Vegan Pie Crust image

Easy, flaky vegan pie crust. You'll never look at storebought again! This recipe makes a single or double pie crust.

1¼ cup all-purpose flour
1/4 teaspoon baking powder
1 teaspoon sugar
1/2 teaspoon salt
1/2 cup vegan butter (cold)
2.5-4 tablespoons ice water
2½ cup all-purpose flour

1 cup vegan butter (cold)
5-8 tablespoons ice water

Steps:

  • In a food processor, pulse together the flour, baking powder, sugar, and salt.
  • Pulse in the chunks of vegan butter until it forms a sandy texture. (This usually takes me 7-10 pulses.)
  • Pulse in water, adding more as needed until it can form into a ball. To prevent it from being too sticky, add in a tablespoon of water at a time. If still dry and crumbly, add a bit more ice water.
  • Split the dough into two halves, roll each into a ball, and press into discs.
  • Wrap in plastic wrap or parchment paper.
  • Chill in the fridge for 30 minutes. You can leave it in the fridge for up to 3 days. Or freeze for up to 3 months.
  • Sprinkle flour on the surface you'll be rolling the dough on. Then, sprinkle some on top of the dough as well so the rolling pin doesn't stick. Roll the dough out between two pieces of wax paper to make things easier!
  • Roll out to fit the size of your pie dish. Place in the pie dish, then cut off the excess crust and crimp the edges.
  • Bake per your pie recipe instructions.

1/2 teaspoon salt
1 large egg
1/4 cup grated onion
Olive oil
4 large eggs
1/2 cup milk
3 tablespoons grated Parmesan
3/4 to 1 teaspoon salt
1/4 teaspoon freshly milled black pepper
3 tablespoons butter
1 cup chopped onions
1 garlic clove, finely chopped
1 medium cauliflower, broken into small florets
2 tablespoons chopped fresh parsley
1 1/2 teaspoons chopped fresh basil, or 1/2 teaspoon dried
3/4 teaspoon chopped fresh thyme, or 1/4 teaspoon dried
1 3/4 cups grated Gruyere

Steps:

  • Preheat the oven to 400 degrees F. Generously oil a 9-inch pie pan.
  • Potato Crust: Place 2 firmly packed cups grated raw potatoes in a colander placed over a bowl; toss the potatoes with 1/2 teaspoon salt and set aside for 10 minutes. Squeeze out the excess water. Combine the drained potatoes, 1 large egg, beaten, and 1/4 cup grated onion in a medium bowl. Pat the potato mixture into the oiled pie pan, building up the sides of the crust with lightly floured fingers. Bake for 35 to 40 minutes, until golden brown, brushing the crust with oil after the first 20 minutes to crisp it.
  • Remove crust from the oven and reduce the temperature to 350 degrees F.
  • Meanwhile, beat together the eggs, milk, 1/2 teaspoon of the salt, and the pepper in a small bowl; set aside.
  • Blanch cauliflower. Melt the butter in a large skillet over medium heat. Add the cauliflower, onions, garlic, and 1/4 to 1/2 teaspoon of the remaining salt; cook, stirring frequently, until lightly browned, about 5 minutes. Add the parsley, basil, and thyme; cook, covered, for 10 minutes, stirring occasionally. Remove from the heat.
  • Layer the baked potato crust with 1/2 of the cheese, then the cauliflower mixture, then the remaining cheese. Pour the milk mixture over the top and lightly dust with paprika. Bake for 35 to 40 minutes, until set. Remove from the oven and serve.

1 small yellow onion, minced
1 stalk celery, thinly sliced

2 cups diced cooked chicken
Salt and pepper
1 sheet thawed puff pastry
1 beaten egg

Steps:

  • In a large saucepan, melt butter over medium-high. Add onion, celery, and carrots and cook until onion is translucent, about 4 minutes. Add flour and cook, stirring, 1 minute. Gradually add broth, stirring constantly, then bring to a boil. Reduce heat and simmer 5 minutes. Stir in green beans and chicken and season with salt and pepper.
  • Divide filling among four 8-ounce ramekins. Roll out 1 sheet puff pastry and cut 4 rounds to fit ramekins. Cut a small X in center of each to vent, then place on top of filling. Brush with beaten egg. Bake at 375 degrees until filling is bubbling and crust is golden, 30 to 40 minutes.

  • Add water and vinegar. Replace Twister lid and hold, pressing "Pulse 8-10 times until dough is formed, turning Twister lid counterclockwise during blending. Do not overblend.
  • Remove dough and pat into a smooth disc. Wrap disc in plastic wrap and refrigerate at least 2 hours before rolling out dough.

1/3 cup cooking oil
1/4 cup water
1 cup self-rising flour

Steps:

  • Bring cooking oil and water to boil in a small saucepan -- it takes just a few seconds! Then remove from heat.
  • Add 1 cup flour and stir. It will quickly pull away from the pan and form a ball. Don't overstir.
  • Place into a pie plate (non-greased) and wait a few minutes for it to cool enough so you can touch it with your fingers.
  • Press out evenly into the pan, pushing it up the sides with your fingers. Pinch a decorative edge. That's it!

3 tablespoons unsalted butter
1/2 pound mushrooms, trimmed and quartered
1/4 cup all-purpose flour
4 cups roast turkey meat, cut into 1/2-inch pieces
1 (10-ounce) package frozen baby peas, thawed
For biscuit crust:
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup coarsely grated extra-sharp Cheddar
1/4 cup grated Parmigiano-Reggiano
3/4 stick cold unsalted butter, cut into 1/2-inch pieces
1 1/4 cups well-shaken buttermilk

Steps:

  • Make stock:
  • Separate parts of carcass and put, along with skin, in an 8-quart pot. Cover bones with water and simmer until liquid is reduced by one third, about 1 1/2 hours. Strain through a fine-mesh sieve into a large bowl. Set aside 3 1/2 cups stock (reserve remainder for another use).
  • Make filling:
  • Cook onion, carrots, celery, parsnip, and thyme in butter with 1/2 teaspoon salt and 1/4 teaspoon pepper in a 12-inch-wide shallow pot (3- to 4-quart), covered, over medium heat, stirring occasionally, until vegetables are almost tender, 10 to 12 minutes. Add mushrooms and cook, uncovered, stirring, until tender, 5 to 7 minutes.
  • Sprinkle with flour and cook, stirring constantly, 2 minutes. Stir in stock (3 1/2 cups), scraping up any brown bits, and bring to a boil, stirring, then simmer until slightly thickened, about 3 minutes. Stir in turkey, peas, and salt and pepper to taste. Reheat over low heat just before topping with biscuit crust.
  • Make biscuit crust and bake pie:
  • Preheat oven to 400°F with rack in middle.
  • Sift together flour, baking powder, baking soda, salt, and pepper into a medium bowl. Add cheeses and toss to coat. Blend in butter with a pastry blender or your fingertips until mixture resembles coarse meal. Add buttermilk and stir just until a dough forms. Drop biscuit dough onto filling in 8 large mounds, leaving spaces between biscuits.
  • Bake until biscuits are puffed and golden brown and filling is bubbling, 35 to 40 minutes. Let stand 10 minutes before serving.
