AUDREY'S SALSA BURGERS

I love beef and these hamburgers are a nice change from the traditional burger. I serve these with a side salad topped with grated Mexican cheese and dressing and Spanish rice.

1 1/2 lbs lean ground beef
1/2 cup salsa
1/4 cup plain breadcrumbs
3/4 cup shredded hot monterey jack pepper cheese
6 toasted hamburger buns
6 slices tomatoes
6 slices avocados
6 tablespoons salsa
6 tablespoons sour cream

Steps:

  • In medium mixing bowl, combine ground beef, salsa and bread crumbs.
  • Mix well and shape into 12 hamburger patties.
  • No bigger than 4 inches in diameter and 1/4 inch thick.
  • On 6 patties, sprinkle cheese on top of each patty.
  • Place the remaining patties on top of the cheese covered patties to form a hamburger.
  • Seal ends together by pressing the ends shut.
  • Place on grill.
  • Grill each side for 11 to 15 minutes or until your liking.
  • Place cooked hamburger on bun topped with tomato, avocado, salsa and 1 Tablespoon sour cream.
  • When doubling recipe, I found I needed to add more bread crumbs so the meat was the right consistency for a hamburger.

PAM® Grilling Spray
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
1 pound ground sirloin beef (90% lean)
1/4 teaspoon salt
1/8 teaspoon ground black pepper
4 slices Pepper Jack cheese
4 hamburger buns
1 avocado, peeled, pitted and sliced

Steps:

  • 1. Spray grate of outdoor grill with grilling spray. Preheat grill to medium heat according to manufacturer's directions. Meanwhile, set aside 1/3 cup drained tomatoes. Mix together beef, remaining drained tomatoes, salt and pepper in medium bowl. Shape into 4 patties, about 1/2-inch thick.
  • 2. Grill patties 10 minutes or until cooked through (160 degrees F), turning once. Top each patty with 1 slice cheese; melt slightly.
  • 3. Place patties on bottom halves of buns. Top each patty with 3 or 4 avocado slices and a generous tablespoon of reserved tomatoes. Close with tops of buns. Serve immediately.

50g wholemeal breadcrumb
50g carrot , grated

small handful parsley , leaves chopped

Steps:

  • Heat grill to medium. In a large bowl, mix together the first six ingredients, then season well. Shape the mixture into 4 burgers and place on a baking tray.
  • Grill the burgers for 3-4 mins on each side until cooked through, then keep them warm. Split each burger bun in half, then lightly toast, cut side up, place under the grill, cut side up, and lightly toast for 1 min. Fill the toasted buns with some salad and top with a burger and a good dollop of tomato salsa.

Juice of 2 limes
1 tablespoon sugar
Kosher salt
1/2 cup chopped fresh cilantro
1/2 small red onion, diced
1 red jalapeno pepper, seeded and finely chopped
4 ears of corn, husked and halved
2 teaspoons vegetable oil, plus more for the grill
Freshly ground pepper
1 1/2 pounds lean ground beef
4 sesame hamburger buns
1/2 cup prepared guacamole

Steps:

  • Preheat a grill to medium high. Make the salsa: Combine the tomatoes, lime juice, sugar and 1 teaspoon salt in a small microwave-safe bowl. Microwave 2 minutes, then stir in the cilantro, red onion and jalapeno; set aside.
  • Toss the corn with the vegetable oil in a large bowl; season with salt and pepper. Form the beef into four 1-inch-thick patties; season with salt and pepper. Lightly brush the grill grates with vegetable oil. Grill the corn, turning occasionally, until marked and tender, about8 minutes. Meanwhile, grill the burgers about 4 minutes per side for medium rare. Toast the buns on the grill.
  • Sandwich the burgers on the buns with the guacamole and salsa. Serve with the corn.

Two 10-ounce cans diced tomatoes and green chiles, such as Rotel
One 28-ounce can whole tomatoes with juice
1/2 cup fresh cilantro leaves (or more to taste!)
1/4 cup chopped onion
1 clove garlic, minced
1 whole jalapeno, quartered and sliced thin, with seeds and membrane
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon sugar
1/2 whole lime, juiced

Steps:

  • Combine the diced tomatoes, whole tomatoes, cilantro, onions, garlic, jalapeno, cumin, salt, sugar and lime juice in a blender or food processor. (This is a very large batch. I recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.)
  • Pulse until you get the salsa to the consistency you'd like. I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
  • Refrigerate the salsa for at least an hour before serving.

SALSA FOR THURMAN'S SALSA BURGER

  • Mix all ingredients in a larger container. Chill. The Thurman Cafe uses the Salsa on a 12-ounce burger that has been fried and topped with 3 ounces of mozzarella cheese and served open-faced on Texas Toast on a bed of lettuce. Add a side of sour cream, and you have the Thurman Salsa Burger.

1 lb ground beef, 95% lean
1/3 cup fresh pico de gallo or 1/3 cup salsa, drained well
1/4 teaspoon sea salt
1/4 teaspoon pepper
1 small avocado, peeled, pitted and roughly chopped
1/4 red bell pepper, finely chopped (about 1/4 cup)
3 tablespoons cilantro, chopped
2 teaspoons fresh lime juice
1/4 teaspoon garlic powder
1/2 cup Greek yogurt, nonfat plain (optional)
4 hamburger buns, multigrain
4 -8 lettuce leaves (optional)

Steps:

  • Place oven rack 6 to 7 inches from broiler and preheat to high. Line a baking sheet or broiler pan with foil. In a large bowl, combine beef, pico de gallo, 1/4 tsp salt and 1/4 tsp pepper. Shape mixture into 4 equal patties, each 1/2-inch thick, and place on prepared baking sheet. Broil for 6 to 7 minutes or until burgers are browned. Flip and repeat on second side until burgers are firm to the touch and no longer pink in the center, 5 to 6 more minutes (internal temperature should read 160°F on a instant-read thermometer).
  • Place avocado in a small bowl and mash to a chunky consistency with a fork or potato masher. Add red pepper, cilantro, lime juice, garlic powder, pinch of salt and pepper, to taste; stir to combine.
  • To serve, spread 2 tbs yogurt on bottom half of each bun and top with 1 to 2 lettuce leaves, if desired. Then add patty and 3 tlbs avocado mixture to each before finishing with top halves of buns. Garnish burgers with additional cilantro, if desired.

1 large tomatoes, seeded and finely chopped
1/2 cup finely chopped green sweet pepper
1/4 cup finely chopped red onion
2 finely chopped seeded jalapeno peppers
1 garlic clove, minced
1 tablespoon snipped cilantro
1/4 teaspoon salt
1 1/2 lbs lean ground beef
2 cups shredded lettuce
1/3 cup finely shredded cheddar cheese
1/4 cup sour cream, and or 1/4 cup guacamole

Steps:

  • Directions.
  • 1. For salsa, in a bowl combine tomato, green sweet pepper, onion, jalapeno peppers, garlic, cilantro, and salt. Set aside 2 tablespoons of the salsa. Cover and chill remaining salsa until serving time.
  • 2. In another bowl combine ground beef and the 2 tablespoons of salsa; mix well. Shape mixture into six 1/2-inch-thick oval patties. Grill patties on an uncovered grill directly over medium coals for 13 to 15 minutes or until an instant-read thermometer inserted in side of patty registers 160 degrees F., turning patties once halfway through grilling time. Arrange shredded lettuce on individual plates. Top with burgers, remaining salsa, and cheddar cheese. Serve with sour cream and/or guacamole.
  • To grill by indirect heat: Arrange preheated coals around a drip pan in a covered grill. Test for medium heat above pan. Place patties on grill over drip pan. Cover and grill for 18 to 20 minutes or until no pink remains, turning patties once halfway through grilling time.
  • Make-ahead tip: Prepare salsa; cover and chill up to 24 hours. Use 2 tablespoons salsa for burgers. Serve burgers with remaining salsa.

The result turned out to be a fantastic new way of making hamburgers and have been our go-to recipe ever since! The salsa makes the beef incredibly moist, while adding a kick of flavor.

These veggie burgers are a doddle to make and the toppings make them wonderfully moist - cook from frozen to save time

2 x 400g/14oz cans kidney beans, rinsed and drained
100g breadcrumb
2 tsp mild chilli powder
small bunch coriander, stalks and leaves chopped
1 egg
200g tub fresh salsa
150ml low-fat natural yogurt
juice ½ lime
6 wholemeal burger buns, sliced avocado, sliced red onion and salad leaves, to serve

Steps:

  • Heat grill to high. Tip the beans into a large bowl, then roughly crush with a potato masher. Add the breadcrumbs, chilli powder, coriander stalks and ½ the leaves, egg and 2 tbsp salsa, season to taste, then mix together well with a fork.
  • Divide the mixture into 6, then wet your hands and shape into burgers. The burgers can now be frozen. Place on a non-stick baking tray, then grill for 4-5 mins on each side until golden and crisp. To cook from frozen, bake at 200C/fan 180C/gas 6 for 20-30 mins until hot through.
  • While the burgers are cooking, mix the remaining coriander leaves with the yogurt, lime juice and a good grind of black pepper. Split the buns in half and spread the bases with some of the yogurt. Top each with leaves, avocado, onion, a burger, another dollop of the lime yogurt and some salsa, then serve.
