This Italian Sausage Pasta Bake is an easy dinner recipe that works well as a freezer meal, or as a cozy casserole to share with friends and family!

1 lb. dry rigatoni pasta
3.5 cups (32 ounce jar) marinara sauce
2 Tablespoons half-and-half
8 ounces fresh mozzarella, thinly sliced
1 - 1.25 lb. Italian sausage, casings removed (I used Italian turkey sausage, but any variety will work)
¼ cup grated Parmesan cheese
1 red bell pepper, diced
8 ounces sliced mushrooms

Steps:

  • Cook pasta just until al dente (where it still has some bite). The pasta will continue to bake in the oven later, so you don't want it to be too soft.
  • Meanwhile, in a large skillet sauté sausage, bell pepper, and mushrooms until sausage is no longer pink, breaking up the meat as it cooks. Drain.
  • Combine sausage mixture with cooked pasta, marinara sauce, half-and-half, and Parmesan.
  • Pour half of the pasta mixture into a 13x9-inch baking dish that has been sprayed with cooking spray. Layer half of the mozzarella slices on top.
  • Add another layer of pasta and a final layer of mozzarella.
  • Bake at 375 degrees F, uncovered, for about 25-30 minutes (or until warmed through and cheese is melted).

1 lb Italian sausage ((Italian sausage links - sweet, mild, or spicy))
24 oz spaghetti sauce ((your favorite brand))
16 oz rotini pasta ((or penne pasta))
1 cup mozzarella cheese ((grated))
1/4 cup Parmesan cheese ((optional - shredded or grated))
1 Tbsp basil ((optional - fresh, chopped))

Steps:

  • Preheat your oven to 375 degrees F (190 degrees C) and lightly grease your 2.5-quart casserole or baking dish, or a 9 x 13 baking pan with extra virgin olive oil.
  • Cook your rotini, penne, rigatoni, or ziti pasta per the package instructions, minus about two minutes for an al dente texture. Drain and rinse in cool water to stop the cooking process.
  • Transfer the cooked pasta to your prepared baking dish.
  • Pour marinara or spaghetti sauce over the cooked pasta layer.
  • Cut your Italian sausage links into chunks and press them into the top of the sauce layer.
  • Grate mozzarella and Parmesan cheeses then spread over the top of the sausage layer.
  • Top with fresh cut basil and bake at 375 degrees F (190 degrees C) for 35-40 minutes. The casserole should be bubbling around the edges and the sausage pieces should have an internal temperature of 160 degrees F (71 degrees C) when done.
  • Remove from the oven and serve immediately. Garnish with more cheese, basil, or chopped parsley if desired.

1 onion, finely chopped
10 ounces white mushrooms, thinly sliced
Freshly ground pepper
6 ounces mild Italian sausage, casings removed
3 cloves garlic (2 thinly sliced, 1 grated)
2 teaspoons fresh marjoram, chopped
1 28-ounce can crushed tomatoes
2 10-ounce packages refrigerated mushroom ravioli
1 cup shredded mozzarella cheese
1/4 cup breadcrumbs
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the broiler. Bring a large pot of salted water to a boil. Melt 2 tablespoons butter in a large skillet over medium-high heat. Add the onion, mushrooms, 1/4 teaspoon salt and a few grinds of pepper. Cook until the vegetables are beginning to brown, 5 to 8 minutes. Add the sausage and cook, breaking up the meat, until no longer pink, about 4 minutes. Add the sliced garlic and marjoram and cook until softened, 1 more minute. Add the tomatoes and 1/4 cup water, bring to a simmer and cook until the vegetables are tender and the sauce has thickened slightly, about 6 minutes.
  • Meanwhile, cook the ravioli in the boiling water as the label directs. Reserve 1/4 cup cooking water, then drain. Add the ravioli and the reserved cooking water to the sauce; stir to coat. Transfer half of the ravioli and sauce to a 9-by-13-inch broiler-proof baking dish. Sprinkle with 1/2 cup mozzarella. Top with the remaining ravioli, sauce and mozzarella.
  • Meanwhile, microwave the remaining 1 tablespoon butter in a small microwave-safe bowl until melted. Stir in the grated garlic and breadcrumbs; season with salt and pepper. Sprinkle over the baked ravioli and broil until browned on top, about 2 minutes. Top with the parsley.

A one pan Italian sausage bake that has you sear the sausage and peppers on the stovetop and then finish baking in the oven to make a hearty yet easy Italian sausage casserole.

1 lb Italian sausage links, cutting each sausage into 3 pieces
2 bell peppers, sliced
2 cups onion, sliced
1 Tbsp olive oil
1/2 tsp garlic salt
1/2 tsp ground black pepper
1/2 tsp Italian seasoning
2 cups chunky marinara sauce
1 cup mozzarella cheese, shredded

Steps:

  • Preheat the oven to 375F.
  • In a large skillet over medium high heat, add the oil to the pan.
  • Sear the Italian sausage on each side until browned, which will be about 2-3 minutes on each side. The sausage will NOT be cooked through at this point.
  • Remove the sausage from the pan and set it aside.
  • Add more oil to the pan if needed and then add the bell peppers, onion, garlic salt, and pepper to the pan. Saute until mostly soft, which took about 5-6 minutes.
  • Add the sausage back to the pan and nestle it around the onion and peppers mix.
  • Sprinkle the Italian seasoning over the top.
  • Spread the marinara sauce over the Italian sausage casserole and then sprinkle with the mozzarella cheese.
  • Bake for 15+ minutes until the sausage is cooked through and the cheese is melted. To get the crispy cheese appearance, broil the dish for 1-2 more minutes.

This weeknight casserole is cheesy and satisfying like lasagna--your family will be so impressed!--but takes a quarter of the time. Frozen butternut squash and ready-made polenta are great time-savers.

3 tablespoons extra-virgin olive oil
1 medium red onion
1 pound spicy Italian sausage, casings removed
10 ounces frozen diced butternut squash (about 1 1/2 cups)
One 15-ounce can crushed tomatoes
Kosher salt and freshly ground black pepper
One 16-ounce tube ready-made polenta
1 tablespoon unsalted butter, cut into small pieces, plus more for greasing the dish
5 ounces fontina cheese, thinly sliced (1 1/4 cups)
1 ounce grated Parmesan (about 1/4 cup)
5 ounces baby spinach (about 6 cups)
2 teaspoons balsamic vinegar

Steps:

  • Position an oven rack about 5 inches from the broiling element, and preheat the broiler.
  • Heat 2 tablespoons of the oil in a large high-sided skillet over medium-high heat. While the pan is heating, thinly slice the onion; set aside about 1/3 cup for the salad.
  • Add the sausage to the pan, and break it up into smaller chunks with a wooden spoon. Stir periodically until it is brown all over, about 5 minutes. Add the remaining onion and the squash. Stir for a minute, then add the tomatoes, 2 tablespoons water, 3/4 teaspoon salt and a few grinds of pepper. Cover partially, and let simmer vigorously, stirring occasionally, until reduced and thick, about 10 minutes.
  • Meanwhile, slice the polenta into 1/4-inch rounds. Butter the flameproof baking dish, and shingle the rounds in one layer. Dot the polenta with the pieces of butter. Place the dish under the broiler, and broil the polenta until it is hot and soft, about 4 minutes.
  • When the sauce is ready, spread it over the broiled polenta. Top with the fontina and grated Parmesan. Return the casserole to the broiler, and broil until the top is browned and bubbly, about 3 minutes.
  • Meanwhile, toss the spinach in a large bowl with the reserved onion, the remaining 1 tablespoon olive oil, the balsamic vinegar, and salt and pepper to taste. Serve the casserole with the spinach salad on the side.

1 red pepper, diced
1 green pepper, diced
2 cups zucchini, diced
1/2 cup chopped onion
4 cups canned tomato sauce
1 can diced tomato
1 1/2 teaspoons basil
1 1/2 teaspoons oregano
1 clove garlic or 1/2 teaspoon garlic powder
4 cups cooked penne pasta
2 cups grated cheese (I use whatever I have on hand)

Steps:

  • Cook crumbled sausage in fry pan.
  • Add peppers,onion.
  • Remove seeds from zucchini do not peel.
  • Add to sausage and peppers.
  • Saute til vegetables are tender and sausage is cooked.
  • Put cooked noodles in a large casserole.
  • Add tomato sauce, tomatoes and sausage mixture.
  • Add spices and crushed garlic clove and combine all ingredients to coat the noodles with the sauce and sausage.
  • Sprinkle cheese on top.
  • Cook uncovered for about 30 minutes at 350 degrees.

One 24-ounce jar marinara sauce
3 cups beef broth
1/4 cup tomato paste
4 cloves garlic, grated
Kosher salt and freshly ground black pepper
1 pound uncooked rigatoni
1 pound Italian sausage, casings removed
3/4 cup ricotta
2 cups shredded mozzarella

Steps:

  • Preheat the oven to 425 degrees F. Generously grease the bottom and sides of a 9-by-13-inch casserole dish with the butter.
  • Stir together the marinara, beef broth, tomato paste, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl.
  • Spread half the pasta in an even layer in the bottom of the prepared dish. Break the sausage into pieces and scatter half on the pasta. Dollop with half of the ricotta. SAUSAGES WITH STICKY ONION GRAVY

400g pack sausages
1 batch Basic sticky onions (see recipe underneath)
1 tbsp plain flour
1 sprig thyme, leaves picked
400ml beef stock
splash Worcestershire sauce
50g butter
12 medium onion
1 tsp sugar

Steps:

  • Fry sausages for 15 mins or until browned, then remove from pan and keep warm. Heat onions in same pan, then add flour, stirring for 1 min. Add thyme, then gradually add stock. Bring to boil then simmer for 5 mins until smooth. Add Worcestershire sauce, season and serve with sausages.
  • For the onions: Makes 600g, which is 3 batches. Prep time 5 mins, cook time 30 mins. Melt the butter in a large, deep frying pan and stir through the onions. Cover with a lid and cook gently for about 10 mins, until softened. Remove lid, add sugar, then cook 15-20 mins, stirring, until all of the liquid has evaporated and onions have turned golden. Divide into 3 batches to make the recipes, right. Will keep in the fridge for up to 5 days, or freeze for up to 1 month.

1 tbsp olive oil
packet of 8 pork sausages (the best your budget will allow), cut into chunky pieces
1 large onion, chopped
2 garlic cloves, crushed
1 tsp chilli powder
400g can chopped tomatoes
300g short pasta such as fusilli or farfalle (just over half a 500g bag)

Steps:

  • Put a large pan of water on to boil.
  • Heat 1 tbsp olive oil in a large frying pan and fry chunky pieces of 8 pork sausages on a fairly high heat until they are golden brown all over.
  • Now turn the heat down and add 1 large chopped onion and 2 crushed garlic cloves, cooking them until they have softened.
  • Stir in 1 tsp chilli powder and 400g chopped tomatoes with the sausages, bring the sauce to the boil then turn the heat down and let it bubble for about 10 minutes while you cook the pasta.
  • Drop 300g pasta into the pan of boiling water and cook according to the pack instructions.
  • Drain the pasta, then tip it into the frying pan with the sausage sauce, mixing well to coat. Dish up immediately with crusty bread.

Take 'sausages and beans' from its modest midweek meal status and elevate it to an elegant one-pot casserole that's special enough for entertaining

3 tbsp olive oil, plus an extra drizzle (optional)
8 large pork sausages
1 onion, finely sliced
sprinkle of golden caster sugar
1 tbsp red wine vinegar
1 tbsp tomato purée
½ tsp smoked paprika
400g can chopped tomatoes
100ml red wine
2 bay leaves
400g can butter beans, drained but not rinsed
50g fresh breadcrumbs
2 garlic cloves, finely grated
handful of parsley leaves, roughly chopped

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Heat 1 tbsp of the oil in a shallow ovenproof casserole over a medium heat and gently fry the sausages for 5-8 mins, or until brown on all sides. Transfer to a plate using tongs. Tip the onions into the pan and fry for 5-8 mins until beginning to turn golden. Drizzle in a little more oil if the onions start to stick. Sprinkle in the sugar and cook for a minute before stirring in the vinegar, tomato purée and paprika to form a paste. Tip in the tomatoes, then pour the wine into the tomato can, swish it round, and add to the pan. Stir in the bay leaves and beans, then arrange the sausages on top so they're half-submerged in the sauce but still a little exposed.
  • Bring the mixture to a simmer, then bake in the oven for 20 mins. Meanwhile, make the topping. Mix the breadcrumbs with the garlic and parsley, then season and stir in 1 tbsp oil. Scatter the topping over the casserole, then drizzle with the remaining 1 tbsp oil and bake for 10 mins more until the breadcrumbs are golden and crisp. Leave to stand for a few minutes, then take to the table and serve from the dish.
