This is our favourite sandwich to have for dinner on a lazy weekend. I like to serve it with sweet potato fries and a Caesar salad. Mmm . . . mmm . . . scrumptious!

2 (6 ounce) New York strip steaks
salt and ground black pepper to taste
2 tablespoons olive oil
1 tablespoon butter
6 large button mushrooms, sliced
1 bell pepper, cut into matchstick-size pieces
2 sandwich buns, split
½ cup shredded mozzarella cheese
¼ cup mayonnaise

Steps:

Season steaks with salt and pepper; allow steaks to come to room temperature, about 15 minutes.
Heat oil in a skillet over medium heat until very hot; lay steaks in pan and cook until they are beginning to firm and are hot and slightly pink in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Transfer steaks to a warm plate; cover and let rest, about 10 minutes.
Melt butter in same pan over medium heat; stir in mushrooms and peppers. Season with salt and pepper; cook and stir until tender, about 5 minutes.
Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
Toast buns under the broiler until golden, about 2 minutes. Divide mozzarella cheese over bottom halves of buns; return to broiler until cheese melts, about 2 minutes.
Slice steak very thinly. Pile steak slices over cheese-topped bun halves; top with mushrooms and peppers. Spread mayonnaise on top halves of buns; place over sandwich.

Ingredients

1 yellow onion, chopped
1 tablespoon olive oil
4 cloves garlic, minced
½ pound cubed beef stew meat
4 tablespoons tomato paste
1 (28 ounce) can crushed tomatoes
1 pinch dried parsley
1 pinch dried basil
1 pinch fennel seed
salt and pepper to taste

Steps:

Heat the oil in a large skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more. Add the garlic during the last 3 minutes of cooking.
Transfer the onions and garlic to a bowl and set aside. Turn the heat up to medium high and add the beef cubes. Cook, stirring occasionally, until browned on all sides, about 5 minutes. Drop in the tomato paste and reduce the heat to medium; allow the tomato paste to cook about 2 minutes, or until it begins to brown, before stirring.
Pour in the crushed tomatoes and return the onions and garlic to the pan. Mix in the parsley, basil, fennel, and salt and pepper. Reduce the heat to low and simmer, stirring occasionally, until the sauce is thick and the meat is tender, 6 to 7 hours.

My daughter and son have perfected their method for making Stuffed Crust Pizza (like Pizza Hut) with sticks of string cheese.My son, Sam is our sauce maker and has dveloped this recipe after trying several different recipes. Ingredients

1 (10 3/4 ounce) can tomato puree
1 (6 ounce) can tomato paste
1 teaspoon olive oil
1/2 lemon, juice of (or 1/2 tsp Lemon Juice Concentrate)
1 teaspoon kosher salt
1 teaspoon oregano
1 teaspoon sweet basil
1 teaspoon sugar
1 teaspoon garlic
1/2 teaspoon thyme
1/2 teaspoon onion powder

Steps:

Combine all ingredients in a large sauce pan.
Simmer over medium-low heat, stirring constantly for 5 minutes.
Cover and reduce heat to low. Allow to simmer for 10 -15 more minutes.
Stir once or twice durring simmer.
Use on Pizza or as a dipping sauce for bread sticks.
Store in a tightly sealed jar in the refrigerator for 2 weeks.
*Fresh herbs may be substituted at (generally) twice the listed amount. We have experimentd with fresh herbs and have had inconsistent results, so we have stuck with dried.
