SALT-FREE FLOUNDER WITH CUMIN AND PEPPERS

- Pat flounder dry with paper towels and sprinkle with juice of half the lemon, one-half teaspoon of the cumin and the cayenne pepper. Set aside. Finely chop the lemon half that was juiced and reserve it.
- Preheat oven to 400 degrees.
- Heat half the oil in a skillet, add the onion and peppers and saute until tender. Add the garlic and stir in the reserved chopped lemon. Oil a baking dish that is at least 12 inches long.
- Arrange the flounder fillets, overlapping each other in the baking dish. Spread the vegetable mixture over and around the fish.
- Combine the remaining two tablespoons of olive oil with the remaining one-half teaspoon of cumin and the sherry vinegar and sprinkle over the fish. Bake 20 minutes.
- Just before serving sprinkle fish with the juice of the remaining half of the lemon and the parsley.

FLOUNDER WITH HERB BLOSSOM BUTTER
Herb blossom butter sounds fancy, but it's really just a prettier, more floral, summery version of herb butter, perfect with any white-fleshed fish, salmon or trout. If you have no access to flowering herbs, simply use chives, thyme and dill instead to make a plain herb butter. Look for herb blossoms at farmers markets or buy a couple of blooming potted herb plants, or ask a friend with a vegetable garden. Edible flowers and all sorts of herb blossoms are also available online.

- Make the herb blossom butter: Put butter in a bowl. Add chives, chive blossoms, dill, thyme blossoms, mustard blossoms if using, Dijon mustard, whole-grain mustard, lemon zest and lemon juice. Add a big pinch of salt and black pepper. Mix well with a fork until well combined. With wet hands, form butter into a log shape, then wrap and chill. Bring to cool room temperature to serve.
- Prepare the fish: Put flour in a low bowl or pie plate and season with salt, pepper and cayenne.
- Season fish on both sides with salt and pepper. Dip each fillet in seasoned flour on both sides, shaking off excess, and transfer to a large plate.
- Put 2 large skillets over medium-high heat and film bottoms with oil. When oil is hot, carefully place 2 fillets in each pan. (Alternatively, work in batches with 1 pan.)
- Reduce heat to medium and cook for 2 to 3 minutes, until fish is nicely browned on one side. Flip fillets with a spatula and cook for 2 minutes more, until fish flakes easily when probed.
- Transfer fish to warm platter or individual warmed plates. With a paring knife, cut herb butter into 8 thin slices and lay 2 slices atop each fillet. Sprinkle with extra herb blossoms, if you wish, and serve immediately.

BAKED FLOUNDER WITH PEPPERS AND TOMATOES
I have made this a few times using different fish, halibut, haddock and even sole with great results. Points 4.

Steps:
- Preheat oven to 350 degrees.
- Place the fillets in an oven proof baking dish.
- Sprinkle with salt and pepper.
- Set aside.
- Char the bell peppers using either a gas range burner or the broiler.
- Quickly place in a paper bag to steam.
- Remove when cool enough to handle.
- Remove the skin and seeds and chop.
- Coat a nonstick skillet with cooking spray.
- Sauté the onion and garlic until onions are wilted.
- Add the peppers and tomatoes and cook stirring over high heat for 3 minutes.
- Stir in the tarragon and vinegar.
- Spoon the vegetables over the fish fillets and bake for 15 to 18 minutes until the fish is just opaque.
- Serve immediately.

BAKED FLOUNDER WITH MOROCCAN SPICES

- Combine the coriander, parsley, garlic, paprika, cumin, ground coriander, cinnamon, salt and pepper. Rub the fish fillets with this mixture. Place them in a glass or ceramic dish, cover with plastic wrap, refrigerate and allow to marinate two to three hours.
- While the fish is marinating, thickly slice the carrots and quarter the potatoes. Place them in a saucepan, cover with water and boil for 15 minutes, to parcook them. Allow to cool. Peel and slice the potatoes. Set the vegetables aside.
- Slice four of the tomatoes and puree the rest.
- Preheat oven to 450 degrees. Place oven rack in the highest position.
- Scatter the frying pepper, chili pepper and carrot slices in a baking dish. Place the fish fillets on top, then scatter the potato and tomato slices over them.
- Mix the pureed tomatoes with the olive oil and season to taste with salt and pepper. Pour over the fish. Cover loosely with foil. Place in the oven and bake about 20 minutes. Serve at once.

FISH FILLETS WITH LEMON TURMERIC SAUCE

- Slice the fish fillets into pieces about two-and-a-half inches by one-and-a-half inches (four pieces per fillet).
- Steam the asparagus. While it is cooking, soften the shallots in the butter. Saute the fillets a few at a time, so that they are barely cooked. Do not break when you remove them with a slotted spoon. Keep warm in a very low oven.
- Drain the asparagus spears and keep warm.
- Add the cream, turmeric and lemon juice to the pan in which you have sauteed the fish fillets. Bring to a boil. Add any juices that have collected under the fish fillets. Simmer until thickened, stirring, season with salt and pepper and add the lemon peel. Arrange the fillets on individual plates. Pour the sauce on top, garnish with asparagus and serve.

- The first step is to pat the fish dry with a paper towel on both sides. Next, rub the Shaoxing wine all over the fish on both sides. Mix together the salt and white pepper and rub it all over both sides of the flounder.
- Next, lightly dredge both sides of the fish with cornstarch. I sifted the cornstarch over both sides of the fish to get a uniform, light coating. If you don’t have a sifter or fine-meshed strainer to do this, you may need to use a lot more than 3 tablespoons of cornstarch to dredge the fish. You can also try patting it all over the fish with your hands and then shaking off the excess.
- Heat a carbon steel wok or very large frying pan over high heat until it just starts to smoke. Next, pour ⅔ cup canola oil around the perimeter of the wok to ensure it is fully coated and turn the heat down to medium high. Carefully place your fish in the wok.
- A fish of this size will need 5 to 6 minutes on each side. You should be getting a good sizzle in the wok, and the oil should be bubbling as you cook the fish. Tilt the wok or pan so the oil reaches all parts of the fish, and soon the flounder will begin to slide around the wok with ease. At this point, you will have to use your wok spatula to hold the fish gently while you continue to tilt the wok to cook the fish evenly. Make sure that the side fins, tail, and fish head are fried evenly as well. This process takes some coordination, but it sounds harder than it is!
