- In a large cast iron skillet brown the beef and set aside. In the same pan cook the sausage, breaking up as you cook (leaving big chunks, not crumbled), set aside. ingredients 1 Large onion (sliced) 4 Cloves garlic (minced) 2 Red or yellow bell peppers (sliced) instructions Add the onion, garlic and peppers, cook until just tender. ingredients 2 Cans kidney beans (drained and rinsed) 4 Russet potatoes (peeled and cut in half lengthwise and then sliced into 8ths) 1 cup beef stock Dried basil (to taste) Salt and pepper (to taste) instructions In a large casserole dish mix together the beef, sausage, onion, garlic and peppers. Add the kidney beans and potatoes. Season with salt, pepper and basil to taste. Add beef stock. Mix until everything is evenly distributed. ingredients instructions Cover and bake for about an hour or until potatoes are fork tender.

SAUSAGE AND BEEF CASSEROLE
I received this recipe from my mothers best friend Lucy. This is one of my favorite meals. This is a great dish for pot-lucks. It would also be great on a cold winters night. I also like to make it a day or two before it is to be eaten.

Steps:
- Heat skillet to medium heat.
- Brown sausage well, When finished put the sausage into a large casserole dish.
- Brown the stew beef and add to the sausage.
- Sauté onion and garlic till tender.
- Add green peppers cook additional minute.
- Add into meat.
- Stir-fry potatoes a little and add to meat.
- Add beans, bouillon and seasonings.
- Stir well.
- Cover and bake 350 1 hour and 15 minutes or until potatoes are tender.
BEEF AND ITALIAN SAUSAGE CASSEROLE
This is a hardy casserole, our friend Joe, loves making this. He changes up the sausage from time to time but always uses something with a kick to it.

Steps:
- Cook first 6 ingredients in large heavy saucepan over medium-high heat until sausage and beef are brown, crumbling with fork, about 5 minutes.
- Add tomatoes, 2 tablespoons juice (from tomatoes), tomato paste and pepper flakes; simmer 5 minutes, breaking up tomatoes with back of spoon.
- Add kidney beans and heat through.
- Season with salt and pepper.
- Add mostaccioli, Parmesan and parsley and toss to combine.
- Spray 9-by-13-inch baking pan with nonstick spray.
- Transfer mixture to prepared pan.
- Sprinkle with cheese.
- Bake until cheese melts, about 30 minutes.
SAUSAGE AND LEEK CASSEROLE

- Heat oil in a heavy bottomed skillet on medium-high heat. Saute the leeks with a pinch of salt and pepper, red pepper flakes, and 1/8 teaspoon cayenne. When the leeks are translucent raise the heat to high and add the sausage and cook for 8 minutes or until browned. Remove from heat and allow the mixture to cool.
- In a separate bowl whisk the eggs together with the cream, milk, the remaining cayenne, a pinch of black pepper and salt.
- Cut the baguette into cubes and put in the bottom of a 9 by 9-inch glass casserole dish. Sprinkle the bread with the Cheddar cheese. Pour the sausage and leek mixture and egg mixture on top. Top with pepper jack cheese. Cover tightly and refrigerate overnight.
- Preheat oven to 375 degrees F.
- The next morning remove from refrigerator. Put in the middle of the oven and bake for 45 minutes or until a knife is removed cleanly from the middle. Remove from oven and allow the casserole to stand for 10 minutes before cutting and serving.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch square baking dish.
- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
- In the prepared baking dish, stir together the shredded potatoes and butter. Line the bottom and sides of the baking dish with the mixture. In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.
- Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving.

SAUSAGE & BEAN CASSEROLE
A comforting and hearty one-pot sausage stew with chorizo, smoked paprika and plenty of vegetables

- Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
- Add 1 finely chopped onion and cook gently for 5 minutes.
- Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
- Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
- Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
- Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
- Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
- Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
- Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.

GROUND BEEF AND CABBAGE CASSEROLE
This is a simple, delicious casserole to put together. I have made this using ground beef and tomato sauce, or with a seasoned ground pork sausage and along with a traditional style spaghetti sauce. No matter how it's made, both taste great! The seasoned pork sausage I used, already had salt, course cracked pepper, dried sage, onion and fresh garlic added to it. Have also made this using a lb. of leftover (already-cooked) taco seasoned meat, which gave this dish lots of flavor.

- In a skillet, brown the ground beef; drain off the excess grease.
- Add beef back to the skillet, then add the onion, garlic, salt & pepper, and the red pepper flakes.
- Add the tomato sauce, stir and heat the tomato/beef mixture, over low heat.
- At this point, set the oven temp to 350 degrees.
- Spray the inside of a 2-1/2 quart casserole baking dish, with a no-stick cooking spray.
- Add 2 cups of the shredded cabbage to the casserole baking dish.
- Add half of the tomato/beef mixture, over the shredded cabbage.
- Repeat layer of cabbage and tomato/beef mixture.

- Cook pasta according to package directions. Meanwhile, in a Dutch oven, cook sausage over medium heat until no longer pink; drain and set aside., In the same Dutch oven, saute mushrooms and onion in oil until tender. ITALIAN SAUSAGE AND BEEF RICE CASSEROLE
Inexpensive and easy to make...you can't beat that. Even my pickiest of eaters asks for 2nds. This recipe actually makes enough meat and sauce to freeze half and make the dish a second time saving even more money.

- In large skillet heat oil. Add both the diced onions and diced green bell peppers along with the minced garlic, and half the salt and pepper and saute until the onions and peppers are soft.
- Add both the Italian sausage and ground chuck and brown until there is no more pink. While browning the meat make the rice to package instructions.
- Drain most but not all of the excess grease. Add the rustic cut tomatoes, beef broth, Worcestershire sauce and soy sauce and the remaining salt and pepper. Bring to a boil and cook for 10-15 minutes.
- Remove half the meat mixture and place in freezer bag to save for another time.
- Pour rice into large serving bowl and pour remaining meat mixture on top. Mix well then serve.
