Steps:
- Heat the oil in a large saute pan over medium-high heat. Add the onion and cook until it begins to soften, about 3 minutes. Add the garlic, cumin, salt, chile powder and cayenne and cook until fragrant, about 30 seconds. Add the chiles, beans and broth and bring to a simmer. Cook, stirring occasionally, until the beans have softened and the sauce has thickened, 5 to 7 minutes. Transfer to a serving bowl and sprinkle with cilantro leaves and Cotija.
BEEFY BARBECUE BAKED BEANS
Steps:
- Heat the oven to 375 F (190 C/Gas 5).
- Heat the vegetable oil in a large skillet over medium heat. When the oil is hot add the ground beef, onions, green bell pepper, and celery. Cook, stirring frequently until the beef is browned and vegetables are tender. Add the tomato sauce, water, garlic, vinegar, mustard, thyme, and brown sugar. Blend well and then simmer for 5 minutes. Taste and add salt and pepper as needed.
- Pour the canned pork and beans into a 2-quart casserole; add the ground beef mixture and stir gently to blend.

SAUCY STOVETOP BACON BEANS
Think homemade barbecue sauce with creamy white beans swimming around. The sweetness from the molasses is balanced by the salty, crispy bacon.

- Arrange the bacon in a large cast iron skillet or 3-quart braiser over medium heat. Cook, rendering the fat and crisping the bacon, about 4 to 5 minutes per side. Remove to a paper towel-lined plate to drain. When cool, roughly chop the bacon. Set aside.
- Leave the bacon grease in the pan and add the onion and bell pepper. Season with salt. Cook, stirring occasionally, until the vegetables begin to soften, 4 to 5 minutes. Add the garlic, harissa, coriander, cumin, cayenne and cinnamon and stir to combine and toast until the spices are fragrant. Add the tomato sauce, molasses, vinegar, stock or water and half of the bacon. Season again with a pinch of salt. Bring to a boil over medium-high heat and reduce to a simmer. Stir in the beans. Simmer rapidly until thickened, about 15 minutes. Season to taste. To store, let beans come to room temperature and refrigerate in a covered container. You can make the beans up to 2 days in advance and just reheat.
- Sprinkle with the remaining bacon, the scallions and cilantro. Serve immediately.

- In a large skillet over medium heat, cook the bacon and onion until the bacon is cooked through and starting to crisp and the onions are translucent, 5-7 minutes. Drain excess grease.
- Rinse and drain only two cans of the beans. Add the rinsed and drained beans to the skillet along with the two cans of undrained beans.
- Stir in the ketchup, brown sugar, molasses, vinegar, Worcestershire sauce, mustard, garlic powder, salt, pepper, and paprika.
- Oven Directions: Preheat the oven to 350 degrees F. Transfer the baked beans to an oven-safe 9X13-inch dish and cover with foil. Bake for 1 hour. Uncover and bake for 15-20 more minutes until bubbling. Remove from the oven and let sit for 15 minutes. They'll thicken up more as they cool slightly. Season to taste with additional salt and pepper, if needed.
- Slow Cooker Directions: Tansfer the beans to the insert of a 6-quart or larger slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours until bubbling and slightly thickened. They'll thicken up more as they cool slightly. Season to taste with additional salt and pepper, if needed.

- Place beans in a large bowl or stockpot; cover with cold water by 2 inches. Let stand at room temperature 4 hours or overnight. Drain, and rinse beans with cold water; set aside.
- Heat the oil in a large saucepan over medium heat. Add onion, and cook until it is soft and translucent but not browned, about 8 minutes. Add the beans and the cold water, along with the orange peel and/or jalapeno, if desired. Bring to a boil, and reduce heat to a gentle simmer; cover, and cook, stirring occasionally, until the beans are tender and most of the liquid has evaporated, creating a saucelike consistency, about 2 hours. Most of the liquid should have evaporated.
- Remove from heat; remove orange peel and/or jalapeno, if using. Season with salt, black pepper, and hot-pepper sauce, if desired. Serve hot or at room temperature.

BEEFY BEAN AND VEGETABLE SOUP
A wonderful hearty minestrone and even better the next day, I also like to add in fresh baby spinach at the end of cooking and simmer for a few minutes, this soup freezes very well --- the longer this soup simmers the richer it will be so don't be afraid to cook for a longer time, feel free to adjust all amounts to taste --- add in some cooked small shells at the end of cooking if desired.

- In a Dutch oven cook the ground beef with pork and onion until no longer pink; drain fat.
- Add in fresh garlic, diced celery, chili flakes and Italian seasoning; cook stirring for 3 minutes.
- Add in crushed tomatoes, V-8 tomato juice, tomato sauce, beef broth, Worcestershire sauce and red and white kidney beans, seasoned salt and black pepper bring to a simmer, stirring constantly.

- Heat oil in a large skillet over medium heat. Add mushrooms, onion, and garlic; cook until onions start to look soft and translucent, 5 to 10 minutes.
- Cut a couple of slits in the green bean bag and microwave on high power until beans are a bit defrosted, 1 to 2 minutes. Remove from the microwave and pour the beans into the skillet.
- Crumble bouillon cube into the skillet and mix everything together. Turn the temperature down a bit and let the mixture cook for 10 to 15 minutes.
