Salmon Stuffed Peppers image

I used to make these stuffed pepper often for my large family. They're a nice change from the usual beef stuffed peppers.-Kathleen Bowman, Sun Valley, Nevada

6 medium green, sweet yellow or red peppers
1-1/4 pounds salmon fillets or salmon steaks
3/4 cup chicken broth
1 medium leek (white portion only), chopped or 1/2 cup chopped green onions
1 to 3 medium jalapeno peppers, minced
2 tablespoons minced fresh cilantro
1 teaspoon Worcestershire sauce
1/2 teaspoon dried tarragon
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups hot cooked rice
1/2 cup tartar sauce
1/2 cup sour cream
2 tablespoons shredded Parmesan cheese

Steps:

  • Cut tops off peppers and remove seeds. Cook peppers in boiling water for 3-5 minutes or until crisp-tender. Drain and rinse in cold water; set aside., Broil salmon 4-6 in. from the heat for 4-5 minutes on each side or until fish flakes easily with a fork. Discard bones and skin. Flake fish with a fork; set aside., In a large skillet, combine the broth, leek, jalapenos, cilantro, Worcestershire sauce, tarragon, oregano, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until the liquid has evaporated., Stir in the hot rice, tartar sauce and sour cream. Fold in salmon. Spoon into peppers. Place in an ungreased shallow baking dish. Sprinkle with Parmesan cheese. , Cover and bake at 350° for 25-30 minutes or until peppers are tender and filling is hot.

WHOLE BAKED SALMON STUFFED WITH LEMON AND HERB RICE



Whole baked salmon stuffed with lemon and herb rice image

This simple whole fish recipe is a show-stopper. Just match the fragrant salmon and rice with a simple salad to feed a crowd easily and healthily.

1 whole salmon (about 4kg)
2 tbsp peanut oil
salt, to season
lemon wedges, additional herbs and chilli, to serve
3 cups cooked Jasmine rice, warm
3 tbsp peanut oil
½ tsp grated ginger
½ cup shredded coriander
½ cup shredded Vietnamese mint
½ cup shredded basil
4 spring onions, finely chopped
2 red chillies, finely chopped
1 tsp salt
zest of 1 lemon
4 lebanese cucumbers, very thinly sliced
juice of ½ a lemon
½ tsp salt

Steps:

  • 1. Heat your oven to 160C (in a fan-forced oven). 2. For the stuffing, mix together all the ingredients. Wipe the fish down with kitchen paper and place it on a large piece of baking paper drizzled with oil. Season the fish with salt and drizzle with oil. Place the stuffing inside the fish (see video). Wrap the fish in the paper and bake for 55 minutes (I do say 40 minutes in the video, but you may need the extra 15 minutes to cook the fish all the way through). 3. While the fish is cooking make the dressed cucumber by tossing the sliced cucumber in the salt and lemon juice. Drain in a colander in the fridge. 4. Remove the skin from one side of the salmon and gently scrape away any dark bloodline. Season with salt again directly on to the flesh of the fish. Allow the fish to cool to nearly room temperature then cover the flesh with the dressed cucumber in a scale pattern. Serve with lemon wedges and some extra herbs and chilli. My boyfriend likes to shout out random ingredients in the house and then expects an awesome dinner to follow... this is a creation I came up one night before he had a loooong run in the morning. It's very filling and minus the sodium in the rice, it's very healthy too!

2 salmon fillets with skin on, 1/3lb pieces
1 box generic, garlic/chicken flavored rice
1 lemon
1 tsp coarse salt(tastes best but other salt is fine)
1 tsp fresh ground pepper
1 tsp garlic powder or minced garlic

Steps:

  • 1. prepare the rice first- following the directions on the box. Usually it says to toast the rice in a couple tbsp of butter and then add 2 cups of water and simmer for about 20 minutes.
  • 2. While the rice is simmering, rinse the salmon and slice it lengthwse to create a picket for the rice. Make the cut close to the skin
  • 3. Stuff an overabundance of rice into the salmon and put skin side down on an oiled cookie sheet.
  • 4. Add the seasonings to the salmon- salt, pepper, garlic and put either on the bottom shelf on your oven while on broil, or on the top shelf in a 500 degree oven. I cook it for about 12-15 minutes until the top starts to brown and the skin is sizzling.
  • 5. After you take the fish out of the oven, squeeze 1/2 of the lemon on each piece and serve. You really don't need a side for theis either since you have the rice inside.

1 1/2 lb salmon fillets, cut into 4 to 6 oz fillets with skin on
1/2 c onion, chopped
1/4 c white wine, semi sweet
1/2 stick butter, room temperature
2 Tbsp olive oil, extra virgin
2 Tbsp tarragon, dried (can substitute basil)
3 Tbsp lemon juice
1 tsp garlic, minced
4 pinch salt
1 palm full oregano
1/2 palm full basil
1 palm full parsley
1/2 palm full sage
1/2 stick of butter
1 bay leaf, crushed
2 Tbsp olive oil, extra virgin
2 pinch salt
32 oz chicken broth, low salt (can use vegetable)
1 pkg rice ( i like to use balsamic) measure per package instructions for 4 servings

Steps:

  • 1. Heat up skillet with olive oil in it. Add butter allow to melt. Add in onion, garlic and tarragon. Cook for 2 minutes allowing onion to become tender and garlic aroma to lift.
  • 2. Sprinkle a pinch of salt on each fillet meat side and place skin side down into skillet. Add lemon juice and white wine. Cook for 4 minutes and flip so that meat side is down. Cook for 4 more minutes. Turn again and cook checking every two minutes. Fish is done when meat is easily flaked with a fork. Remove from pan and set to rest meat side down, skin should easily peel off from fish with a fork. Reserve juices. Cover to keep warm.
  • 3. In sauce pan substitute broth for water required to cook rice. In broth add 1 tablespoon olive oil, oregano, parsley, basil, sage and bay leaf and pinch of salt. Allow to come to boil and add rice. Allow to cook per time stated on rice directions.
  • 4. In skillet heat up 1 T olive oil and melt butter. Add rice and stir til lightly coated with liquid and rice had been fluffed.
  • 5. Spoon rice onto plate and place one salmon fillet on top of rice and lightly spoon 1 tsp of reserved juices over salmon and rice. Serve!

  • Melt 1/2 cup butter in a large skillet over medium-high heat; cook and stir onion and 1/2 of the garlic, breaking onion into rings, until softened, 5 to 10 minutes. Add salmon to onion mixture and cook until salmon is about 1/4-cooked, about 2 minutes.
  • Pour wine and cream over salmon and cook, stirring lightly and flipping salmon halfway through, until liquid is reduced by 1/2 and salmon flakes easily with a fork, 5 to 10 minutes.
  • Melt 1 tablespoon butter in a skillet over medium heat; cook and stir remaining garlic until fragrant and golden, 1 to 3 minutes. Add spinach and cook until spinach is wilted, 3 to 4 minutes.
  • Place spinach on 2 serving plates, making a well in the center of each. Arrange each salmon steak in the center of the well and pour sauce over each. Garnish salmon with onion.

1 whole salmon, dressed
2 tablespoons butter
1/2 cup celery, finely chopped
3/4 cup mushroom, sliced
1/8 teaspoon thyme
1/2 teaspoon poultry seasoning
lemon pepper, to taste

3/4 cup cooked rice
2 tablespoons cooked rice

Steps:

  • Rinse fish.
  • Remove head and tail, if desired.
  • Set fish aside while preparing stuffing.
  • Heat butter in frying pan; add celery and mushrooms and saute about 5 minutes.
  • Add seasonings, water and lemon juice.
  • Bring to a boil and mix in uncooked rice.
  • Add green onions and pimiento.
  • Cover stuffing; remove from heat and let stand about 5 minutes.
  • Pat fish dry and fill cavity with stuffing.
  • Wrap fish in foil.
  • Place in a shallow baking pan.
  • Bake in a 400ºF oven about 30 to 40 minutes, or until fish flakes when tested with a fork.
  • Remove upper skin and bones, if desired.
  • Garnish with lemon slices and parsley.

SALMON FILLETS WITH LEMON RICE

225g Long Grain Rice
Grated rind and juice of 1 lemon
900ml Vegetable Stock
100g Frozen Peas
100g Frozen or tinned Sweetcorn
400g Can of chopped Tomatoes
1tbsp Fresh chopped Parsley or Coriander
1/2 Red onion, shredded
2tbsp Creme fraiche
4tbsp Fresh chopped Parsley or Coriander
Grated rind of 1 lemon
A good pinch of chilli flakes
4 Salmon Fillets
2tbsp Olive oil
4 Slices of Feta or Salad cheese

Steps:

  • For the rice, rinse under cold running water. Bring the lemon rind, juice and stock to the boil in a saucepan. Add the rice and tomatoes and simmer for approx 12-15 mins. Season with plenty of black pepper if you like. Becareful not to let it boil dry, stir frequently.
  • Meanwhile mix the parsley, lemon rind and chilli flakes together and press on to the top of the salmon fillets. Pre head the grill to a medium heat. Then drizzle with the oil and cook the fillets.
  • Just before the rice is ready, stir in the red onion, parsley, sweetcorn and peas. Warm these through. At this point add the feta to the top of the fillets and grill until golden in colour.
  • Remove the rice from the heat and stir in the creme fraiche.
  • Spoon the rice mixture on to plates and top with the salmon fillets

The base for this recipe comes from "Enjoy- More Recipes from the Best of Bridge" but I've given you my adaptation of it. You can also do this on the BBQ. It is a very tasty fish recipe and I hope you'll enjoy it.

2 cloves garlic, smashed
1/2 cup butter or 1/2 cup margarine
1 1/2 cups onions, chopped finely
2 cups celery, chopped finely
2 2/3 cups cooked rice (i use parboiled rice)
1/8 green pepper, chopped finely
1/8 red pepper, chopped finely
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried sage
1/2 teaspoon thyme
salmon
mayonnaise
lemon slice
melted butter
dry white wine

Steps:

  • Preheat oven to 425 degrees F.
  • In a skillet, melt butter and saute onion, garlic, celery and peppers until tender.
  • Then add the rice and the spices and toss.
  • Coat inside of fish with a light coating of mayonnaise and then stuff the cavity of the fish but don't pack the stuffing in.
  • Sew it up with a needle and thread.
  • Spread a little butter or a lot of mayonnaise over fish and top with 3 or 4 lemon slices.
  • Wrap loosely in tin foil.
  • Put it in a broiling pan and cook for 10 minutes per inch of thickness or until cooked and flakes easily with a fork.
  • This can be served with additional lemon wedges or you can mix equal portions of melted butter and dry white wine for a delicious sauce.

BAKED HERB STUFFED SALMON

Sea salt and freshly ground black pepper
Extra-virgin olive oil
2 medium salmon fillets, about 2 1/2 pounds (1.1 kilograms) skin on, scaled and pin boned
2 lemons
Bunch fresh marjoram
Bunch fresh dill
Bunch fresh basil
Bunch flat-leaf parsley
Handful stoned black olives

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C/gas 6).
  • Cut 5 lengths of string and lay them out on the work surface next to each another, leaving gaps in between. Sprinkle salt and pepper over the work surface, and drizzle with olive oil. Lay 1 salmon fillet, skin side down, on top. Sprinkle salt and pepper over the salmon, then, using a fine grater, grate the zest of 1 lemon over the top. On top of that lay the marjoram, dill, and basil, broken up, and the olives.
  • Season the flesh side of the other salmon fillet with salt and pepper, and grate over the second lemon. Place 1 fillet on top of the other, thin end to thick, then tie them together and trim the string. Put the fish parcel on an oiled baking tray, and scatter over any remaining bits of herb. Thinly slice the 2 lemons and place on top of and round the salmon. Drizzle with olive oil, then roughly chop the parsley and sprinkle over the top.
  • Bake in the preheated oven for about 20 minutes.

2 ts olive oil
1 tb Lemon Rind grated
1 c Onion finely chopped

Steps:

  • Heat oil in a large saucepan over medium heat until hot. Add onion and mushrooms; saute 3 minutes or until tender. Add rice, 1/4 teaspoon salt, and pepper; saute 1 minute. Add 3 cups hot water, lemon rind, and oregano; cover, reduce heat, and simmer 12 minutes or until liquid is absorbed. Remove from heat; add lemon juice, and fluff with a fork. Set aside. Place fish on a 25 x 18-inch sheet of heavy-duty aluminum foil; sprinkle inside of fish with remaining 1/4 teaspoon salt. Stuff rice mixture into fish cavity; spoon remaining rice mixture onto foil. Wrap foil around rice mixture; pleat and crimp edges of foil to form a tray. Place rack on grill prepared for indirect heat (see note at end of recipe). Place foil-wrapped fish on unheated side of grill. Cover with grill lid, and cook 1 hour or until fish flakes easily when tested with a fork. (Do not turn fish). Yield: 16 servings (serving size: 3 ounces fish and 1/4 cup rice). Stuffed salmon recipe with sun-dried tomatoes, feta, and spinach

1 (1-pound) sockeye salmon fillet, cut into 4 (1/4-lb) fillets
1/2 cup sun-dried tomatoes, drained
3 cups baby spinach
1/2 cup feta cheese crumbles
sea salt, to taste
1 cup fresh basil
2 tsp Italian Seasoning

Steps:

  • Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  • Give the sun-dried tomatoes a rough chop. Add sun-dried tomatoes to a small saucepan and heat over medium on the stove top. Once the sun-dried tomatoes are sizzling, add the baby spinach and cook until spinach is wilted. Remove pan from the heat, then stir in the feta cheese and sea salt. Set aside until ready to use.
  • Place salmon fillets on a cutting board and slice in half hamburger-wise, leaving ¼" to ½" still attached.
  • Brush salmon with avocado oil (or cooking oil of choice) and sprinkle with sea salt. Transfer salmon fillets on the parchment-lined baking sheet. Stuff the salmon with the filling mixture.
  • Bake on the center rack of the preheated oven 25 to 30 minutes, or until salmon is cooked through.
  • Serve with your favorite side dishes and enjoy.

1 pound jumbo lump crab meat
1 tablespoon mayonnaise
1 teaspoon fresh lemon juice
1 teaspoon dry mustard
1 teaspoon seafood seasoning, such as Old Bay
1 teaspoon Worcestershire sauce
1 pound skinless Atlantic salmon or wild salmon fillet, cut into 4 pieces
1/4 pound Brie cheese, sliced
Salt and freshly ground pepper
1 bunch asparagus, trimmed
Salt and pepper
1 1/4 cups balsamic vinegar
1 1/2 tablespoons minced shallots
1 stick (8 tablespoons) salted butter, cut into 4 pieces
1 tablespoon olive oil
Wild rice, for serving

Steps:

  • For the crab cake mix: Gently mix the crab meat with the mayonnaise, lemon juice, mustard, seafood seasoning and Worcestershire sauce in a large bowl. Form four 4-ounce crab cakes.
  • Preheat the oven to 475 degrees F.
  • For the salmon: Make a small vertical pocket in each piece of salmon. Place a slice of Brie on the bottom of the pocket, top with 1 crab cake and another slice of Brie.
  • Place the salmon in a large baking dish and add enough water to reach one-quarter of the way up the side of the salmon. Bake until pale and cooked through, 12 to 15 minutes.
  • For the asparagus and sauce: Bring a large pot of salted water to a boil. Cook the asparagus just until crisp tender and bright green. Drain and plunge into an ice bath to stop the cooking.
  • Put the vinegar and shallots in a saute pan and cook over medium heat until vigorously bubbling and reduced by three-quarters, about 2 minutes. Add a pinch salt and pepper, reduce the heat to low and slowly stir in the butter. If the sauce is too thin, continue to simmer over very low heat until desired thickness.
  • In a second saute pan, heat the oil over medium-high heat until hot. Add the asparagus, season with salt and pepper and cook until warmed through. (The asparagus is already cooked so don't saute it too long.)
  • Serve the salmon and asparagus over wild rice. Spoon over the sauce.

  • With 2 forks, carefully lift off the salmon skin from the top side and reserve. Lift the flesh from the top side of the salmon and transfer to a platter. Lift the skeletal bone from the salmon and discard. Carefully pour off the pan juices into a bowl. Cut the second side of the salmon into sections and transfer to the platter. Discard the aromatics.
