
6 ounces spicy Italian sausage removed from casings (from 2 to 3 links)
1 clove garlic, minced
Pinch pepperoncini chile flakes
1 tablespoon tomato paste
6 ounces oyster mushrooms, trimmed from the stems
1/4 cup dry white wine
1/4 cup grated Parmesan
1 tablespoon unsalted butter
1 teaspoon minced fresh rosemary
Freshly grated Pecorino-Romano, for serving
8 to 10 fresh basil leaves, torn

Steps:

  • Bring a shallow pot of water to a boil and season heavily with salt. Add the pasta to the water and begin to cook.
  • Meanwhile, in a large saute pan, heat half of the olive oil over medium heat along with the sausage and cook, breaking apart the meat into smaller pieces, until browned. Add the garlic, pepperoncini and tomato paste. Cook for 2 to 3 minutes. Add the mushrooms and cook until softened, 4 to 6 minutes longer.
  • Using a spider or slotted spoon, strain the pasta directly into the mushroom mixture. Add about 1/2 cup pasta water and the white wine and bring to a simmer. When the pasta begins to get coated and the sauce begins to thicken, add the Parmesan, butter and rosemary and turn off the heat. Stir the mixture until thickened. If too thick, add a splash of pasta water. Season to taste. Divide among bowls and garnish with Pecorino-Romano and torn basil leaves.

SAUSAGE AND MUSHROOM PENNE IN MUSTARD CREAM SAUCE

Sausage and Mushroom Penne in Mustard Cream Sauce image

"The mustard cream sauce goes really well with the meaty sausages. Pasta shapes such as penne, conchigliette, fusilli or other shapes that hold sauces well will suit this dish. A scatter of fresh herbs such as basil or chives lifts the cream sauce a little." I found this on www.soyandpepper.com. Sounds delicious and filling for a nice winter meal, but I have yet to try it.

Provided by Chef Penn State

Categories     One Dish Meal

Time 40m

Yield 2 serving(s)

Number Of Ingredients 12

12 ounces penne pasta, 2 portions (or other pasta shapes)
4 sausages
1 tablespoon olive oil
1 garlic clove, minced
2 -3 stalks spring onions, sliced into 1 inch sections
4 -5 mushrooms, thinly sliced
1 1/2 teaspoons coarse grain mustard
200 ml single cream
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons parmesan cheese (optional)
2 tablespoons basil leaves (optional)

Steps:

  • Squeeze the sausage meat out of their casings and shape into small meatballs. Heat some oil in a heavy based pan and brown the meatballs all over until just cooked. (Another method, which is what I have done, is to cook the whole sausages on the grill or fry them in a pan until cooked, and then slice them up.) Set aside.
  • Cook the pasta in a pot of boiling water until al dente, according to packet instructions.
  • While the pasta is cooking, heat the olive oil in a large heavy based pan and add the garlic and spring onions and cook over medium heat for a minute.
  • Add the mushrooms and sautee till cooked.
  • Add the sausages, mustard and cream and simmer until the sauce is reduced. Season to taste with salt and pepper.
  • When the pasta is cooked, drain and add to the mustard cream sauce. Mix well.
  • Stir in the parmesan cheese if using.
  • Dish up onto plates, scatter over basil leaves and serve immediately.

BUCATINI WITH MUSHROOMS & SAUSAGE

Bucatini with mushrooms & sausage image

Pay homage to some of the delicious pasta dishes in Umbria, where mushrooms and sausages are king - this recipe highlights the power of dried porcini stock.

Provided by Rosie Mackean

Categories     Dinner

Time 27m

Number Of Ingredients 11

20g dried porcini mushrooms
3 tbsp olive oil
4 large sausages, such as Italian or cumberland (if using cumberland, add a pinch of fennel seeds to the meat while cooking)
400g bucatini
4 garlic cloves, sliced
1-2 tsp chilli flakes
125ml white wine
150ml double cream
grating of nutmeg
large handful of flat-leaf parsley, roughly chopped
parmesan, grated, to serve

Steps:

  • Tip the dried porcini mushrooms into a large pan with 600ml boiling water from the kettle. Set over a low heat and simmer for 10-15 mins until slightly reduced to make an intense mushroom stock.
  • Heat the the oil in a large pan over a medium heat. Squeeze the sausagemeat from the skins into the pan and fry for 5-8 mins, breaking it up with a wooden spoon as it cooks, until lightly browned.
  • Meanwhile, bring a large pan of salted water to the boil. Drop in the bucatini and move it around using tongs to prevent it sticking together. Cook for 9 mins. Meanwhile, add the garlic and chilli flakes to the sausagemeat and fry for 1 min before pouring in the wine. Cook for 5 mins more until the wine has reduced, then tip in the rehydrated mushrooms and the stock (you should have about 350ml). Season with salt and black pepper, then bring to a simmer.
  • After roughly 9 mins, use the tongs to move the bucatini directly from its cooking water into the mushroom sauce. The mixture will seem quite watery at first, but the trick is to finish cooking the bucatini by simmering it in the broth - it will soak it all up and take on the earthy flavour. Keep moving the pasta in the broth using the tongs for 3 mins, or until most of the water has been absorbed. Stir in the cream, a grating of nutmeg and the parsley. Stir well, taste for seasoning and serve topped with lots of parmesan.
