SANDWICH RYE BREAD FOR BREAD MACHINES
This recipe was inspired by one on King Arthur Flour, but I have simplified it a good deal. (Theirs has mustard seed and instant mashed potatoes.) The secret ingredient for getting that rye bread sourness -- pickle juice!

BREAD MACHINE EASY RYE BREAD
Steps:
- Place all of the ingredients in the breadmaker in the order listed. Set the machine for the regular cycle and light color. Start the machine and go somewhere and do something else.
- When the cycle is finished, removed the bread from the pan and let it cool on a rack. This is wonderful while still slightly warm with sweet unsalted butter, or refrigerate it and slice into thin even slices for sandwiches.
RUSTIC RYE BREAD RECIPE FOR BREAD MACHINE
This rye bread recipe produces one medium size loaf. Baking times can slightly vary depending on your bread machine baking cycle.

- Add the water, sugar, milk, salt, and flour to the bread machine.
- Add 2 ½ teaspoons of bread machine yeast. Active dry yeast or instant yeast will work as well.
- Close the lid and set the baking cycle to Basic or White Bread Cycle. Press start.
- About 5 to 10 minutes before the end of the kneading cycle, add two teaspoons of caraway seeds.
- Let the bread machine finish the baking cycle. Once finished, remove the bread pan and place the loaf on a cooling rack for 15-20 minutes before slicing.

Steps:
- Add ingredients to your bread machine according to manufacturer's directions.
- Use whole wheat cycle for baking. OR use the dough cycle, and bake it in the oven. If doing this let bread rise again in greased bread pan in a warm place and cover with a damp cotten towel till the dough almost doubles.
- Bake for 35 minutes at 350 till golden. I usually remove it from the pan after 25 minutes and continue baking it on a baking stone for a crusty crust!
- Rub cold butter on the warm loaf to make it extra yummy.
DARK RYE BREAD (DOUGH MADE IN THE BREAD MACHINE)
This bread is perfect used for sandwiches! Lovely texture, inviting aroma!, and yummy flavour! The colour AND flavour can easily be adjusted to suit your own taste.

Yield 1 beautiful loaf of Dark Rye bread

Steps:
- Place all of the above ingredients, accurately measured and in the order I have listed them, into the bread machine.
- Select the 'dough' cycle.
- When the cycle is complete, take the dough out of the bread machine, place it in a well greased bowl, cover and leave to rise in a warm place for about 1/2 an hour.
- Then knead the dough lightly (while still in the bowl), for about 1 minute.
- Turn out onto a lightly floured surface.
- Either 'pat' the dough into a ball, flatten slightly and pinch all the edges underneath, and place in a round pan and dust with flour, OR 'pat' the dough into a 'log' shape and place in a loaf tin, for a rectangular or 'brick' shape.
- Leave the dough to rise again, this time for about 1 hour or until it has risen to about double it's original size.
- Bake at 200°C for about 30 minutes.
SUPERB RYE BREAD (BREAD MACHINE)
This is a good basic bread machine recipe for rye bread. I don't remember where I got it, but it's one I make all the time.
