SPICY BLACK BEANS

1 tablespoon canola oil
1 small yellow onion, diced
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon chipotle chile powder
1/4 teaspoon cayenne pepper
One 4-ounce can diced green chiles
Two 15-ounce cans black beans, rinsed and drained
1 cup vegetable broth
2 tablespoons chopped fresh cilantro
1/4 cup Cotija cheese

Steps:

  • Heat the oil in a large saute pan over medium-high heat. Add the onion and cook until it begins to soften, about 3 minutes. Add the garlic, cumin, salt, chile powder and cayenne and cook until fragrant, about 30 seconds. Add the chiles, beans and broth and bring to a simmer. Cook, stirring occasionally, until the beans have softened and the sauce has thickened, 5 to 7 minutes. Transfer to a serving bowl and sprinkle with cilantro leaves and Cotija.

1 tablespoon vegetable oil
1/2 pound ground beef ( lean )
1/4 cup green pepper (chopped)
1/2 cup onions ( chopped )
1/2 cup celery (chopped)
1 can (8 ounces) tomato sauce
1/2 cup water
1 large clove garlic ( minced )
2 tablespoons vinegar
1 tablespoon dry mustard
1/2 teaspoon thyme
1 tablespoon brown sugar
salt and pepper, to taste
1 large can (approximately 28 ounces) pork and beans

Steps:

  • Heat the oven to 375 F (190 C/Gas 5).
  • Heat the vegetable oil in a large skillet over medium heat. When the oil is hot add the ground beef, onions, green bell pepper, and celery. Cook, stirring frequently until the beef is browned and vegetables are tender. Add the tomato sauce, water, garlic, vinegar, mustard, thyme, and brown sugar. Blend well and then simmer for 5 minutes. Taste and add salt and pepper as needed.
  • Pour the canned pork and beans into a 2-quart casserole; add the ground beef mixture and stir gently to blend.

1 can (16 ounces) red beans, rinsed and drained

3/4 cup salsa or picante sauce
1 medium green pepper, chopped
1 small onion, chopped
3 garlic cloves, minced

Steps:

5 thick-cut slices bacon (140 grams)
1 medium yellow onion (190 grams), chopped
1 red bell pepper (200 grams), chopped
Kosher salt
2 garlic cloves, chopped
1 to 2 tablespoons harissa
1 teaspoon ground coriander
1 teaspoon ground cumin
1/4 teaspoon ground cayenne
1/4 teaspoon ground cinnamon
One 15-ounce (425 grams) can tomato sauce
1/4 cup (60 grams) molasses
2 tablespoons (30 grams) balsamic vinegar
1 cup low-sodium chicken stock or water
Two 15.5-ounce cans navy beans, rinsed and drained
Sliced scallions, for finishing
Cilantro leaves, for finishing

Steps:

  • Arrange the bacon in a large cast iron skillet or 3-quart braiser over medium heat. Cook, rendering the fat and crisping the bacon, about 4 to 5 minutes per side. Remove to a paper towel-lined plate to drain. When cool, roughly chop the bacon. Set aside.
  • Leave the bacon grease in the pan and add the onion and bell pepper. Season with salt. Cook, stirring occasionally, until the vegetables begin to soften, 4 to 5 minutes. Add the garlic, harissa, coriander, cumin, cayenne and cinnamon and stir to combine and toast until the spices are fragrant. Add the tomato sauce, molasses, vinegar, stock or water and half of the bacon. Season again with a pinch of salt. Bring to a boil over medium-high heat and reduce to a simmer. Stir in the beans. Simmer rapidly until thickened, about 15 minutes. Season to taste. To store, let beans come to room temperature and refrigerate in a covered container. You can make the beans up to 2 days in advance and just reheat.
  • Sprinkle with the remaining bacon, the scallions and cilantro. Serve immediately.

6 slices bacon (regular or thick cut), diced
1 cup small diced onion
2 cans (15-ounces each) pinto beans
2 cans (15-ounces each) navy beans
3/4 cup ketchup
1/3 cup brown sugar (see note)
1/4 cup molasses
1 tablespoon apple cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon dijon or yellow mustard
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon smoked paprika

Steps:

  • In a large skillet over medium heat, cook the bacon and onion until the bacon is cooked through and starting to crisp and the onions are translucent, 5-7 minutes. Drain excess grease.
  • Rinse and drain only two cans of the beans. Add the rinsed and drained beans to the skillet along with the two cans of undrained beans.
  • Stir in the ketchup, brown sugar, molasses, vinegar, Worcestershire sauce, mustard, garlic powder, salt, pepper, and paprika.
  • Oven Directions: Preheat the oven to 350 degrees F. Transfer the baked beans to an oven-safe 9X13-inch dish and cover with foil. Bake for 1 hour. Uncover and bake for 15-20 more minutes until bubbling. Remove from the oven and let sit for 15 minutes. They'll thicken up more as they cool slightly. Season to taste with additional salt and pepper, if needed.
  • Slow Cooker Directions: Tansfer the beans to the insert of a 6-quart or larger slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours until bubbling and slightly thickened. They'll thicken up more as they cool slightly. Season to taste with additional salt and pepper, if needed.

1 twelve-ounce package dried black beans, picked over
3 tablespoons vegetable oil
1 large white onion, diced
8 cups cold water
Peel of 1 orange, pith removed (optional)
1 jalapeño pepper, sliced in half lengthwise and seeded (optional)
Coarse salt and freshly ground black pepper
Hot-pepper sauce, such as Tabasco (optional)

Steps:

  • Place beans in a large bowl or stockpot; cover with cold water by 2 inches. Let stand at room temperature 4 hours or overnight. Drain, and rinse beans with cold water; set aside.
  • Heat the oil in a large saucepan over medium heat. Add onion, and cook until it is soft and translucent but not browned, about 8 minutes. Add the beans and the cold water, along with the orange peel and/or jalapeno, if desired. Bring to a boil, and reduce heat to a gentle simmer; cover, and cook, stirring occasionally, until the beans are tender and most of the liquid has evaporated, creating a saucelike consistency, about 2 hours. Most of the liquid should have evaporated.
  • Remove from heat; remove orange peel and/or jalapeno, if using. Season with salt, black pepper, and hot-pepper sauce, if desired. Serve hot or at room temperature.

1/2 lb bulk pork sausage (or use 1 pound ground beef)
1 large onion, chopped

3 teaspoons dried Italian seasoning
1 (28 ounce) can crushed tomatoes
2 cups v- 8 tomato juice (or use regular tomato juice)
1 (14 ounce) can tomato sauce
1 (14 ounce) can beef broth
1 -2 tablespoon Worcestershire sauce
1 (16 ounce) can red kidney beans, drained
1 (16 ounce) can white kidney beans, drained

2 carrots, peeled and sliced thinly

4 cups dried pinto beans (1 1/2 lb) or 4 cups great northern beans (1 1/2 lb)
1/2 lb bacon, diced
1 cup chopped onion
1 cup maple sugar or 1 cup maple syrup
1 cup dark molasses
1 cup dark brown sugar
1 cup raisins
2 tablespoons dry mustard
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon orange zest

Steps:

  • In a large bowl, cover the beans with water to 2 inches above the top of the beans; soak overnight and drain.
  • Sautè the bacon with the onion until the bacon is crisp and the onion is tender.
  • Add the bacon and onion and any pan juices to the beans.

1 tablespoon olive oil
1 (4.5 ounce) can sliced mushrooms, drained
1 small onion, diced
1 clove garlic, minced
1 (16 ounce) package frozen whole green beans
1 cube beef bouillon
½ cup water

Steps:

  • Heat oil in a large skillet over medium heat. Add mushrooms, onion, and garlic; cook until onions start to look soft and translucent, 5 to 10 minutes.
  • Cut a couple of slits in the green bean bag and microwave on high power until beans are a bit defrosted, 1 to 2 minutes. Remove from the microwave and pour the beans into the skillet.
  • Crumble bouillon cube into the skillet and mix everything together. Turn the temperature down a bit and let the mixture cook for 10 to 15 minutes. Pour in water and mix until any remaining bouillon has dissolved. Cover and steam, stirring occasionally, until beans are tender and as crunchy or limp as you like them; you will need to taste them to determine when they are done.
  • Remove the lid and increase temperature to high to cook off any remaining liquid. Serve immediately.
