SHRIMP STIR-FRY



Shrimp Stir-Fry image

This shrimp stir-fry recipe is simple and fast. It cooks in about 5 minutes, so be sure to prep all your ingredients and cook the rice in advance.

1 pound large shrimp, peeled and deveined
Kosher salt
2/3 cup chicken stock or low-sodium chicken broth
2 tablespoons Shaoxing wine or dry sherry
1 tablespoon soy sauce
1 tablespoon cornstarch
2 teaspoons sugar
Freshly ground black pepper
1/4 teaspoon crushed red pepper flakes, optional
3 tablespoons vegetable oil
3 cloves garlic, minced (about 2 tablespoons)
1 teaspoon finely grated fresh ginger
1 scallion, chopped, white and green parts separated
6 ounces snow peas, strings removed if necessary
2 ounces red bell pepper, thinly sliced (about 1/2 cup)
4 cups cooked rice, for serving

Steps:

  • Put the shrimp in a medium bowl with 2 cups cold water and 2 tablespoons kosher salt. Stir to combine and let sit for 5 minutes. Drain and rinse the shrimp under cold running water and place them on a paper towel-lined plate. Pat the shrimp with more paper towels to thoroughly dry.
  • Combine the chicken stock, Shaoxing wine, soy sauce, cornstarch, sugar, 1 teaspoon kosher salt, 1/2 teaspoon freshly ground black pepper and crushed red pepper in a medium bowl. Stir until the cornstarch is fully incorporated and the mixture is smooth.
  • Heat a wok or large nonstick skillet over high heat for 2 minutes. Add the oil to the pan and swirl to coat. Carefully add the shrimp in a single layer. Allow to cook for 2 minutes, using a wooden spoon or spatula to stir-fry them. Add the garlic, ginger and scallion whites and stir-fry for 1 minute. Add the snow peas and bell pepper and stir-fry for 1 minute. Add the cornstarch mixture and scallion greens and stir-fry until the sauce has thickened, about 15 seconds. Immediately transfer the stir-fry to a dish. Serve with rice.

Thanks to the Thai Sweet & Spicy Chili Cooking Sauce this simple shrimp stir fry doesn't require a laundry list of ingredients.

3 tablespoons peanut oil
3 cloves garlic, chopped
One 2-inch piece ginger, chopped
12 ounces large peeled and deveined shrimp, tails removed
1 small red onion, cut into 1/4-inch-thick strips
1 medium yellow bell pepper, cut into 1/4-inch-thick strips
1/2 cup Food Network Kitchen™ Inspirations Thai Style Sweet & Spicy Chili Cooking Sauce
Kosher salt
Juice from half a lime
1/2 cup torn basil and/or mint leaves
2 cups cooked, warm jasmine rice, for serving

Steps:

  • Heat the oil in a large nonstick skillet or wok over high heat. Add the garlic and ginger and cook, stirring, until fragrant, about 30 seconds. Add the shrimp and stir fry until pink but still translucent in the middle, about 2 minutes. Transfer the shrimp to a medium bowl with a slotted spoon. Add the onions and peppers to the skillet and cook, stirring, until lightly browned, about 3 minutes. Return the shrimp to the skillet along with the Thai Style Sweet & Spicy Chili Cooking Sauce. Cook, stirring, until the sauce glazes the shrimp, about 1 minute. Remove the skillet from the heat, season with salt, add the lime juice and sprinkle with the herbs. Serve with rice.

1 tablespoon butter
1 tablespoon olive oil
2 pounds jumbo shrimp, peeled and deveined, tails on
4 cloves garlic, minced
2 large zucchini, diced
2 large ears of corn, kernels removed
3/4 cup red grape tomatoes, sliced in half lengthwise
3/4 cup yellow grape tomatoes, sliced in half lengthwise
Salt and freshly ground black pepper
12 to 18 fresh basil leaves, cut in chiffonade
Parmesan shavings
Juice of 1 lemon
Rice or pasta, for serving, optional

Steps:

  • Melt the butter with the olive oil in a large skillet over a medium-high heat. Add the shrimp and garlic, then saute until the shrimp are opaque, about 3 minutes. Remove the shrimp to a plate.
  • Increase the heat to high, then throw in the zucchini. Stir it around for about 45 seconds, then scoot the zucchini to the edges of the pan. Throw in the corn and cook it for a minute, then push it to the edges of the pan. Throw in the grape tomatoes, stir them around for a minute, then sprinkle on some salt and pepper to taste.
  • Then throw the shrimp back in. Stir everything around for about 45 seconds, or until it's all combined and hot. Then pour it onto a big platter.
  • Sprinkle on the fresh basil and some Parmesan shavings then ... this is the best part ... squeeze the lemon all over the top. This adds a wonderful, indescribable freshness.
  • You can serve this with rice, with pasta or it's just perfect on its own.

4 cups cut-up fresh vegetables (see Note)
½ teaspoon ground ginger
⅛ teaspoon garlic powder
4 cups hot cooked regular long-grain white rice

Steps:

  • Stir the cornstarch, stock, soy sauce and sesame oil in a small bowl until the mixture is smooth.
  • Heat 1 tablespoon vegetable oil in a 12-inch skillet over medium-high heat. Add the shrimp and stir-fry until they're cooked through. Remove the shrimp from the skillet.
  • Heat the remaining vegetable oil in the skillet. Add the vegetables, ginger and garlic powder and stir-fry until the vegetables are tender-crisp.
  • Stir the cornstarch mixture in the skillet. Cook and stir until the mixture boils and thickens. Return the shrimp to the skillet and cook until the mixture is hot and bubbling. Serve over the rice.

1 pkg. (12 oz.) frozen Asian mixed vegetables (broccoli, carrots, snow peas)
1 lb. uncooked deveined peeled large shrimp
1/4 cup chopped PLANTERS COCKTAIL Peanuts

Steps:

  • Heat 2 Tbsp. dressing in large skillet on medium-high heat. Add vegetables; stir-fry 4 min.
  • Add shrimp; stir-fry 4 min. or until shrimp turn pink and vegetables are crisp-tender. Remove from heat.
  • Stir in remaining dressing; sprinkle with nuts.

This is one of my favorite dishes to prepare. It's so tasty! My brother in law prepared this during his visit from the Philippines and I was lucky enough to get the recipe. Now I'm sharing it with you. Enjoy!

1 1/2 lbs shrimp (remove shell)
4 garlic cloves (minced)
1 small white onion (diced)
1 green bell pepper (diced)
1 red bell pepper (diced)
1 carrot (chopped)
1 chicken bouillon cube
1 egg
1 1/2 tablespoons oyster sauce
1 teaspoon cornstarch
2 tablespoons cooking oil
1 cup warm water
salt (to taste)
pepper (to taste)

Steps:

  • Dissolve chicken bouillon in warm water and add oyster sauce. Once cool, add cornstarch and mix well. Set aside for later.
  • In wok, heat cooking oil over medium flame.
  • Add garlic, onion and carrots and saute until slightly cooked.
  • Add bell pepper and cook for approximately 3 minutes. Constantly stirring so that you don't burn the veggies
  • Add shrimp and cook until they turn to a pinkish color. Remember to continue stirring so that everything cooks evenly (About 5 minutes).
  • Add the chicken broth solution and continue stirring. The sauce will thicken.
  • Scramble egg with a fork in a bowl and then pour in with the shrimp and veggies. Stir well.
  • Add salt and pepper to taste.
  • Serve while hot and enjoy!
  • This recipe goes great over steamed rice!

I ran out of soy sauce (which I use coconut aminos anyway) and really wanted some stir-fry with shrimp so I came up with this and hubby loves it. It has a light heat to it but isn't real spicy.

1 lb large shrimp
1 (16 ounce) package frozen broccoli carrots cauliflower mix
1 green bell pepper, cut into 1 inch cubes
1/4 cup mushroom, sliced
2 tablespoons olive oil, can use coconut oil for pan
3 tablespoons almond butter
3 tablespoons coconut oil, melted
2 tablespoons sesame oil
2 tablespoons water
1 tablespoon vinegar
1 teaspoon honey
2 teaspoons sriracha sauce
1/8 teaspoon red pepper flakes
1 garlic clove, minced
1 dash salt, to taste

Steps:

  • If you are using raw shrimp you will need to remove shells and vein.
  • First prepare the marinade by mixing the almond butter, coconut oil, sesame oil, water, vinegar, honey, sriracha sauce, rep pepper flakes, garlic and salt together in a bowl large enough to hold all shrimp.
  • Once you have cleaned shrimp (you can use precooked for this if you wish but remove the tails) add shrimp to marinade, stir and let set 20-30 minutes.
  • While shrimp are marinading cut vegetables and mushrooms.
  • When shrimp are done marinading, Place frozen and fresh vegetables in heated wok or skillet (I have a vegetable basket I place on the grill for mine). Stir in the hot oil for 1-2 minutes. Add shrimp but not all the sauce. Stir shrimp into vegetables and let cook till heated through. Add remaining marinade sauce and stir.
  • Cook until shrimp are pink and vegetables are done but still on the lightly crisp side. (if using precooked shrimp make sure you get it heated through good).
  • Serve with grilled summer squash or grilled romaine lettuce.

1 lb medium shrimp, peeled and deveined
1 cup snow peas, strings removed

1 teaspoon fresh garlic, minced
2/3 cup unsweetened coconut milk
2 tablespoons soy sauce
1 teaspoon red curry paste

Steps:

  • Heat oil in a wok or a heavy skillet over high heat. Add shrimp and stir-fry about 1-2 minutes on each side or until the shrimp is just cooked through. Remove shrimp from the wok with a slotted spoon and transfer it on a plate.
  • Add snow peas, bell pepper, onion, ginger and garlic to the wok and stir-fry for 2-3 minutes. Add coconut milk, soy sauce, and curry paste. Boil until sauce thickens slightly, stirring frequently for about 2 minutes. Add the shrimp and stir for 1 minute. Season with salt and pepper. Transfer to a serving dish. Serve immediately. Garnish with green onions, if desired.
