My dad was in the Marine Corps and remembers eating this dish often. It's a simple recipe consisting of ground beef mixed with milk, margarine and beef broth. It's also good using ground sausage. Serve this dish over toast.

Steps:

  • Brown the ground beef in a medium skillet over medium-high heat, until meat is no longer pink. Drain excess fat and set aside.
  • Melt the butter or margarine in a medium saucepan over medium heat. Slowly add the flour, stirring constantly, to form a brown roux.

2 teaspoons butter
1 (12 ounce) package maple flavored sausage
1 pound extra-lean ground beef
1 cup sifted all-purpose flour
4 cups milk
2 teaspoons beef bouillon
6 slices white bread
3 sprigs fresh parsley

Steps:

  • Melt butter in a large skillet over medium-high heat. Add ground beef and maple sausage, and cook until no longer pink. Gradually mix in flour, while stirring continuously, until the mixture is thick and pasty. You may not need all of the flour. Slowly whisk in the milk using a fork so that lumps do not form. Stir in bouillon. Continue cooking and stirring constantly until the mixture reaches your desired consistency. The longer it cooks, the thicker it will get.
  • Toast slices of white bread, and top with the meat gravy. Garnish with a little fresh parsley, and serve.

2 cups milk, (2% or higher)
4 Tablespoons salted butter
4 Tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon freshly ground pepper
12 slices bread, (toasted)

Steps:

  • In a medium sauce pan over medium high heat, brown the ground beef. Season with a little salt and pepper. Drain excess grease and set aside.
  • Melt butter in the same sauce pan. Add flour and whisk until butter/flour mixture is bubbly.
  • Add milk, salt, and pepper. Whisk continuously until thick and bubbly.
  • Add cooked ground beef back in and stir.
  • Taste and adjust seasoning as needed (I usually like a bit more pepper). If necessary, add a little more milk until it reaches your desired consistency.
  • Serve over toast.

3 Tbsp butter
3 Tbsp all-purpose flour
2 cups milk
pinch ground nutmeg
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp coarse black pepper
3 dashes Worcestershire sauce
1/2 tsp mustard
1 2.5 oz jar chipped beef
8 slices bread

Steps:

  • Chop your chipped beef roughly and set it aside. If you are sensitive to salt, rinse the beef.
  • Melt butter in a small saucepan over medium heat. Whisk in the flour and cook the roux for a minute. Whisk in the milk gradually and season with ground nutmeg, ground onion powder, ground garlic powder, a few drops of Worcestershire sauce, and a squirt of mustard. Cook until thick and season the white sauce with black pepper. Stir in the chipped beef and set the heat to low.
  • Meanwhile, toast your bread. Once toasted, top with the beef mixture and sprinkle with parsley.

1 teaspoon granulated garlic
1/2 gallon 2-percent milk
2 tablespoons freshly ground black pepper
1 loaf white bread, sliced
Home Fries, recipe follows
Fruit, for serving
3 pounds potatoes, peeled and thinly sliced
3/4 tablespoon cooking oil
3 green bell peppers, seeded and diced
2 white onions, diced

Steps:

  • Brown the ground beef in a skillet over medium heat and set aside.
  • Melt the butter in a saucepan over low heat, being careful not to burn it. Slowly whisk in the flour to make a roux. You are looking for a thick consistency. Add the chicken base, seasoned salt and garlic. Slowly whisk in the milk. Turn the heat to high and bring to a boil. Let it boil for 2 to 3 minutes and then lower the heat to medium, whisking periodically until the mixture gets thick. Whisk in the black pepper and browned beef.
  • Toast the white bread and put the slices on serving plates. Ladle the SOS over the top of the toast. Serve with home fries and a piece of fruit.
  • Put the potatoes in a large skillet with cooking oil and cook for 10 minutes. Add the bell peppers and onions, and continue cooking until golden brown.

Considering the economy now compared to then lean ground beef is just as tasty. If you'd like you could use dried beef - about 6 - 8 ounces, no need to brown dried beef.

After being wounded in Italy in 1944, my grandfather returned home and improvised a dish he was often served in the military. The Army called it "Chipped Beef on Toast". The soldiers called it Something (I can't mention here) On a Shingle, and in classic military tradition, that name was reduced to SOS. My grandfather taught this recipe to my dad, who, in turn, also taught it to my mother and me. My mother, who is offended by the idea of having the first "S" of SOS on her table, calls it Creamed Beef on Toast. All measures are approximate. Because of this, the recipe multiplies well. Heck, you could make enough to feed an army. ;-)

3/4 cup flour
1 medium onion, medium dice
1 teaspoon minced garlic
1 1/2 cups milk, any grade you like but the richer the milk, the richer the gravy
salt & pepper (to taste)

Steps:

  • Combine ground beef, onion and garlic on a large skillet or pot, and brown the beef.
  • Once the beef is browned and your onions clear, add the flour. There are two important things to note here - (1) Do not drain the beef (2) Add enough flour to completely absorb all the liquid in the pan.
  • Once all fluid is absorbed by the flour and you have a nice roux, add your milk. Again, remember that the measures are approximate. So, you want to add about twice as much milk as flour.
  • *Do not be afraid of adding too much milk. If you do, you will just have to cook it for longer in the next step, but the flavor will reward you for your efforts.
  • Season with salt and pepper and bring to a boil. Reduce heat and slowly cook away the fluid, stirring often, until you have a nice thick milk gravy.
  • Spoon generous amounts over dry toast (like an open-faced sandwich) and enjoy.
  • We never have it with a salad or veggies, but they would go well this dish.
