RISOTTO WITH SAUSAGE AND PARSLEY



Risotto With Sausage and Parsley image

This is a very simple if slightly stove-intensive dinner, a two-pot meal that comes together serially to achieve a hearty whole. I use sweet Italian sausage most of the time, but the hot varieties work as well, and always the richest chicken stock available - sometimes adding bouillon to my homemade stock for the extra oomph it provides. The key is stirring, stirring, stirring the rice as you add the stock, taking care to incorporate each ladleful entirely into the rice before adding more. Taste often at the end, and adjust the seasoning as you like, but do not stint on either the lemon juice or the parsley, as their brightness acts as a terrific foil to the rich, unctuous quality of the rice.

1 1/2 pounds sweet or hot Italian sausage
2 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
Freshly ground black pepper to taste
5 to 6 cups chicken stock, ideally homemade
1 to 2 tablespoons unsalted butter
1 large onion, peeled and diced
1 1/2 cups Arborio rice
1/2 cup dry white wine
1/2 cup packed and roughly grated Parmesan, plus more for serving
1/2 of 1 lemon
1/2 cup finely chopped Italian parsley leaves

Steps:

  • With the tip of a small, sharp knife, slit open the sausage casings. Crumble the meat into a wide, heavy skillet or Dutch oven, and set over medium heat. If the meat is not rendering enough fat to coat the bottom of the pan as it begins to cook, add olive oil, 1 tablespoon at a time, until the meat is frying gently, not steaming. Sprinkle the salt and pepper over the sausage, and cook, breaking up any large chunks of sausage and stirring occasionally, until the meat is opaque and crisp at the edges, approximately 10 minutes. Remove sausage from pan, and reserve 1 tablespoon of the rendered fat.
  • Pour the stock into a medium saucepan or pot, and bring to a low simmer.
  • While the stock heats, return the heavy skillet or Dutch oven to medium-low heat, and add to it the 1 tablespoon reserved sausage fat and 1 tablespoon butter, or 2 tablespoons butter if you don't want to cook with the sausage fat. When the butter foams, add the diced onion, and cook, stirring with a wooden spoon, until it is soft and translucent, approximately 5 to 7 minutes. Add the rice, and stir until well coated, adding another tablespoon of fat if necessary. Stir until translucent, an additional 5 to 7 minutes.
  • Raise the heat under the rice to medium, and add the wine to the skillet. Stir until wine is absorbed, then reduce the heat slightly. Begin adding ladlefuls of hot broth to the rice, stirring constantly and allowing each addition to be absorbed before adding the next. Cook rice until it is tender but slightly chewy, approximately 20 to 30 minutes. You may not need all the broth. You may need more than you have; if additional liquid is needed, you can use boiling water.
  • Remove the skillet from heat, and add the cheese, stirring to mix it into the rice. Add the sausage to the rice, and stir again. Taste, and adjust seasonings with additional salt and pepper if necessary. Squeeze the lemon over the rice, and then mound the risotto on a large, warmed bowl. Scatter the parsley over the top, and serve immediately, with more grated Parmesan on the side.

2 teaspoons salt
1 1/2 teaspoons coarsely cracked black peppercorns ((toast in a dry skillet for a minute or two until fragrant for maximum flavor))
1 teaspoon coarsely cracked fennel seeds ((toast in a dry skillet for a minute or two until fragrant for maximum flavor))
1 teaspoon onion powder
1/2 teaspoon red pepper flakes ((omit if you want a mild sausage))
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary
1/4 teaspoon dried oregano
1/4 teaspoon dried ground sage

Steps:

  • Place the ground meat in a bowl and add all remaining ingredients. Use your hands or a stand mixer paddle attachment to thoroughly combine the ingredients. Wrap and chill for at least 6 hours before using, preferably overnight for best flavor.The sausage will keep in the fridge for 3 days or can be frozen, well wrapped, for up to 3 months. 1 stick of celery
1 bunch of fresh basil, (30g)
olive oil
4 quality Italian sausages, (250g in total)
1 heaped teaspoon fennel seeds
1 teaspoon dried oregano, ideally the flowering kind
1 pinch of dried chilli flakes
1 sprig of fresh rosemary
4 cloves of garlic
2 tablespoons balsamic vinegar
2 x 400 g tins of quality plum tomatoes
300 g dried penne
40 g Parmesan cheese, plus extra to serve
extra virgin olive oil

Steps:

  • Peel the onion, carrot and celery, then finely chop with the basil stalks (reserving the leaves).
  • Place a large pan on a medium-high heat with 2 tablespoons of olive oil, then squeeze the sausagemeat out of the skins into the pan, breaking it up with a wooden spoon as you go. Fry for a few minutes, then add the fennel seeds, oregano and chilli flakes, and strip in the rosemary.
  • Stir in the chopped veg and basil stalks, then peel and finely grate in the garlic. Cook for 10 minutes, or until softened, stirring occasionally.
  • Pour the balsamic into the pan and leave to bubble away and reduce slightly. Scrunch in the tomatoes through your clean hands, then add 1 tin's worth of water and the larger basil leaves. Bring to the boil, then simmer over a low heat for 20 minutes, or until thickened.
  • With around 10 minutes to go, cook the pasta in a pan of boiling salted water according to the packet instructions, then drain, reserving a mugful of cooking water.
  • Toss the drained pasta into the sausage pan, loosening with a little reserved cooking water, if needed. Taste and season to perfection with sea salt and black pepper, then remove from the heat.
  • Finely grate in the Parmesan, scatter over the remaining basil leaves, and finish with a drizzle of extra virgin olive oil. Delicious served with pinches of lemony rocket and an extra grating of Parmesan.

These delicious grilled sausage sandwiches are my attempt to duplicate the ones I ate when I was growing up and attended Italian street festivals in the North End of Boston. They come together really quickly, and make a great summer lunch. Choose hot or mild sausages as you prefer.

4 (4 ounce) links hot Italian sausage
1 red bell pepper, halved and seeded
1 small onion, peeled and cut in half crosswise
2 teaspoons olive oil
salt and pepper to taste
1 tablespoon olive oil
4 (6 inch) sandwich rolls, split and toasted

Steps:

  • Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.
  • Pierce the sausages in a few places with a fork, and set aside. Slice off the bottoms of the onion halves so they will sit flat on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil.
  • Place the sausages, onions, and peppers on the preheated grill. Cook and turn the sausages until well browned and juices run clear. Cook vegetables until tender and peppers are slightly charred. Remove vegetables and sausages from the grill.
  • Place the peppers in a paper bag, close, and cool slightly. Remove and discard the charred skin from the peppers; slice peppers into strips. Slice the onion halves. Place salt and pepper to taste, and 1 tablespoon olive oil in a bowl. Add the peppers and onions, and toss until evenly coated. To serve, place sausages in sandwich rolls, and top with the pepper and onion mixture.

2 tablespoon extra-virgin olive oil
300 g mild or hot Italian sausage (Salsiccia), (casings removed and chopped)
2 small yellow onions, (chopped)
2 garlic cloves, (minced)
100 ml dry white wine
700 g glass pureed tomatoes ((Passata))
1/4 teaspoon smoked paprika ((alternatively use sweet paprika, or skip))
1 sprig fresh rosemary
Sea salt and freshly ground pepper, (to taste)
2 tablespoons crème fraîche
500 g dried rigatoni or other short pasta ((such as Fusilli or Orecchiette))
Finely grated parmesan cheese, (to serve)

Steps:

  • In a large deep skillet (or wok) heat the olive oil over medium heat. Add the onion and garlic and sauté until soft and translucent (8-10 minutes). Add the sausage, increase the heat slightly, and cook for 5 minutes, using a wooden spoon to break up the meat.
  • Add the wine, and cook for 3-4 minutes, until reduced and almost completely evaporated. Then add the tomato passata, paprika and rosemary; season with salt and pepper.
  • Bring to a simmer, then reduce the heat to medium-low and continue cooking for 30 minutes, stirring occasionally. Stir in crème fraîche.
  • Meanwhile, in a large pot of boiling, salted water, cook the rigatoni, according to package instructions, until al dente. Drain the pasta and toss with the sauce. Serve with grated parmesan.

1 large onion (thinly sliced)
1.5 tbsp tomato paste
1.5 tbsp fennel seed
2 tsp smoked paprika
1 tsp liquid smoke (or to taste)

15 oz can canellini beans (drain and rinsed)
1 pinch red pepper flakes (optional to taste)

Steps:

  • Preheat a large heavy bottom skillet over medium heat and add a good lug of olive oil.
  • Add the sliced onions and a pinch of sea salt. As the onion starts to soften and release its water content turn up the heat so the liquid evaporates and the onion starts to get some color.
  • Pan fry the onions until nicely golden with crispy edges. Stir in the chili flakes if using. Add 1 tablespoon of the fennel seeds and toast with the onion until fragrant.
  • Stir in the smoked paprika and tomato paste and cook for a few minutes until the sugars begin to caramelize.
  • Add the shredded cabbage, season with a pinch of salt and black pepper then mix everything well, scraping any brown bits from the bottom.
  • Stir in the liquid smoke if using and cook down the cabbage until wilted and softened and the sugars start to caramelize again on the bottom. You want little golden bits only so be careful not to burn it.
  • Push the mixture to the side and add a light drop of olive oil to toast the remaining fennel seeds and infuse a new layer of flavor into your dish.
  • Stir in the cannellini beans and toss to coat well. Cook only until warmed through. Adjust seasonings and serve with fresh parsley or dill, fresh bread or bruschetta.

1 1/2 teaspoons fennel seeds, crushed
1 teaspoon red pepper flakes

1/2 cup pure gluten, powder (vital wheat gluten)

Steps:

  • Mix the broth with the wine, tomato paste and sesame oil in a small bowl.

  • The gluten powder should not be added until the mixture is cool (otherwise it creates'strings').
