Steps:

  • Heat oven to 350°F. Grease rectangular baking dish, 13x9x2 inches. Layer sausage, mushrooms, onions, tomatoes and cheese in dish.

Steps:

  • Heat a large skillet over medium-high heat and stir in sausage. Cook and stir until sausage is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
  • Beat eggs in a large bowl; stir in milk, salt, and mustard. Fold bread cubes, Cheddar cheese, and sausage into egg mixture. Pour into a lightly greased 7x11-inch baking dish. Cover and refrigerate for 8 hours or overnight.

½ small loaf country-style bread (cut into ½ to 1-inch cubes (about 1½ cups))
2 tablespoons extra-virgin olive oil
1 medium onion (finely diced)
1 pound sweet Italian turkey sausage (casings removed)
One 10 to12-ounce package fresh baby spinach (drained)
One 6.5-ounce jar oil-packed sun-dried tomatoes (drained and coarsely chopped)
2 tablespoons chopped fresh basil
½ teaspoon kosher salt (plus extra for seasoning)
¼ teaspoon freshly ground black pepper (plus extra for seasoning)
One 5-ounce log goat cheese (coarsely crumbled (about 1½ cups))
6 large eggs

Steps:

  • As seen on: Giada At Home. Rise and Shine.
  • Preheat the oven to 400 degrees F.
  • Toss the bread cubes with 1 tablespoon oil and spread evenly in a single layer on a rimmed baking sheet. Bake until the cubes begin to turn light golden around the edges, 10 to 12 minutes (do not over-brown as the bread cubes will continue to brown when baked atop the sausage in the dish). Remove from the oven and set aside.
  • Heat the remaining oil in a large nonstick skillet over medium-high heat. Add the onion and sausage. Break up the sausage with a wooden spoon and cook until the sausage has cooked through and the onion is soft, 8 to 10 minutes. Add the spinach and cook, stirring frequently, until wilted, about 2 minutes. Add the sun-dried tomatoes and basil.
  • Season with ½ teaspoon salt and ¼ teaspoon pepper. Spread the mixture evenly into a 13-by-9-by-2-inch glass baking dish or ceramic baking dish. Sprinkle the goat cheese on the mixture and arrange the bread cubes on top. Make 6 slight indentations in the mixture, spacing apart. Cover and chill. This can be prepared 2 hours ahead.
  • Crack 1 egg into each indentation, making sure to keep the yolks intact. Sprinkle the eggs lightly with salt and freshly ground black pepper.
  • Bake until the egg whites are set but yolks are still runny, about 15 minutes (or 18 minutes for a fully cooked yolk).

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.

5 cups frozen country style shredded hash brown potatoes (from 30 oz pkg)
1/2 cup sliced green onion
2 (4 1/2 ounce) jars sliced mushrooms, drained
1 (2 1/4 ounce) can sliced ripe olives, drained
1 tablespoon chopped fresh basil
12 ounces shredded mozzarella-cheddar blend cheese (divided 3 cups)
8 eggs
1 1/2 cups milk
1/2 teaspoon salt
1 tablespoon olive oil or 1 tablespoon vegetable oil
1 clove garlic, minced
6 Italian plum tomatoes, chopped (about 2 cups)
1/4 teaspoon salt
2 tablespoons chopped fresh basil

Steps:

  • Spray 13X9 inch glass baking dish with nonstick cooking spray.
  • Cook sausage in large skillet until no longer pink.
  • Drain.
  • In large bowl, combine potatoes, onions, mushrooms, olives, 1 Tbls basil and 2 cups cheese.
  • Add cooked sausage; mix lightly.
  • Spoon evenly into prepared baking dish.
  • Sprinkle with remaining cheese.
  • Beat eggs in large bowl.
  • Add milk and 1/2 tsp salt; beat well.
  • Pour over potato mixture in baking dish.
  • Spray a sheet of foil with nonstick cooking spray.
  • Cover baking dish with sprayed foil; refrigerate 8 hours or overnight.
  • To serve, heat oven to 350F.
  • Bake, covered, for 45 minutes.
  • Uncover; bake an additional 20-25 minutes or until center is set.
  • Let stand 10 minutes before serving.
  • While casserole is baking, make topping by heating oil over medium heat.
  • Add garlic; cook and stir 1 minute.
  • Add tomatoes and 1/3 tsp salt; cook about 5 minutes or until tomatoes are tender, stirring occasionally.
  • Stir in 2 Tbls basil.
  • Spoon warm topping over individual servings of casserole.

2 Tbsp extra-virgin olive oil
1 medium onion, finely diced
1 lb(s) sweet Italian turkey sausage, casings removed
1 (10 to 12-oz) package fresh baby spinach, drained
1 (6 ½-oz) jar oil-packed sun-dried tomatoes, drained and coarsely chopped
2 Tbsp chopped fresh basil
½ tsp kosher salt, plus extra for seasoning
¼ tsp black pepper, freshly ground plus extra for seasoning
1 (5-oz) log goat cheese, coarsely crumbled (about 1 ½ cups)
6 large eggs

Steps:

  • Preheat the oven to 400ºF.
  • Toss the bread cubes with 1 tablespoon oil and spread evenly in a single layer on a rimmed baking sheet. Bake until the cubes begin to turn light golden around the edges, 10 to 12 minutes (do not over-brown as the bread cubes will continue to brown when baked atop the sausage in the dish). Remove from the oven and set aside.
  • Heat the remaining oil in a large nonstick skillet over medium-high heat. Add the onion and sausage. Break up the sausage with a wooden spoon and cook until the sausage has cooked through and the onion is soft, 8 to 10 minutes. Add the spinach and cook, stirring frequently, until wilted, about 2 minutes. Add the sun-dried tomatoes and basil.
  • Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Spread the mixture evenly into a 13-by-9-by-2-inch glass baking dish or ceramic baking dish. Sprinkle the goat cheese on the mixture and arrange the bread cubes on top. Make 6 slight indentations in the mixture, spacing apart. Cover and chill. This can be prepared 2 hours ahead.
  • Crack 1 egg into each indentation, making sure to keep the yolks intact. Sprinkle the eggs lightly with salt and freshly ground black pepper.
  • Bake until the egg whites are set but yolks are still runny, about 15 minutes (or 18 minutes for a fully cooked yolk).
