SKILLET CHICKEN TORTELLINI ALFREDO
Store-bought tortellini are the star of this quick and creamy weeknight meal. They simmer in their own sauce, making this a one-skillet meal with easy cleanup. Try one-inch pieces of Italian sausage instead of chicken for a variation.

- Preheat the oven to 425 degrees F.
- Heat the heavy cream, butter, nutmeg, 1 cup of the Parmesan and 1 teaspoon salt in a large ovenproof skillet over medium-high heat, whisking occasionally, until the cheese and butter are melted, 3 to 4 minutes. Add the tortellini and simmer until cooked through, 4 to 5 minutes. Add the chicken and sprinkle with the remaining 1/2 cup Parmesan.
- Bake until the chicken is just cooked through, the sauce has thickened and the top starts to turn golden brown, 10 to 12 minutes. Let stand for 10 minutes before serving. Sprinkle with the parsley.

- In a 5-qt. slow cooker, combine first 7 ingredients. Cook, covered, on low until chicken is tender, 6-8 hours., Stir in Alfredo sauce and tortellini. Cook, covered, until tortellini is tender, 15-20 minutes. If desired, top with Parmesan cheese and basil., Freeze option: Freeze cooled, cooked mixture in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high, in a microwave-safe dish until heated through, stirring gently; add water if necessary.

Steps:
- While pasta dough is resting, chop meats to a fine mince.
- In a large bowl mix the meats with bread crumbs, salt, pepper, nutmeg and 1/3 cup water.
- You can do all this in a food processor if you like.
- Roll and cut pasta into 1 inch squares.
- Place 1/2 t.
- filling on center of each square.
- Fold over to make a triangle, seal and take the two opposite points, bring to center and pinch together.
- Place tortellini in single layer on paper towel.
- Repeat until done.
- This makes around 125.
- Heat a large pot of salted water to boiling and start cooking.
- This will take around 4 rounds at 5 minutes each.
- To make the sauce melt butter in a medium saucepan.
- Add cream and heat to boiling, slowly add cheese and cook to thicken.
- Add to cooked pasta, toss and serve.

Steps:
- cook tortellini al dente, according to package directions while preparing the rest of ingredients. Do not overcook them!
- saute shallots and garlic in butter about 5-6 minutes.
- add chicken pieces and fry for 3-5 minutes, until outside is cooked.
- pour in 1 cup of chicken broth and add frozen spinach, reduce heat and cook till spinach thaws.
- add sliced mushrooms, bring to a simmer.
- add 1/2 & 1/2 with the Parmesan cheese & season with lots of black pepper.
- let simmer a few minutes.
- stir flour into remaining chicken broth and add to mixture, stir til thick.
- stir in Romano and parsley, reduce heat to keep warm.
- toss with the tortellini.
- If sauce is too thick, you can add more 1/2 &1/2 or more chicken stock, depending on your taste.
- Omit the chicken for a vegetarian meal.

- In pressure cooker, saute bacon for 2 minutes. Add butter, onions and parsley. Saute 2 minutes, stirring.
- Stir in chicken, carrot, tortellini,mushrooms (optional) and tarragon. Add broth and mix well. Secure lid. Over high heat, develop steam to high pressure. Reduce heat and maintain pressure and cook for 6 minutes. Release pressure and remove lid.
- Stir in asparagus. Over high heat, develop steam to med-high pressure and cook for 2 more minutes. Release pressure and remove lid.
- Combine milk, butter, 1/3 cup cheese in a bowl and blend thoroughly. Gradually add to chicken and tortellini mixture, gently stirring over medium heat until sauce thickens and becomes creamy.
- Transfer to a serving platter and sprinkle with additional cheese.

Steps:
- Boil large pot of water.
- Cut chicken into 1" pieces. Set aside.
- Slice 1 clove fresh garlic. Set aside.
- Gently slice baby spinach into bite sized pieces. Set aside.
- Heat 1 tablespoon oil in large saute pan.
- Add garlic. Saute until just light golden.
- Add chicken. Saute 3-4 minutes.
- Add heavy cream and chicken broth to saute pan. Bring to a simmer and cook for 5 minutes.
- Salt to taste at this point.
- Add baby spinach to saute pan. Turn off heat.
- When water boils add 1 tablespoon salt and tortellini. Cook according to package directions.
- Drain and add to saute pan. Stir.
- Serve into four pasta bowls.
- Top with parmesan cheese.
- *One variation of this dish is to add a tablespoon of chopped sun-dried tomatoes with the cream. It gives the dish a burst of flavor.

CHICKEN TORTELLINI WITH MUSHROOM SAUCE
I've only made this once but it came out wonderfully. The dough is a bit labor intensive but well worth the work. I added the mushroom sauce I like but you can obviously use any you want including store bought or whatever. I hope you enjoy this if you try it.

Steps:
- Combine flour and 1/4 tsp salt and lay out on countertop or pastry board.
- Whisk 3 eggs, milk and oil together until well blended.
- Make well in the middle of the flour and slowly add the egg mixture mixing together with fingertips until you have formed a ball of dough.
- Place dough on lightly floured countertop and knead until dough is smooth and elastic (about 10 minutes or so... It's a workout).
- Wrap dough in plastic wrap and allow to sit about 15 minutes.
- Combine remaining egg, chicken, spinach, prosciutto, garlic, 1 tbsp cream, 2 tbsp parmesan, remaining salt and pepper and mix well.
- Remove dough from plastic and knead briefly, then cut into 3 pieces.
- Lightly flour dough and roll out to approximately the thickness of a fettucine noodle.
- Using a two inch round cutter cut out dough circles.
- (Keep dough you are not working with covered with a damp towel to prevent drying out).
- Place about 1/2 tsp of chicken filling in the middle of the circle and fold over into half moon shape pinching out all the air and sealing all the way around.
- Fold tortellini back on the flat side (as opposed to the rounded end you pressed together and sealed) and press ends together (this will give you the typical tortellini appearance).
- Continue with all the dough, rerolling scraps and recutting out until you have used all the dough.
- Let tortellini dry about a half hour before cooking.
- Heat butter in a large saucepan over medium heat until melted.
- Add mushrooms and cook 5 minutes.
- Stir in remaining cream and bring to a boil.
- Immediately reduce heat to low and allow to simmer 5 more minutes.
- Stir in remaining parmesan and allow to cook an additional minute stirring continuously.
- Remove from heat.
- Cook tortellini in a large pot of boiling salted water about 5 minutes working in batches.
- Drain tortellini well and add to cream sauce.
- Bring just to a boil over medium heat then reduce heat to low and cook 10 minutes.
- Sprinkle with parsley and enjoy.

- To make the pasta, sift the flour and a pinch of salt into a bowl. Make a well in the centre. In a bowl, whisk together the eggs, oil and 1 tablespoon water. Add gradually to the flour, mixing to a firm dough. Make a ball, adding a little extra water if necessary. Knead on a lightly floured surface for 5 minutes, or until the dough is elastic. Place in a lightly oiled bowl, cover with plastic wrap. Leave for 30 minutes.
- To make the filling, heat the butter in a frying pan, add the chicken and cook until golden brown. Drain. Process the chicken and pancetta in a food processor until finely chopped. Transfer to a bowl and add the cheese, nutmeg and egg. Set aside.
- Roll out dough very thinly on a lightly floured surface. Using a floured cutter, cut into 5 cm (2 inch) rounds. Spoon about ½ teaspoon of filling into the centre of each round. Fold the rounds in half to form semi-circles, pressing the edges together firmly. Wrap each semi-circle around your finger to form a ring and then press the ends of the dough together firmly.
- To make the sauce, place the oil, tomato and oregano in a frying pan and cook over high heat for 10 minutes. Stir in the parmesan. Set aside.
