WHITE BEAN AND SAUSAGE SOUP

Steps:
- Heat the olive oil in an 8-quart Dutch oven over medium-high heat. Brown the sausage, breaking it into bite-size chunks as it cooks, 8 to 10 minutes. Remove with a slotted spoon to a paper towel-lined plate to allow excess oil to drain off.
- Add the peppers, oregano, rosemary, garlic and onions to the pot. Season with a pinch of salt and pepper and cook until the onions are tender, about 5 minutes. Pour in the chicken broth, beans and tomatoes. Return the sausage to the pot and bring to a boil. Reduce to a low simmer and cook, uncovered, for 20 minutes.
- Stir in the kale, heavy cream and apple cider vinegar. Taste and adjust the seasoning as needed. Serve with grated Parmesan cheese if desired.
- To freeze, transfer the soup to containers with airtight lids, leaving space at the top as it will expand as it freezes. Allow the soup to cool completely before placing the lids on and freezing. Reheat until hot before serving and garnish with Parmesan cheese if desired.

- Heat olive oil in a large stock pot.
- Saute onions and garlic just until soft and transparent. Remove with a slotted spoon and set aside.
- Add sausage chunks to pan and brown all over, about 3-5 minutes.
- Return onions and garlic to pan.
- Add remaining ingredients.
- Bring to a boil, stirring often to keep from burning.
- Reduce heat, simmer 45-60 minutes stirring occasionally.
- Adjust seasonings to taste.

BACON, CABBAGE, AND WHITE BEAN SOUP
This hearty flavourful soup hits all the right smoky and sweet notes for a cold winter's day. Enjoy with some grated Parmesan cheese on top and a side of cornbread. Perfect to keep in the fridge for those days you want to rush home and warm up!

- In a large pot over medium heat, saute your diced bacon for about five minutes until it starts to release its fat. If it's really fatty, drain some, so that you keep about a tbsp of bacon fat in the pot. Add your carrots, onion, and garlic. Cook for about 10 min, until vegetables are soft.
- Add your chicken broth, water, and all of your spices except for the salt (be cautious with the salt--this soup can easily get too salty). Cover pot with lid. Bring to a boil. Add the beans and the cabbage, and let come to a gentle boil again. At this point, bring it to a gentle simmer on a lower heat and let it simmer away for about 30 minute Stir every once in a while so nothing sticks to the bottom.
- Taste and adjust seasoning. If you'd like, add the tsp of salt here, if it needs it. If you find you want to bring out the sweetness of the cabbage just a touch because your bacon is too smokey, add the sugar. (I liked the small bit of sugar.).
- Simmer for another 10 to 15 minutes, adjusting seasonings as needed. Discard your bay leaf and serve. Garnish with a tbsp of freshly grated Parmesan (it adds a really nice nutty depth to the soup.).
- Stored in an airtight container, soup will keep well in the fridge for about 3-4 days.
ITALIAN PEASANT SOUP WITH CABBAGE, BEANS & CHEESE

- Mash 1 1/2 cups beans with a fork.
- Heat 1 teaspoon oil over medium heat in a Dutch oven or soup pot. Add onion and cook, stirring often, until softened and lightly browned, 2 to 3 minutes. Add cabbage and minced garlic; cook, stirring often, until the cabbage has wilted, 2 to 3 minutes. Add broth, mashed beans and whole beans; bring to a simmer. Reduce heat to medium-low, partially cover and simmer until the cabbage is tender, 10 to 12 minutes. Season with pepper.
- Shortly before the soup is ready, toast bread lightly and rub with the cut side of the garlic clove (lightly or heavily depending on taste). Divide toast among 8 soup plates. Ladle soup over the toast and sprinkle with cheese. Drizzle about 1 teaspoon oil over each serving. Serve immediately.

This was inspired by the "Carrot, Potato and Cabbage Soup" recipe on AllRecipes.com. I've made some substitutions and additions so it is more in keeping with a Nutritarian eating style.....For each can of low sodium broth, I substitute 2 cups water, 1 tablespoon VegiZest (from drfuhrman.com) and 1/8 teaspoon salt (optional).

- Combine all ingredients in a large pot (at least 5 quarts).
- Bring soup to a boil, stirring several times so bottom doesn't burn.

This recipe came about by accident when I opened the fridge to find the only vegetable in there was a cabbage. With a few additions, it actually turned into a delicious and healthy lunch dish!

- Place all ingredients except herbs and bean in a pot with enough water to cover.
- Bring to the boil and then lower the heat and simmer for half an hour, adding more water as needed.
- Add the butter beans and cook another 5 minutes or until everything is piping hot.
- Divide between warmed soup bowls and serve with the herbs sprinkled on top.
BEAN CABBAGE SOUP
I used to love my Italian grandmother's homemade minestrone. She was very particular about ingredients and where she bought them. Since I cook for only my husband and myself, I have simplified her recipe and cut down on the amounts. If I do say so myself, it's almost as good as Nonna Teresa's.

- Bacon ... Dice the bacon, and cook on low heat in a large pot. If rendered slowly, you shouldn't need any oil - just go slow. Once the bacon is crisp (about 5 minutes or less); remove to a plate lined with a paper towel; this will be used as a garnish later. But, make sure to reserve the drippings.
- Base ... To the pot with the bacon drippings; add the onion, garlic, leeks, scallions, and a pinch of both salt and pepper; then, continue to cook on a low heat so they sweat. You DO NOT want them to brown. This should take a good 5-7 minutes.
- Potatoes, Cabbage, and Broth ... Deglaze with the wine (I use 1/3 cup); then, add the cabbage, potatoes, and stir to combine. Add the broth, bay leaf, parmesan rind if you have it ... if not, wait to add any grated parmesan; and bring to a light boil. Then, reduce to medium low heat, and cook for at least 20-25 minutes until the cabbage and potatoes are tender.
- Puree ... Now, I like to puree mine - however, this soup can easily be served as is. It is just a personal preference. When pureed, the potatoes naturally thickens the soup; and, creates a creamy like consistency. To puree - I like my immersion blender; but, you can also use a standard blender. But, you will have to blend in batches. Not all the soup will fit into the blender. Blend until you get a semi smooth consistency. I like a little texture "still a little chunky,' so I don't blend it too much.
