- In a small bowl, combine the soy sauce, hoisin sauce, peanut butter and red pepper flakes; set aside. , In a small skillet, saute shallot and ginger in oil over medium heat for 2 minutes or until crisp-tender. Add green beans; cook and stir for 3 minutes or until crisp-tender. Add sauce; toss to coat. Sprinkle with cilantro and peanuts if desired.

- Place a large skillet over medium heat. Add in 1/2 tablespoon sesame oil and garlic, saute for 30 seconds or until garlic is fragrant. Immediately add in green beans; stir frequently until beans are slightly golden brown, about 5-8 minutes.
- While the beans are cooking, make the sauce: In a medium bowl, add soy sauce, sesame oil, peanut butter, ginger, vinegar, red pepper flakes and water. Stir to combine.
- One green beans are cooked and slightly golden and al dente, reduce heat to low and pour sauce over the beans. Stir to coat the beans, then cover and simmer for a few minutes to allow the beans to continue cooking.
- Taste and add salt, if necessary. Garnish with sliced green onion, sesame seeds and a tablespoon or two of cashews.

- Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
- Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.

This recipe in from the Summer 2006 edition of Cooking for 2. I made a couple of adjustments to the recipe. We really enjoyed it served as a side with Lemon Chicken and Sesame Rice.

Steps:
- Combine the soy sauce, oyster sauce, peanut butter and crused red pepper in a small bowl; set aside.
- Rinse the beans and place in a microwave safe dish, cover and cook until crisp tender; approximately 3 to 5 minutes depending on the wattage of your microwave.
- Remove beans from microwave, rinse in cool water and allow to drain while preparing the sauce.
- In a skillet or wok, heat the 1 teaspoon oil add the minced shallot and grated gingerroot.
- Cook the shallot and ginger for 2 minutes and then add the soy sauce mixture; stirring until the peanut butter is melted and the sauce is smooth.
- If using a natural peanut butter, it may be necessary to add a tablespoon or so of water to the pan to aid in making the sauce smooth and creamy.
- Once the sauce is thoroughly combined, stir in beans and warm in sauce.
- Prior to serving sprinkle with chopped cilantro and peanuts if desired.

THAI SWEET GREEN BEANS
We are in love with Thai sweet chili sauce. I find myself adding it to many things, especially vegetable dishes. In the summertime when we have a lot of green beans from our garden, this is one of the recipes I do frequently. Try it! It's yummy!

- 1. Heat oil in large skillet with lid over medium-high heat. When oil is hot, add garlic and pepper flakes and saute for 30 seconds till fragrant.
- 2. Add the beans and toss to coat with oil. Cook, tossing occasionally until they begin to get brown in spots.
- 3. Add broth and soy sauce, cover skillet and let cook 3-4 minutes.
- 4. Remove lid and add sweet chili sauce and salt to taste. Cook another minute or so tossing to coat the beans with the sauce. You're looking for the beans to be crisp-tender. When they are, transfer to serving bowl and serve immediately.

- For dressing, whisk together soy sauce, garlic, fish sauce, rice vinegar, lime juice and zest, brown sugar, and sriracha.
- Bring a pot of water to a boil and blanche beans for about 2 minutes, still crunchy and bright green. Shock in cold water.
- Combine red pepper, tomato, cilantro, basil, mint, and green beans. Toss with dressing and add black pepper to your liking. Let sit for at least 30 minutes for flavors to meld.
- Before serving, toss in peanuts, and garnish with green onion.
