Categories     Santa Fe Chicken Salad     chicken salad     taco salad     Mexican salad     easy salad recipe

Time 30m

Yield 3-4 servings

Number Of Ingredients 16

1/4 c. extra-virgin olive oil
pinch of crushed red pepper flakes
1/4 c. lime juice
2 cloves garlic, minced
1/2 tsp. ground cumin
kosher salt
Freshly ground black pepper
3 tbsp. vegetable oil, divided
2 small corn tortillas
2 boneless, skinless chicken breasts
4 c. chopped romaine lettuce
1 c. black beans, drained
1 avocado, chopped
2/3 c. corn
1 c. Shredded Monterey Jack
1/4 c. Chopped cilantro

Steps:

  • Make dressing/marinade. Whisk together olive oil, red pepper flakes, lime juice, garlic and cumin until emulsified.
  • Place chicken breasts in a large resealable plastic bag. Pour about half of the lime dressing over the chicken, close bag and toss chicken to coat.
  • Marinate 15 minutes. Meanwhile, heat 2 tablespoons vegetable oil in a medium skillet over medium heat. Cut tortillas in half, then slice the halves into ½"-thick strips. When the oil is shimmering and very hot, add the strips to the oil. Fry until crispy, about 2 minutes per side. Drain on paper towels and season immediately with salt.
  • In a separate skillet, heat remaining vegetable oil over medium-high heat. Add chicken and cook for 6-8 minutes per side, until the chicken is cooked through. Let rest for 10 minutes before slicing.
  • Assemble salad. Toss remaining ingredients in a large serving bowl. Top with cooked chicken and crispy tortilla strips then toss with dressing.

This is one of my favorites. It's very festive and it makes a great meal.

Provided by Judy Neary

Categories     Salad

Time 50m

Yield 4

Number Of Ingredients 11

4 skinless, boneless chicken breasts
½ cup mayonnaise
½ cup Italian-style salad dressing
1 head iceberg lettuce
1 head romaine lettuce, rinsed and dried
2 bunches green onions, chopped
1 large tomato, chopped
1 ½ cups shredded Cheddar and Monterey cheese blend
5 (6 inch) flour tortillas
½ cup ranch-style salad dressing
½ cup salsa

Steps:

  • In a gallon size plastic bag or 9x9 baking dish, mix together the mayonnaise and Italian dressing. Place chicken in mixture and marinate overnight in the refrigerator.
  • Chop, wash, and dry the iceberg and romaine lettuce. Mix and divide among four dinner-size plates. Divide and place the tomato and green onions among the plates. Sprinkle the top of each salad with shredded cheese.
  • Remove chicken from marinade and grill or broil until cooked. While chicken is cooking, cut tortillas into three thick strips and cut each strip into 'matchsticks'. Place on a cookie sheet and put under broiler until golden brown. Let cool. Cut the chicken into strips and divide among plates. Top with tortilla 'crispies'.
  • To prepare the dressing, combine the salsa and ranch dressing in a blender and mix until smooth. Pour over each salad.

SANTA FE STYLE SALAD

Santa Fe Style Salad image

My sister tuned me into this easy salad. It is so yummy and you can change it up to whatever you have on hand. The dressing is what really makes it, and it is so easy.

Provided by Chef Lindsay

Categories     Black Beans

Time 20m

Yield 4 serving(s)

Number Of Ingredients 13

1 head iceberg lettuce, chopped
1 avocado, chopped
1 tomatoes, chopped
3 green onions, chopped
1 (15 ounce) can black beans, rinsed
1 (15 ounce) can corn, drained
1 cup shredded colby-monterey jack cheese
3 cooked chicken breasts (rotisserie works or sometimes I George Forman them, chopped or shredded)
jicama (optional)
cilantro, chopped (optional)
corn tortilla strips (optional)
1 cup ranch dressing
1 cup barbecue sauce

Steps:

  • Wash all veggies and mix together in a large bowl with all the other ingredients.
  • Mix ranch dressing with barbecue sauce. It doesn't matter how much you make, as long as it is a 1 to 1 ratio. This is the dressing.
  • Garnish with cilantro and/or tortilla strips. I have found them already made at the grocery store, or you can make your own.
  • I like to put a little of the dressing mixed in with the chicken and then have the rest separate and each person can put on the desired amount.

3 teaspoons Homemade taco seasoning (or your favorite store bought seasoning)
4 cups romaine lettuce (chopped)
2 green onions (white and green parts, sliced)
1 cup cherry tomatoes (halved)
½ cup black beans (rinsed and drained (use canned or my [Easy Instant Pot Black Beans]))
1 large corn cob (husks and silks removed (or about 1 cup of thawed frozen corn))
1 avocado (seeded and diced)
Serve with grated cheese (fresh cilantro, lime wedges, and tortilla strips if desired)
6 tablespoons extra virgin olive oil
4 tablespoons fresh lime juice
2 teaspoons pure maple syrup (may substitute with honey)
2 teaspoons freshly chopped cilantro
salt and freshly ground black pepper (to taste)

Steps:

  • Season the chicken breast with salt and pepper to taste and sprinkle with the taco seasoning. Let stand at room temperature for about 1 hour.
  • Preheat the grill to medium and cook the chicken breast about 8 minutes per side or until internal temperature reaches 165 degrees. Remove from heat, cover loosely with foil and allow to rest for 10 minutes before slicing.
  • While the chicken cooks, place the corn on the grill and cook on all sides, turning every 3-4 minutes or until blackened. Remove from heat and cut the corn from the cob when cool enough to handle.
  • Place the lettuce, green onions, cherry tomatoes, black beans, roasted corn, avocado, and cheddar cheese in a large bowl. Toss together gently, and serve on plates. Top with the chicken and tortilla strips.

LIKE-EARL'S SANTA FE SALAD

Like-Earl's Santa Fe Salad image

My hobby is copying restaurant dishes and this is one of my favourites at our West Vancouver Earl's. This hearty salad combines all the necessary components for a great dish with the sweet dates complementing the tart Peanut Lime dressing (which is good on any green salad). Sliced grilled blackened chicken is excellent served alongside.

Provided by Ronalynne

Categories     Salad Dressings

Time 55m

Yield 4 meals, 4 serving(s)

Number Of Ingredients 18

1/4 cup peanuts
1/4 cup vegetable oil or 1/4 cup peanut oil
1/4 cup fresh lime juice
1/2 tablespoon peanut butter
1 teaspoon soy sauce
1 teaspoon sugar
1 small garlic clove, finely chopped
2 tablespoons lime zest
3 small corn tortillas, cut into 1-inch x 1/8-inch long pieces
oil (for deep frying)
1 ear of corn
1 cup dates, chopped into 1/4-inch pieces
14 ounces black beans, rinsed, drained
8 cups mixed greens
8 cups coarsely chopped romaine lettuce
1 avocado
3/4 cup crumbled feta cheese
1/4 cup peanuts, chopped

Steps:

  • Dressing:.
  • Combine ingredients in a food processor or use a hand immersion blender to process until mixture is green and tiny specks of peanuts and lime are visible. Makes 3/4 cup.
  • Salad:.
  • Heat oil to 375 degrees in a deep fryer or heavy pot (a small pot using about 1 cup oil and working in two batches works well); add tortilla pieces and deep fry until golden and crisp; drain on paper towels (may also be baked @ 375 degrees). (Note: Coarsely crushed corn tortilla chips or purchased deep fried chow mein noodles may be substituted for deep fried tortilla pieces or whole corn tortilla chips may be decoratively placed beside the prepared salad instead.).
  • Rub corn with vegetable oil and grill over medium-high heat until lightly browned; cool and remove kernels. (3/4 cup cooked corn may be substituted).
  • Place lettuces in a large bowl; toss together with enough dressing to lightly coat. Add corn, dates, black beans and half the tortilla pieces and feta cheese; toss well. Divide between 4 plates and top with remaining feta cheese and tortilla pieces. Sprinkle chopped peanuts over top. Peel and thinly slice avocado and divide between 4 plates; place beside each salad.

  • Add all of the dressing ingredients to a high speed blender like the Vitamix and blend until completely smooth. If possible, do this at least a few hours ahead of time or overnight, so the dressing can chill in the fridge and thicken up.
  • Steam your ears of corn and whole brick of tempeh in a steamer basket on the stovetop for 15 minutes or until corn is fully cooked. If you have an Instant Pot, place the trivet in the pot and add 1 cup of water. Add in the shucked corn ears and brick of tempeh. Cook on high pressure for 2 minutes. Make sure your Instant Pot valve is set to SEAL. Immediately release pressure once done.
  • While your corn and tempeh steams, prepare the corn tortilla strips. Cut the corn tortillas in half and then into thin strips. Place them on cookie sheet, drizzle with oil, and bake at 350 degrees Fahrenheit on bottom rack of oven for 10 minutes or until crispy. Finish with a sprinkle of salt.
  • Once tempeh has finished steaming, cut tempeh into thin strips and grill it in a grill pan or regular skillet to give it color, about 10 minutes. Finish with a sprinkle of salt and pepper.
