8 ounces (5 to 6 medium) tomatillos, husked and rinsed
Fresh hot green chiles, to taste (roughly 2 serranos or 1 jalapeno), stemmed
5 or 6 sprigs fresh cilantro (thick stems removed), roughly chopped
Scant 1/4 cup finely chopped onion
Salt

Steps:

  • Whether you choose the verdant, slushy, herby freshness of the all-raw tomatillo salsa or the oil-colored, voluptuous, sweet-sour richness of the roasted version, tomatillos are about brightening tang. The buzz of the fresh hot green chile adds thrill, all of which adds up to a condiment most of us simply don't want to live without.
  • For the All-Raw version: Roughly chop the tomatillos and the chiles. In a blender or food processor, combine the tomatillos, chiles, cilantro and 1/4 cup water. Process to a coarse puree, then scrape into a serving dish. Rinse the onion under cold water, then shake to remove excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.
  • For the Roasted version:
  • Preheat a broiler.
  • Roast the tomatillos and chiles on a baking sheet 4 inches below a very hot broiler until darkly roasted, even blackened in spots, about 5 minutes. Flip them over and roast the other side, 4 to 5 minutes more will give you splotchy-black and blistered tomatillos and chiles. In a blender or food processor, combine the tomatillos and chiles, including all the delicious juice that has run onto the baking sheet. Add the cilantro and 1/4 cup water, blend to a coarse puree, and scrape into a serving dish. Rinse the onion under cold water, then shake to remove the excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.

2 small packs flat-leaf parsley
30g wild garlic (or 2 garlic cloves)
3 tsp Dijon mustard
40g small capers , drained, rinsed and roughly chopped
200ml extra virgin olive oil
2 tbsp sherry vinegar

Steps:

  • Chop the herbs and garlic, mixing with 1 tsp sea salt, until very fine.
  • Add the mustard and capers, and combine. Transfer the mixture to a bowl and stir in the olive oil.
  • Add the vinegar, little by little, stirring and tasting as you go - trust your palate!

10 tomatillos, husked and rinsed
8 serrano chile peppers, sliced
1 onion, sliced
1 tablespoon chopped garlic
2 tablespoons salt, or to taste

Steps:

  • Place the tomatillos, serrano peppers, onion, and garlic in a saucepan, and add water to just cover. Sprinkle the salt over the top, bring to a boil, reduce the heat to medium-low, and cook until the tomatillos are soft and have turned slightly brownish in color, 20 to 30 minutes. Add more water if needed to keep the mixture from burning as it cooks.
  • Pour the cooked vegetables into a blender, and blend until smooth.

10 garlic cloves
6 -10 green chilies (Heat of chili to your liking I used jalapeno and habanero)
1 vidalia onion, 12 ounces chopped
2 limes, zested then discard all the white pith saving the meat
6 lbs green tomatoes, all blemishes and stems remove (12 cups pureed)
1 tablespoon dried oregano
2 teaspoons ground cumin
1 teaspoon dried chipotle powder or 1 teaspoon smoked paprika
1 cup chopped fresh cilantro
1 teaspoon salt
1 teaspoon fresh cracked pepper

Steps:

  • Prepare boiling water canner. Heat jars and lids in simmering water or dishwasher until ready for use. Set bands aside in hot water.
  • Pulse garlic, chilies, onions, lime zest and lime meat in a food processor. Process till chunky smooth. Place in a large saucepan. Pulse the green tomatoes in food processor till chunky smooth add to the onion mixture.
  • Bring to a boil. Stir in oregano, cumin, chipotle, cilantro, salt and pepper. Reduce heat and simmer 5 minutes.
  • Ladle salsa into hot jars leaving 1/2 inch head-space. Remove air bubbles. Wipe rim. Center hot lid on jar. Apply band and adjust until fit is fingertip tight.
  • Process salsa in a boiling water canner for 20 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed.

From Diana Kennedy's "From My Mexican Kitchen: Techniques and Ingredients." This is the best green salsa I've ever made. It can be used as a straight salsa or as a sauce to cook meat in.

1 lb tomatillo, husks removed and rinsed
3 serrano chilies, finely chopped
1/2 cup cilantro, roughly chopped and loosely packed
2 tablespoons cilantro, roughly chopped for garnish
1 garlic clove, roughly chopped
2 tablespoons white onions, roughly chopped
sea salt

Steps:

  • Put the tomatillos whole in a small saucepan, barely cover with water, and bring to a simmer. lower the heat and continue cooking until soft but not falling apart, about 5 minutes depending on size. Drain, reserving the cooking water.
  • Using a molcajete: Mash and grind together the chiles, 1/2 cup cilantro, the garlic, onion, and salt. Add the tomatillos a few at a time, crushing and grinding well after each addition and adding a little of the cooking liquid until you have a textured sauce of medium consistency. You will probably need about 1/2 cup or even more of the cooking liquid.
  • Using a blender: Put 1/3 cup of the cooking water into the blender jar. Add the chiles, 1/2 cup cilantro, the garlic, and the onion and grind to a paste. Add the tomatillos a little at a time, blending with about 1/3 cup more of the cooking liquid until you have a textured sauce of medium consistency. Add salt to taste.
  • To serve: Sprinkle the top with the extra cilantro.

I love Mexican food. So here is my rendition of a classic. Salsa Verde con Puerco: a lively mixture of pork tenderloin, tomatillo, chilies and peppers served in a tortilla wrap. Presented along with refried beans and yellow rice it's about as Mexican as it gets. I have to caution, don't touch your face when prepping the chilies and peppers. WASH YOUR HANDS! Oh yeah, don't forget the tequilla!

2 lbs pork tenderloin, cut into 1/2-inch cubes
10 tomatillos, husked and washed
1 small tomatoes
4 poblano peppers
3 anaheim chilies
2 (6 ounce) cans green chilies
2 serrano peppers, 3 if you want hot 4 if you want extra hot
2 jalapeno peppers
1 medium yellow sweet onion, peeled & chopped
1/2 bunch cilantro
6 garlic cloves, more if you wish
2 teaspoons kosher salt
1 tablespoon ground black pepper
1 1/2 teaspoons ground cumin
1 lime, juice of
1 tablespoon olive oil

Steps:

  • Take the poblano and anaheim peppers and cut the tops off. Then cut in half length wise and de-seed. Brush peppers and garlic cloves with olive oil. Place under a broiler and grill for 10 minutes flipping once in the proccess. Put the peppers and garlic in a paper bag to cool. Once cool, place the garlic to the side then peel the skins off the peppers and chop them up along with the green chilies. Put aside.
  • Fix a pan of boiling water and place the tomatillo and tomato in it for 10 minutes. Pour off water and mash well. Remove the skins from the mash and throw away. Put mash aside.
  • Take the olive oil to a large saute' pan add the garlic and onion and saute' till onion is clear.
  • Add pork salt and ground pepper to the pan. Kick up the heat a bit and brown the pork. Cut the tops off the jalapeno and serrano peppers. Dice and add to pan seeds and all. Continue to saute for a couple of minutes.
  • Add the mash, chopped peppers & chilies, lime juice and cumin. Stir till mixed. Cover and cook 30 minutes over medium/low heat. Remove cover and cook 30 more minutes stirring occasionally till most of the water content has reduced.

This sauce from the Lombardy region of Italy is a fantastic companion to meat. A dollop on top is all you need! I also mix this with plain pasta as a variation on basil pesto. There are a number of different ways to do this. Optional basil and mint or dijon mustard or parmesan cheese can be added, but here's the basic recipe.
