I came up with this while playing around with sangria recipes. It has now become a traditional beverage at Thanksgiving and Christmas; my family actually got upset the one time I didn't make it!

1 cup white sugar
4 cranberry-flavored tea bags
4 slices fresh lemon
6 whole cloves
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground ginger
1 ½ cups water
2 (750 milliliter) bottles white wine
4 apples, cored and cut into chunks
1 ½ cups dried cranberries
2 fluid ounces apple brandy

Steps:

  • Place the sugar, tea bags, lemon slices, cloves, cinnamon, nutmeg, ginger, and water into a saucepan, and stir until the sugar has dissolved. Bring to a boil, reduce heat, and simmer for 10 minutes. Remove from heat and let mixture cool. Strain out and discard the spices, lemon, and tea bags.
  • Pour the white wine into a large jar or covered container, and mix with the tea mixture. Stir in apples and cranberries; mix in the apple brandy. Chill in refrigerator 24 to 48 hours. Serve cold.

This is my mother-in-law's recipe and as far as my husband and son are concerned, it is the most important part of thanksgiving dinner. It's nice to serve this in a glass bowl to show off the festive red color. Preparation time does not include overnight refrigeration.

1 (12 ounce) bag cranberries
1 (6 ounce) box red Jell-O (pick your favorite red flavor, or use two 3-oz boxes and mix flavors)
1 apple, cored but unpeeled
1 orange, seeded, but unpeeled
1 stalk celery, diced
1/2 cup chopped pecans or 1/2 cup walnuts
1 (8 ounce) can crushed pineapple, undrained (I typically use a 16 oz can and it also works fine)
1/4-1/2 cup sugar (optional)

Steps:

  • Chop or grind cranberries, orange (with rind) and apple (with peel). Make sure you do this in such a way as to conserve all of the juice.
  • You can use a food processor or one of the old metal food grinders that clamp to your table - mine drips horribly, but if you have kids helping, it's lots of fun for them to turn the crank and hear the cranberries pop. You could of course chop it all by hand with a knife, but you'll want to chop everything very finely.
  • Place fruits and their juices in a serving dish/bowl that will hold 8-10 cups.
  • Add diced celery, nuts and crushed pineapple with juice.
  • Dissolve jello in recommended amount of boiling water (2 cups), and add to the fruit/nut mixture.
  • Depending on how juicy your fruit is, you may not need to add any cold water to the mixture. If you think it will need it, don't add more than 1 cup.
  • Depending on the tartness of your fruits, you may or may not want to add some sugar, perhaps 1/2 cup. (I just taste it before putting it in the fridge to set and add sugar if it seems too tart.).
  • Refrigerate for several hours till set(overnight is good).

Typically served hot, this mulled wine is sweetened with maple syrup and flavored with tea and spices before being chilled to create a refreshing fall sangria.

12 whole allspice berries
10 whole cloves
4 green cardamom pods, lightly crushed
2 cinnamon sticks
2 black tea bags
1 cup maple syrup
One 10-ounce bag frozen cranberries, thawed
One 750-milliliter bottle Bordeaux or other rich red wine
1 cup orange liqueur, such as Grand Marnier
2 clementines or small oranges, thinly sliced
One 3-inch piece fresh ginger, peeled and cut lengthwise into 1/4-inch-thick slices

Steps:

  • Bring the allspice, cloves, cardamom, cinnamon and 2 cups water to a boil in a small saucepan. Remove the saucepan from the heat, add the tea bags and let steep for 5 minutes. Discard the tea bags, then return the mixture to a boil. Stir in the maple syrup and cranberries, and cook for 2 minutes. Let cool, then transfer the mixture to a 3-quart pitcher.
  • Add the wine and liqueur to the pitcher, and stir to combine. Add the clementines and ginger, and cover the pitcher with plastic wrap. Refrigerate the sangria for at least 4 hours and up to overnight.
  • To serve, fill 8 glasses halfway with ice, then pour the sangria and fruit into each glass.

1 (16 ounce) container frozen strawberries in sugar, thawed
1 cup red wine
1 cup sugar

Steps:

  • From lemon, grate 1 teaspoon peel and squeeze 3 tablespoons juice. From lime, grate 1 teaspoon peel and squeeze 2 tablespoons juice. From orange, grate 1/2 teaspoon peel and squeeze 1/4 cup juice.
  • In 3-quart saucepan, combine lemon, lime, and orange peels, cranberries, strawberries with their syrup, wine, and sugar; heat to boiling over high heat. Reduce heat to medium low and cook, uncovered, about 20 minutes longer or until sauce becomes very thick, stirring to keep from scorching. Stir in lemon, lime and orange juices.
  • Spoon cranberry sauce into serving bowl; cover and refrigerate until well chilled, at least 4 hours.

1 cup orange marmalade

1 large Granny Smith apple, halved and thinly sliced
1/2 cup fresh or frozen cranberries
1/2 cup whiskey

1 bottle (750 milliliters) cranberry wine or 3-1/4 cups cranberry juice

This cranberry relish thickens over time. And it needs to chill in the referigerator for about 1 day, so make it at least one day before your plan to serve it.

1 lb cranberries
2 cups sugar
1/2 cup water
1/2 cup orange juice
15 ounces can crushed pineapple
2 teaspoons grated orange peel

Steps:

  • Combine all ingredients in an uncovered 3-quart saucepan, and cook over medium heat, stirring often, until most of the cranberries have opened and the mixture is somewhat thickened. Be sure to cook the cranberries until they "pop" in order to release the natural pectin, which thickens the sauce.
  • Store in refrigerate for up to 1 day or until ready to use. Relish thickens a bit over time.
  • NOTE - If you prefer a smoother sauce, strain the cranberry skins through a fine sieve.
  • NOTE - For flavor variation, add ½ cup slivered almonds and 1 cup chopped apple bits with all the other ingredients (in Step #1).

1/2 cup sugar
1 (12 ounce) bag fresh cranberries (about 3 cups)

Steps:

  • Drain syrup from strawberries into a 1 cup measuring cup and set strawberries aside.
  • Add water to syrup to make 1 cup liquid.
  • In a 3 quart saucepan over high heat, heat syrup mixture, sugar and cranberries to a boil, stirring constantly.
  • Reduce heat to low and simmer, uncovered for 10 minutes or until cranberries pop.
