This is a great, easy recipe from one of my husband's cooking for bachelors-type books. It's supposed to have three ingredients, but I cheat and add a few extras

2 lbs lean ground turkey
1 cup seasoned dry bread crumb
1 1/2 cups water
1 cup salsa (mild, medium or spicy, according to taste)
1 onion, chopped
3 garlic cloves, chopped
1 egg

Steps:

  • Preheat oven to 425.
  • in a small bowl, mix the bread crumbs, water and salsa and set aside for 10 minutes.
  • in a large bowl, add onions, garlic, turkey, egg and when it's ready, the water/breadcrumb mixture.
  • using your clean hands, mix together.
  • shape into a loaf shape in a large pan. I usually use a 9x13x2.
  • Bake for 60 minutes or until cooked through. Remove from oven and allow to cool slightly before slicing.

1 1/4 cups low-sodium salsa
3/4 cup quick-cooking oatmeal
1 carrot, shredded
2 plum tomatoes, diced
1/2 cup coarsely chopped mushroom

Steps:

  • Preheat oven to 350°F; spray a loaf pan with cooking spray.
  • In a large bowl, combine beef, salsa, oatmeal, carrot, tomatoes, and mushrooms. Shape the mixture into a loaf.
  • Place the loaf in the pan. Bake until browned and knife inserted in center comes out clean and hot, about 1 hour and 5 minutes. Let stand about 10 minutes before slicing.

1/2 cup salsa, your choice (mild-med-hot)
1/2 cup Italian seasoned breadcrumbs
1/2 cup shredded cheddar cheese or 1/2 cup mexican cheese
1 egg, lightly beaten
1 dash salt & pepper or 1 dash crushed red pepper flakes

Steps:

  • 1. PREHEAT OVEN TO 350 DEGREES F (175 DEGREES C).
  • 2. MIX ALL DESIRED INGREDIENTS IN LARGE BOWL. GET YOUR HANDS INTO IT. MIX UNTIL YOU CAN PICK IT UP IN ONE PIECE.
  • 3. BAKE 45 MINUTES UNTIL DONE, A MEATLOAF PAN IS BEST!
  • 4. TOP WITH EXTRA SALSA BEFORE OR AFTER COOKING. ENJOY!

This meatloaf tastes even better reheated the next day! The measurements are approx. as I usually do not measure the amounts as I'm throwing it together.**edited on October 24 to add instructions (see step 4) for Once a Month Cooking. I usually make this during a cooking blitz and freeze until needed.

1 lb ground beef
3/4 cup cracker crumbs or 3/4 cup oatmeal
1 small onion, diced
1 tablespoon Worcestershire sauce
1/2 package dry onion soup mix
1 egg
1 teaspoon garlic
1/2 teaspoon pepper
3/4 cup salsa
3/4 cup salsa
1 teaspoon brown sugar
1 teaspoon chili powder
2 tablespoons ketchup

Steps:

  • Mix ingredients for loaf together and place in a loaf pan.
  • Bake at 350 degrees for 45 minutes or until almost done.
  • Top loaf with sauce and bake 10-15 minutes longer.
  • ** for OAMC: complete steps 1 & 2 but bake until done. Defrost overnight, top with sauce and then bake at 350 degrees for 20 minutes or until sauce bubbles. OR bake from frozen for 1 hour at 350 degrees, top with sauce and then bake for 30 minutes or longer until sauce bubbles.**

1 lb extra lean ground beef
1 large onion, finely chopped
2 garlic cloves, minced
3 slices whole wheat bread, crumbled
1 1/2 teaspoons dried thyme, crushed
1 1/2 teaspoons dried oregano, crushed
1 cup salsa
1 egg, lightly beaten
1/4 cup fresh cilantro (optional) or 1/4 cup parsley, chopped (optional)
1 sweet green pepper, chopped (optional)
1 stalk celery, chopped (optional)
1 carrot, peeled and chopped (optional)
1 cup corn (optional)
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Combine 1/2 the salsa with all other ingredients, mixing until just combined.
  • Spoon into 9x5-inch loaf pan, smoothing top.
  • Spread remaining salsa over top (may be made ahead and refrigerated up to 3 hours at this point).
  • Bake in 350F oven for 55 minutes or until firm to the touch and meat thermometer reads 170°F.
  • Pour off fat.

3/4 cup uncooked instant brown rice
1 can (8 ounces) tomato sauce
1-1/2 cups salsa, divided
1 large onion, chopped
1 large egg, lightly beaten
1 celery rib, finely chopped
1/4 cup minced fresh parsley
2 tablespoons minced fresh cilantro
2 garlic cloves, minced
1 tablespoon chili powder
1-1/2 teaspoons salt
1/2 teaspoon pepper
2 pounds lean ground beef (90% lean)
1 pound ground turkey
1/2 cup shredded reduced-fat Monterey Jack cheese or Mexican cheese blend

Steps:

  • Preheat oven to 350°. Cook rice according to package directions; cool slightly. In a large bowl, combine tomato sauce, 1/2 cup salsa, onion, egg, celery, parsley, cilantro, garlic and seasonings; stir in rice. Add beef and turkey; mix lightly but thoroughly., Shape into two 8x4-in. loaves in a greased 15x10x1-in. baking pan. Bake until a thermometer inserted in center reads 165°, 1 to 1-1/4 hours., Spread with remaining salsa and sprinkle with cheese; bake until cheese is melted, about 5 minutes. Let stand 10 minutes before slicing., Freeze option: Bake meat loaves without topping. Securely wrap and freeze cooled meat loaf in foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaves; place in a greased 15x10x1-in. baking pan. Reheat in a preheated 350° oven until a thermometer inserted in center reads 165°, 40-45 minutes; top as directed.
