This was another one of my Mom's recipes that I thought was wonderful, although my siblings didn't care much for sauerkraut! Very inexpensive with a German flair, and in my opinion, very tasty! Especially when served with crusty, warm bread and a side of buttered noodles!

2 tablespoons butter
1 medium onion, chopped
1/4 teaspoon minced garlic
1 (16 ounce) can sauerkraut, undrained
1/2 cup water
2 tablespoons dark brown sugar
1 tablespoon red wine vinegar
6 frankfurters (or kosher-style beef franks)

Steps:

  • In a 10-inch skillet over low heat, melt butter until just sizzling. Sauté onion and garlic, stirring often until wilted but not quite browned.
  • Add sauerkraut, water, brown sugar and red wine vinegar; Mix well.
  • Bury franks in kraut.
  • Cover and simmer until liquid has evaporated, about 1/2 hour.
  • Serve with warm, buttered, crusty bread.

1 cup water
1/4 cup brown sugar
1 1/2 tablespoons cider vinegar
5 garlic cloves, chopped
1 teaspoon pepper
21 ounces sauerkraut, NOT rinsed
4 lbs medium russet potatoes, cut into small chunks
1 1/3 cups milk, heated until hot
2 tablespoons butter
2 lbs turkey frankfurters, bratwurst all halved lengthwise, all cut cut into 1 1/2-inch chunks
2 -3 bratwursts, all halved lengthwise all cut cut into 1 1/2-inch chunks
3 large apples, cored and chopped (Cortland, Granny Smith)

Steps:

  • 1. SET THE OVEN AT 350 DEGREES.
  • 2. In a small bowl, combine the water, brown sugar, vinegar, garlic, pepper; set aside.
  • 3. In the skillet, heat the sauerkraut over medium high heat for 1 minute. Add the brown sugar mixture, stir well, and continue cooking for 10 minutes or until the liquid evaporates; set aside.
  • 4. Meanwhile, in a large saucepan, combine the potatoes with cold water to cover and a generous pinch of salt. Bring to a boil and simmer the potatoes for 10 minutes or until they are tender.
  • 5. Drain the potatoes and return them to the pan. With a potato masher, beat in the milk a little at a time with 1 tablespoon of the butter, salt, and pepper. Mash until smooth, then Combine all ingredients+mix well, Dot with the remaining 1 tablespoon of butter and sprinkle with salt and pepper. BAKE UNCOVERED FOR 30-40 MINUTES or until the top is golden brown.

1 (16-ounce) can sauerkraut drained
2 tablespoons margarine
1/4 cup onion mincedie
2 apples large tart, pared, cored and coarsely chopped
1/2 teaspoon caraway
4 chicken hot dogs or turkey frankfurters
4 slices Swiss cheese natural

Steps:

  • Heat oven to 350° F. Rinse sauerkraut and press out liquid. Heat margarine in a saucepan and stir in onion and apples sauté 3 to 4 minutes. Toss with caraway seed and sauerkraut. Place in a 2-quart greased baking dish. Cover and bake for 20 minutes. Pour boiling water over frankfurters and cook about 3 minutes until plump. Split frankfurters in half, place on top of casserole, and top with cheese. Return to oven and bake for 10 minutes or until cheese is melted.
