MARK'S OLD-FASHIONED SAUSAGE AND PEPPERS
Steps:
- In a large skillet with a lid, heat the olive oil over medium-high heat. Add the garlic, onion, and peppers, and cook, stirring, until the onion is translucent, about 5 minutes. Add the sausages, and cook about 4 minutes more, until sausages begin to brown. Add the tomatoes, wine, oregano, and a large pinch of salt. Cover, bring to a simmer, and simmer gently about 25 minutes, until the peppers are very soft. Season with salt and pepper to taste. Serve immediately. Steps:
- Divide oil between 2 large skillets with lids; heat over medium heat.
- Divide garlic, onion and peppers between skillets and cook, stirring as needed, until onion is translucent, about 5 minutes.
- Add sausages, 4 to a skillet, and cook about 4 minutes more until sausages begin to brown.
- Add tomatoes, wine, oregano and a pinch of salt to pans.
- Cover, bring to simmer for about 25 minutes, until peppers are soft.
- Season with salt and pepper.
- Serve with crusty bread.
SAUSAGE AND PEPPERS
Steps:
- Saute onions, peppers and chile in olive oil until onions are brown. Add salt and pepper to taste. Stir in garlic and basil. Add oregano. Hold aside.
- Prick sausage all over with a fork. Saute in skillet over medium heat until brown. Add enough wine to cover about 2/3 of the sausage. Add Sauteed vegetables, tomatoes and any liquid. Simmer gently, partially covered, for 20 minutes. Remove sausage and slice into 1-inch pieces. Can be served on pasta or with bread.

Pour off all but 1 tablespoon of oil. Add the onions and cook, stirring, until golden, about 5 minutes. Stir in the tomato paste and cook for 1 minute more. Add the peppers, garlic, and season with salt and pepper to taste. Cook until the peppers are wilted, about 5 minutes. Return the sausages to the pan, cover, and cook over medium heat, stirring frequently, until the sausages are cooked through, about 12 minutes more. Stir in the vinegar. Divide the sausage and peppers evenly amongst the crusty rolls and serve.

- Spray a cold 10 inch skillet with nonstick coating spray; set aside.
- In a medium bowl, combine the egg white, onion, dried or fresh apples, quick-cooking oats, parsley, salt, sage, nutmeg, pepper and ground red pepper.
- Add the ground turkey; mix well.
- Shape mixture into eight 2" wide patties.
- Preheat the prepared skillet over medium heat.
- Place patties in skillet.
- Cook over medium heat for 10 to 12 minutes or until meat is no longer pink and juices run clear, turning once.
- Drain off fat.
