MOM'S ORIGINAL YEAST DOUGH FOR KRAUT BURGERS



Mom's Original Yeast Dough for Kraut Burgers image

Number Of Ingredients 7

2 packages of active yeast
1/2 cup warm water
1/2 cup sugar
1/2 cup vegetable oil
1 1/2 cups milk (room temperature)
1 tsp salt
2-3 cups bread flour

Steps:

  • Add yeast and 2 teaspoons of the sugar to warm water *see note
  • Stirring add milk and oil to water mixture
  • Mix about 2 cups of flour with the remainder of sugar and salt
  • Add dry mixture to liquid mixture
  • Mix with mixer until dough is elastic
  • Put in enough flour to make bread dough form into a nice ball
  • Pour out onto a lightly floured surface and knead (if you use a kitchen aid mixer instead let it mix on low speed 6-8 minutes and skip this step)
  • Let dough rise while you make the meat and cabbage mixture

1 3/4 pounds 80/20 ground chuck
1 1/2 yellow onions, chopped into 1/4-inch pieces
2 teaspoons freshly ground black pepper
1 medium head green cabbage, chopped into 1/4-inch pieces
1/2 cup Lauer Kraut (you may substitute bagged sauerkraut, not canned)
Salt
2 tablespoons active dry yeast
1 tablespoon sugar
3/4 cup powdered milk
8 cups all-purpose flour, plus more for dusting
2 teaspoons salt
3/4 cup shortening
3 eggs
1 teaspoon vegetable oil

Steps:

  • For the burger filling: Brown the ground chuck in a large skillet over medium heat, crumbling the meat pretty finely as it browns. Add the chopped onions and 1 teaspoon of the pepper. Cook the onion down a little, 3 to 5 minutes. Add the chopped cabbage, sauerkraut, remaining 1 teaspoon pepper and 1 teaspoon salt. Let the mixture cook, 10 to 15 minutes, depending on how done you like the cabbage. Strain and let cool.
  • For the dough: Put the yeast and sugar in a 4-cup measuring cup and add warm water to the 1-cup mark. Stir together and let sit until the yeast rises to twice its original size. Put the powdered milk in another 4-cup measuring cup and add water to the 2-cup mark. Stir together. In a large mixing bowl, add the flour, salt and shortening. Cut the shortening into the flour by hand. Next, make a well in the flour and add the eggs, yeast mixture and the powdered milk mixture to the flour. Work it all together until the dough comes away from the bowl (you may need a touch more flour or water). Oil the dough slightly on each side, cover and let rise, for 10 minutes. Pinch and let rise another 15 minutes.
  • To assemble the Lauer-Kraut burgers: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Lightly flour a work surface and put the dough on the flour. Begin to roll the dough as close to a rectangle as you can, roughly 24-by-30 inches. Once the dough is rolled out, cut the dough into squares, roughly 6-by-6 inches. Take a square of dough and roll it out a little bigger, roughly 8-by-8 inches. Turn the re-rolled square over and add a full cup of filling mixture into the middle of the dough. Bring the opposite corners of the square together, and then bring the other 2 opposite corners together. You should have all 4 corners drawn together. Pinch down the 4 seams of the dough. Once you pinch all the seams, push down slightly on the kraut burger. This will release extra air and help you find any place you missed sealing the kraut burger. Turn the sealed pocket over and place it on the prepared baking sheet. Repeat with the remaining ingredients. Bake for 15 to 20 minutes.

Steps:

  • Press pizza dough onto a lightly greased 14-in. round pizza pan. Bake at 450° for 4 minutes; set aside. , In a large skillet, cook the sausage, onion, 1 teaspoon fennel seed, oregano, basil and garlic until the sausage is no longer pink and onion is tender; drain. , Sprinkle crust with 1/2 cup mozzarella cheese. Spread with pizza sauce, sausage mixture, tomatoes, sauerkraut and remaining fennel seed and mozzarella. Sprinkle with Parmesan cheese. , Bake at 450° for 18-20 minutes or until golden brown and bubbly. Let stand for 5 minutes before cutting.

1 to 1 /4 lb bulk sausage, or i have used kielbasi
1 c chopped onion

2 c shredded mozzarella cheese or i used shredded swiss cheese
1 - 15 oz can pizza sauce, i use delgrosso pepperoni flavor

1/4 c parmesan cheese

Steps:

  • 1. Preheat oven at 450°.

  • 3. In a large skillet, cook the sausage or kielbasi, onion, 1 teaspoon fennel seed, oregano, basil, and garlic until the sausage is no longer pink and onion is tender. Drain.

5 pounds green cabbage, shredded
3 tablespoons pickling salt
1 tablespoon juniper berries
2 teaspoons caraway seeds
1 quart water, in a sanitized glass jar

Steps:

  • In large mixing bowl, mix cabbage thoroughly with salt, juniper berries, and caraway seeds, using hands or tongs. If using your hands, make sure that they are very clean prior to mixing. Let stand for 10 minutes.
  • Pack cabbage mixture down into a large plastic food container. Top with a lid smaller than the opening of the container and place a glass jar filled with the quart of water on top of the lid. Place in cool area overnight (65 to 70 degrees F). In a day, the cabbage should have given up enough liquid to be completely submerged. The jar serves as a weight to keep the cabbage submerged and away from air.
  • Check cabbage every other day for approximately 2 weeks and skim the surface of scum, if necessary. Let stand for 4 weeks. Transfer to an airtight container and store in the refrigerator for up to 6 months.

1 16-ounce purchased fully baked thick pizza crust
3 tablespoons Dijon mustard
8 ounces fully cooked kielbasa sausage, thinly sliced into rounds

Steps:

  • Preheat oven to 425¡F. Heat oil in heavy large skillet over medium-high heat. Add onion and caraway seeds and sauté until onion just begins to brown, about 7 minutes. Transfer onion mixture to large bowl. Mix in sauerkraut and 1 tablespoon sauerkraut juice. Cool to lukewarm, then mix in cheese. Season generously with pepper.
  • Place pizza crust on baking sheet. Spread with Dijon mustard and top with sausage, then sauerkraut mixture.
  • Bake pizza until cheese melts, topping begins to brown and crust is crisp, about 15 minutes. Transfer pizza to work surface; cut into wedges and serve.

2 large pizza crusts (home made, ready made, from a mix, or from pre baked round loaves of flat bread, flour tortillas)
PIZZA TOPPINGS
1 can(s) spaghetti sauce (or alfredo sauce)
1 can(s) (15 ounces) sauerkraut (drained, squeezed and lightly chopped)
3 large brautwurst sausages (cooked and sliced into coins)
8 oz mozzarella cheese (shredded)
8 oz sharp ceddar cheese (shredded)

Steps:

  • 1. Preheat oven to 425 degrees.
  • 2. Prepare your pizza crusts and put on pizza pans or baking sheets.
  • 3. Choose what kind of sauce you want, and spread it onto the crust. "Fluff UP" the prepared sauerkraut, sprinkle evently over the two pizza crusts. Evenly distribute the brat coins on top of the sauerkraut layer. Sprinkle the cheeses over the pizzas.
  • 4. Bake for 18 minutes or until the cheeses are melted, and browned slightly. Remove from oven, cut into wedges or squares... serve!
  • 5. *** You can either bake both pizzas now... or bake one and freeze one... I bake both right away and have left overs during the week.
