- Make Sauce: In the meantime melt the butter in a large saucepan over medium, add chopped onion and saute until the onion is translucent. Add the garlic and saute for another 30 seconds, making sure the garlic doesn't burn. Add the tomato sauce including the rest of the sauce ingredients and stir. Add the meatballs to the saucepan and make sure to toss them around a bit they are fully covered in sauce. Bring to a boil, reduce heat to low and simmer for 30 minutes stirring occasionally.
- Serve: Serve with mashed potatoes, spaghetti or your favorite side dish.

Yield 42 mini meatballs
Number Of Ingredients 23
Steps:
- Add the onion, garlic, egg, bread crumbs, ketchup, parsley, Parmesan, Pecorino, salt and pepper to a large bowl and blend. Mix in the turkey. Shape the turkey mixture into 1 1/4-inch-diameter meatballs. Place on a large plate or baking sheet.
- Heat the oil in a heavy large frying pan over medium-high heat. Add the meatballs and saute until browned on all sides, about 5 minutes. Turn off heat.
- Transfer the meatballs to a plate. Pour off any excess oil. Add the marinara sauce, about 3 cups. Return all the meatballs to the pan. Turn the heat to medium-low and simmer until the sauce thickens slightly and the flavors blend, 15 to 20 minutes. Season the sauce, to taste, with salt and pepper. Transfer the meatball mixture to a serving bowl. Serve with toothpicks.
- In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
- Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
- If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

LINGUINE WITH MARINARA SAUCE AND MEATBALLS
When we're in the mood for good home made spaghetti (we prefer linguine) and meatballs, I make a simple sauce and cook the meatballs in it for a long time. Just before serving we add fresh herbs and top it with Parmesan.

MARINARA TURKEY MEATBALLS
I found this recipe in Taste of Home's Light and Tasty magazine. It was pretty easy to do and very tasty. You might want to add salt to the meatballs. I prefer more salt rather than less, but it's not necessary.

TURKEY MEATBALLS IN MARINARA SAUCE
A weeknight dinner winner, these turkey meatballs are tender and full of flavor - and cleanup is a snap!

Steps:
- In a medium bowl, whisk together the egg, basil, salt, pepper, oregano, garlic, and water. Add the onion, turkey, bread crumbs, and cheese, and mix with your hands until the mixture is uniform.
- Lightly wet your hands with water and form the mixture into balls just slightly larger than golf balls (keep wetting your hands as you go to prevent the meatball mixture from sticking to your hands).
- In a large nonstick skillet, heat the oil over medium heat until shimmering. Add the meatballs in a single layer and brown on all sides, 7 to 8 minutes total. Pour the marinara sauce over the meatballs and bring to a boil. Reduce the heat to low, cover tightly with a lid, and simmer until the meatballs are cooked through, about 15 minutes. Sprinkle with more basil and cheese, if desired, and serve.
- Note: For best results, I recommend using 93% lean ground turkey, which is a combination of light and dark meat, rather than 99% lean ground turkey breast, which is all white meat.
- Freezer-Friendly Instructions: The meatballs can be frozen in their sauce for up to 3 months. When ready to serve, defrost overnight in the refrigerator and reheat on the stovetop over medium heat until the meatballs are hot in the center.

TURKEY MEATBALLS IN TOMATO SAUCE
Tender meatballs filled with onions and Parmesan, bathed in plenty of tomato sauce, are classics in every way except for one: They call for turkey instead of the usual beef (or beef-veal-pork combination). Serve them over spaghetti or polenta, or stuff them into a hero roll for a sandwich. Try to use ground dark meat turkey here if you can, it has a deeper, richer flavor than ground white meat.

Steps:
- In a large bowl, combine cheese, bread crumbs, onion, chives, garlic, salt, pepper, oregano and red pepper flakes, if using, and mix well. Add turkey and egg and blend with your hands until well mixed. If you've got time, cover mixture and chill for an hour or up to 24 hours. These are easiest to form into balls while very cold. Form into 28 meatballs, each about 1 1/4-inches in diameter.
- Heat 2 tablespoons of the oil in a large sauté pan. When hot, add enough of the meatballs to fit in one layer without crowding, and brown on all sides, 5 to 8 minutes. Transfer to a plate, add another tablespoon of oil to pan and brown another layer of meatballs, transferring them to the plate as they brown. Repeat until all meatballs are browned, adding more oil to the pan as needed.
- When meatballs are all browned, add marinara sauce to pan and bring to a simmer, scraping up the browned bits on the pan bottom. Return meatballs and their juices to pan, shake pan to cover the meatballs with sauce, and lower heat. Partly cover pan and simmer until the meatballs are cooked through, 15 to 20 minutes.
- Serve hot, drizzled with more olive oil and sprinkled with more cheese, if you like.

- Heat butter in a small skillet over medium heat. Add onions and cook for 5 minutes. Add garlic and cook for 1 more minute. Set aside and let cool. (This is optional but creates a more subtle flavor and texture.)
- Crack the egg in a large bowl and whisk. Add 1/3 cup half and half, 1 tsp Worcestershire sauce, ½ tsp oregano, ¾ tsp salt, ½ tsp pepper, and ½ tsp red pepper flakes. Stir to combine.
- Add1/3 cup Italian breadcrumbs, 1/3 cup grated Parmesan, 2 TBS parsley, and cooled onions/garlic. Stir to combine. The consistency will resemble a wet paste, this is called a ‘panade’ and it makes the meatballs flavorful and juicy.

- Make the sauce first. In a large deep sided skillet set over medium to high heat, add the olive oil, onions and garlic. Stir well and leave to cook, stirring occasionally for about 10 minutes. Add the tomatoes, stir well and reduce heat to medium low. Leave to cook for about 30 to 40 minutes, or until most of the liquid has evaporated. Stir occasionally while cooking. Add oregano, basil, salt, pepper and sugar. Stir well and transfer to a blender to blend the sauce. Set aside.
- In a large bowl, combine the ground turkey, diced onion, bread crumbs, egg, oregano, garlic powder, onion powder, Worcestershire sauce, salt, pepper and chopped parsley. Mix well with your hands. Form into small balls and repeat for all the mixture.
- Over a high heat, heat enough olive oil in a large skillet to go about 1 inch up the sides of the pan. Add one meatball to test if the oil is hot enough. It should sizzle. Add as many meatballs to the pan as you can at one time. Just brown them for a few minutes on each side. You don't want to cook them all the way through. Remove from oil and drain on paper towels. Repeat for all the meatballs.
- In a large clean skillet set over medium to low heat, add the marinara sauce and meatballs. Stir, cover and leave to simmer for about 15 minutes.
