Number Of Ingredients 9

2 tablespoons finely chopped scallion (white and light green parts only)
Juice of 2 limes
1 anchovy fillet, finely chopped
1 teaspoon capers, finely chopped
1 1/2 cups cilantro leaves, finely chopped
1/4 cup tarragon leaves, finely chopped
1 medium jalapeño, seeded and finely chopped
1/4 cup plus 2 tablespoons extra-virgin olive oil
1/4 teaspoon kosher Salt

Steps:

  • In a medium bowl, mix the scallion with the lime juice and let stand for 10 minutes. Add the anchovy and capers and mash slightly with a fork. Stir in the cilantro, tarragon, jalapeño and olive oil. Season with salt and serve.
  • The salsa verde can be refrigerated overnight.

  • In a food processor, combine herbs, garlic, and vinegar; if desired, add capers and anchovy fillets. Pulse until coarsely chopped, 20 seconds. Transfer to a small bowl and stir in olive oil. Season with salt and pepper.

8 small tomatillos
1/2 cup chopped cilantro
2 cloves garlic, chopped
1/2 large white onion
1 lime, juice of
4 serrano peppers (or 2 jalepenos for less spicey version)

  • Chop all ingredients by hand or in food processor.
  • Food processor gives less chunky version, which is easiest to cook with.
  • Squeeze in juice of lime and mix thoroughly.
  • Use for cooking, to top your favorite dishes or for dip.

1 lb tomatillo, husks removed and rinsed
3 serrano chilies, finely chopped
1/2 cup cilantro, roughly chopped and loosely packed
2 tablespoons cilantro, roughly chopped for garnish
1 garlic clove, roughly chopped
2 tablespoons white onions, roughly chopped
sea salt

Steps:

  • Put the tomatillos whole in a small saucepan, barely cover with water, and bring to a simmer. lower the heat and continue cooking until soft but not falling apart, about 5 minutes depending on size. Drain, reserving the cooking water.
  • Using a molcajete: Mash and grind together the chiles, 1/2 cup cilantro, the garlic, onion, and salt. Add the tomatillos a few at a time, crushing and grinding well after each addition and adding a little of the cooking liquid until you have a textured sauce of medium consistency. You will probably need about 1/2 cup or even more of the cooking liquid.
  • Using a blender: Put 1/3 cup of the cooking water into the blender jar. Add the chiles, 1/2 cup cilantro, the garlic, and the onion and grind to a paste. Add the tomatillos a little at a time, blending with about 1/3 cup more of the cooking liquid until you have a textured sauce of medium consistency. Add salt to taste.
  • To serve: Sprinkle the top with the extra cilantro.

Steps:

  • Roast tomatillos, garlic and chile directly over flames on a grill (or if you do not have one, I use a cast iron fry pan).
  • Turn often so as not to burn.
  • When they are all soft, transfer to mortar and pestal (molcajete); mash all ingredients--the consistency should be chunky.
  • Add salt or soup mix to taste.
  • Olive oil can be added if you like, but is not necessary. Cilantro can be added as well.
  • A variation of this recipe is to use tomatoes and grill them till charred and proceed with the rest of the ingredients.

5 tomatillos
8 -10 serrano chilies (jalapeno can use as well for a milder taste)
salt
cilantro (optional)

Steps:

  • Remove husk from tomatillos and rinse well.
  • Remove top stem (may also remove seeds for a milder taste or leave them whole like i do) and rinse.
  • Place ingredients in pot and cover with water.
  • Bring to a boil for about 1-2 minutes.
  • Remove from boil and place tomatillos and chiles in a blender (DONT add WATER theres enough water to absorbs to tomatillos during the cooking process).
  • Blend until smooth, for a couple min or until desired texture occurs.
  • Pour into a container add a little salt and and chopped cilantro if desired!
  • May enjoy right away or may be placed in fridge for a couple hours to cool down!
  • Eat with tacos, enchilads, eggs, tortillas, chips, etc -- .

Place the tomatillos, scored side up, on a baking tray with the Anaheim chili, onion, cayenne pepper, and serrano pepper. Drizzle them with avocado oil and toss around so they don’t stick to the pan and place them into the oven. Broil for 7-10 minutes or until the peppers and tomatillos are looking browned. Remove them from the oven and if the peppers are brown and blistered take them off the tray and set aside.
