RIGATONI WITH SAUSAGE & FENNEL

Rigatoni with Sausage & Fennel image

Provided by Ina Garten

Categories     main-dish

Time 1h

Yield 6 servings

Number Of Ingredients 15

3 tablespoons good olive oil
3 cups chopped fennel (1 large bulb)
1 1/2 cups chopped yellow onion
1 1/4 pounds sweet Italian sausages, casings removed
2 teaspoons minced garlic (2 cloves)
1/2 teaspoon whole fennel seeds, crushed with a mortar and pestle
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 cup dry white wine
1 cup heavy cream
2/3 cup half-and-half
2 tablespoons tomato paste
1 pound rigatoni
1/2 cup chopped fresh parsley leaves
1 cup freshly grated Italian Parmesan cheese, divided

Steps:

  • Heat the olive oil in a large heavy pot or Dutch oven, such as Le Creuset, over medium heat. Add the fennel and onion and saute for 7 minutes, stirring occasionally, until tender. Add the sausage and cook for 7 to 8 minutes, crumbling it with a fork, until nicely browned. Add the garlic, crushed fennel seeds, red pepper flakes, 2 teaspoons salt, and 1 teaspoon black pepper and cook for one minute. Pour in the wine, bring to a boil, and add the heavy cream, half-and-half, and tomato paste. Bring back to a boil, lower the heat, and simmer for 20 minutes, until the sauce has thickened.
  • Meanwhile, bring a large pot of water to a boil, add 2 tablespoons salt, and cook the rigatoni according to the directions on the package. Drain and add to the sauce, stirring to coat the pasta. Cook over low heat for 5 minutes to allow the pasta to absorb the sauce. Off the heat, stir in the parsley and 1/2 cup of the Parmesan. Serve hot in shallow bowls with the remaining 1/2 cup Parmesan on the side.

ORECCHIETTE WITH FENNEL AND SAUSAGE

Orecchiette With Fennel and Sausage image

Orecchiette pasta, the "little ears" that are typical of the Apulia region in Italy's heel, is frequently prepared with sausage and broccoli rabe. For this recipe, I've swapped the broccoli rabe for a rich fennel component, which adds a distinctive flavor profile to the pasta dish. The preparation goes fairly quickly. And as an alternative to tossing the ingredients together before serving, it can be placed in an ovenproof casserole and baked, shingled generously with shards of pecorino on top. Baking at 350 degrees will take about 20 minutes, if the ingredients are hot.

Categories     pastas, main course

Time 45m

Yield 4 servings

Number Of Ingredients 12

2 tablespoons extra-virgin olive oil
1 pound sweet Italian sausage with fennel
1 teaspoon fennel seeds
1 large fennel bulb, trimmed, cored and chopped (about 2 cups), fronds reserved
1 medium onion, chopped (about 1 cup)
1 tablespoon minced garlic
Salt
12 ounces orecchiette
1/4 cup mascarpone
Ground black pepper
3 tablespoons finely chopped flat-leaf parsley leaves
1 ounce pecorino, grated

Steps:

  • Heat oil in a 3-quart sauté pan on medium-low. Add the sausages and cook, turning frequently, until browned and cooked through, about 15 minutes. Remove sausages to a cutting board. Add fennel seeds to the pan, cook until fragrant, then add fresh fennel, onion and garlic. Sauté until translucent and just starting to color, 10 to 15 minutes. Season with salt. Turn off heat.
  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, 13 to 15 minutes. As the pasta cooks, quarter the sausages lengthwise, then slice 1/2-inch thick. Add sausage to the sauté pan and heat on medium-low. Stir in mascarpone and season generously with pepper. Add 1/2 cup pasta water. Stir and continue heating gently. Mince 2 tablespoons of reserved fennel fronds.
  • When the pasta is done, reserve another 1/2 cup pasta water. Drain pasta - you don't have to be utterly thorough about it - and add it to the sauté pan along with enough additional pasta water for a mixture that's quite moist but not soupy. Check seasoning, fold in parsley and fennel fronds, and transfer to a serving dish, individual plates or bowls. Serve with pecorino alongside.

Provided by Cassie Best

Categories     Main course

Time 1h5m

Number Of Ingredients 19

1 tbsp olive oil
12 good-quality sausages
1 small onion , chopped
1 fennel bulb , quartered, then sliced
2 garlic cloves , crushed
½ red chilli , finely chopped
2 tsp fennel seed
2 tbsp plain flour
150ml white wine
500ml chicken stock
200g pack green bean , halved
300g broad bean , double podded (unpodded weight)
300g pea
200g pot half-fat crème fraîche
zest 1 lemon , juice of ½
handful parsley , chopped
handful basil , chopped
½ red chilli , finely chopped, to serve
crusty bread , to serve

Steps:

  • Heat the oil in a large pan. Add the sausages, cook for a few mins until browned all over, then transfer to a plate. Tip the onion and fennel into the pan and cook for 10-15 mins until nice and soft, then add the garlic, half the chilli and the fennel seeds. Cook for a few mins more, moving everything around the pan now and then, to prevent the garlic from burning.
  • Stir the flour into the vegetables, and cook for 1 min. Pour in the wine, let it bubble for 1 min, give everything a good stir, then add the stock and return the sausages to the pan, seasoning well. Cover, then gently simmer for 30 mins.
  • Add the green beans, broad beans and peas, then cook, uncovered, for 2 mins more. Stir in the crème fraîche, lemon zest and juice, and herbs. Add a little more salt and pepper if it needs it, sprinkle with the chilli, then serve with plenty of bread for soaking up the juices.

BEAN, SAUSAGE, AND SPINACH CASSEROLE

Bean, Sausage, and Spinach Casserole image

A bunch of Swiss Chard, 3 to 5 cups, stems removed, chopped, can be used instead of spinach. Swiss Chard is hard to find where I live, and the difference in taste is minimal. Red Swiss Chard can be used to give the dish a different visual appeal.

PORTOBELLO, SAUSAGE, AND FENNEL DRESSING

Portobello, Sausage, and Fennel Dressing image

In a hearty play on Thanksgiving stuffing, portobello caps and dried bread cubes absorb flavor from the sweet sausage and fennel, which give the classic side a surprising depth. Make it ahead and refrigerate, then bake just before dinner to check a major dish off your turkey morning to-do list.

Provided by Greg Lofts

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Time 2h5m

Yield Serves 8 to 10

Number Of Ingredients 14

6 tablespoons unsalted butter, plus more for dish
14 ounces potato sandwich bread (14 slices)
5 tablespoons extra-virgin olive oil
10 ounces sweet Italian sausage, removed from casings
1 large yellow onion, coarsely chopped (2 cups)
2 celery stalks, coarsely chopped (1 cup), plus inner leaves for serving
1 small fennel bulb, cored and coarsely chopped (2 cups), tender fronds reserved for serving
1 pound portobello-mushroom caps (about 4), halved and cut crosswise into 1/2-inch-thick slices
Kosher salt and freshly ground pepper
2 tablespoons chopped fresh sage leaves
2 teaspoons fresh thyme leaves
1/2 cup chopped fresh parsley leaves
1 1/2 cups turkey stock, preferably homemade, or low-sodium chicken broth
2 large eggs

Steps:

  • Preheat oven to 350°F. Brush a 2 1/2-to-3-quart baking dish or 9-by-13-inch casserole dish with butter. Shingle bread on a rimmed baking sheet, then bake, flipping once, until golden and very dry, about 15 minutes. When cool enough to handle, cut into approximately 1 1/4-inch pieces. • Transfer to bowl with bread mixture along with sage, thyme, parsley, and 1 cup stock; season with salt and pepper and gently toss to combine. Whisk eggs with remaining 1/2 cup stock. Pour over bread mixture and gently stir to combine. Transfer to prepared dish. Cover with buttered parchment, then foil.
  • Bake 35 minutes. Uncover and continue baking until top is crisp and golden brown, 35 to 45 minutes more. Let cool 10 minutes, then serve, topped with fennel fronds and celery leaves.

SAUSAGE AND FENNEL CASSEROLE

An Italian country recipe - great help yourself food for friends and family

Provided by susiepet

Time 1h

Yield Serves 6

Steps:

  • Halve onions and slice thinly
  • Fry gently in a splash of oil with the fennel seeds and crushed garlic for 5 mins
  • Add pricked sausages - I like to twist my sausages in the middle so each one becomes two smalled fatter ones!
  • The idea is to brown the sausages all over whilst they absorb some of the flavour of the fennel etc
  • Peel and slice the potatoes into long wedges
  • Add potatoes, zest and juice of 2 lemons and a cupful of water, stir to coat - don't be tempted to add too much water at this stage, add 1/2 teaspoon salt
  • Transfer to casserole if necessary (I use a cast iron one that goes on the hob too) and cook at 180C(fan) 200C(standard)gas6 for about 45 mins. Check occasionally and stir gently to get all potatoes in liquid - add a bit more if needed.
  • Once potatoes are tender adjust seasoning, stir in parsley if needed and serve with green salad or veg of choice

SAUSAGE CASSEROLE

Sausage casserole image

Cooking up a meal that satisfies everyone can be tricky, but this one-pot wonder full of humble ingredients is a simple, stunning dish that will make a big impression. One for the whole family.

Provided by Jamie Oliver

Categories     7 Ways     Sausage     Potato     Leek     Tomato

Time 1h

Yield 4

Number Of Ingredients 9

6 higher-welfare Cumberland or veggie sausages
olive oil
800 g potatoes
2 heaped teaspoons wholegrain mustard
2 large carrots
2 leeks
3 tablespoons HP sauce
2 x 400 g tins of mixed beans
1 x 400 g tin of quality plum tomatoes

Steps:

  • Place the sausages in a large non-stick casserole pan on a medium-high heat with 1 tablespoon of olive oil and brown for 10 minutes, turning regularly, then remove to a plate, leaving the pan on the heat. Meanwhile, peel the potatoes, chop into even-sized chunks and cook in a large pan of boiling salted water for 15 minutes, or until tender, then drain and leave to steam dry. Mash well with half the mustard, then season to perfection. Trim, wash and chop the carrots and leeks into 2cm chunks. Stir into the fat in the pan and cook for 15 minutes, or until softened, stirring regularly, and adding a splash of water, if needed. Stir the HP sauce and remaining mustard into the veg, then pour in the beans, juice and all. Add the tomatoes, breaking them up with the spoon, then stir in 1 tin's worth of water. Bring to the boil and cook for another 10 minutes, then season to perfection.
  • Preheat the grill to high. Score the sausages at ½cm intervals and sit them cut side up in the stew. As soon as the mash is cool enough to handle, divide it into four compact balls, push them into the stew and brush with 2 tablespoons of oil. Grill on the top shelf of the oven for 15 minutes, or until golden and bubbling.

  • Place a rack in highest position in oven; preheat to 425°. Combine fennel bulbs, red onion, and rosemary sprigs on a large rimmed baking sheet. Drizzle with 3 Tbsp. oil, season generously with kosher salt and pepper, and toss to combine. Arrange sausages on top, spacing evenly and nestling into vegetables. Prick sausages all over with the tip of a paring knife and drizzle with 1 Tbsp. oil. Roast until sausages are browned on top and cooked though and fennel is tender and deeply browned in spots, 25–30 minutes.
  • Meanwhile, coarsely chop reserved fennel fronds (you want about ¼ cup); set aside. Cut the ends off orange to reveal flesh. Rest orange upright on a cut side and cut down around orange to remove peel and white pith, rotating it as you go; discard peel. Working over a small bowl, hold orange in your hand and cut between membranes to release segments into bowl. Squeeze membranes to extract any remaining juice into bowl; discard membranes. Add vinegar to orange segments and juice and toss to combine; season with kosher salt and pepper.
  • Remove baking sheet from oven. Using your hand or a spoon to block segments, pour juices from orange over sausage and fennel mixture. Set orange segments aside and let sausages and fennel mixture cool 5 minutes.

  • Pour 1½ tablespoons of the oil into a large roasting tin, put on the middle shelf of the oven and preheat the oven to 220°C, fan 200°C, gas 7.
  • Add the sausages and potatoes to the hot tin, toss gently to coat in the oil and roast for 10 minutes. Meanwhile, put the fennel, peppers, crushed garlic and mustard in a bowl with the remaining oil, season with salt and pepper, and toss gently to coat everything in the oil and mustard.
  • After the 10 minutes, add the vegetables to the roasting tin and spread out in a single layer, then pour in the cider or stock. Return to the oven and cook for another 30-35 minutes, turning the sausages halfway, until everything is cooked through and golden. Scatter with the parsley just before serving.

  • Heat half of the olive oil over medium-high heat in a large skillet or wok (see Recipe Note #4). Add the kielbasa coins in a single layer across the bottom. Brown well on both sides (~2–3 minutes per side). Remove to a bowl or plate (preferably one you'll be eating out of so you don't dirty an extra dish!).
  • Reduce the heat to medium. Add the remaining olive oil to the pan (do not wipe it out). Add the onions and fennel. Sauté until the vegetables are translucent and soft (5–7 minutes), scraping any browned bits off the bottom of the pan. Add the garlic, salt, pepper, and spice mix. Sauté for an additional minute.
  • Mix in the cabbage, mustard, and chicken broth. Lid the skillet and let the cabbage steam, stirring occasionally, until soft, 5–8 minutes.
