1 large tomato (chopped)
1 large bell pepper (chopped)
1 cup corn (cooked or frozen (thawed))
15 - 19 oz can black beans (rinsed and drained)
1/2 cup cilantro (finely chopped)
2 tbsp red onion (minced)
2 tbsp olive oil (extra virgin)
1 lime (juice of)
2 tsp cumin (ground)
1/2 tsp salt
red chili pepper flakes (to taste)

Steps:

  • In a large bowl, add mango, tomato, bell pepper, corn, black beans, cilantro, onion, olive oil, lime juice, cumin, salt, hot pepper flakes.
  • Gently stir to combine. If you have time, allow flavors to marry each other in the fridge for a few hours.
  • Serve cold with cilantro lime chicken, grilled salmon or add Instant Pot quinoa to make it one complete meal.

¼ cup chopped cilantro leaves
2 tablespoons olive oil
1 tablespoon lime juice
salt and pepper to taste
½ teaspoon ground cumin
½ teaspoon chili powder

Steps:

  • Place the bell pepper, onion, jalapeno, black beans, mango, corn, and cilantro in a large bowl.
  • In a small bowl whisk together the olive oil, lime juice, salt and pepper, cumin and chili powder.

2 tbsp smoked paprika
1 tsp dried oregano
½ tsp cayenne pepper (or just a pinch if you want less heat)
1 tbsp soft light brown sugar
2 limes , zested, 1 juiced and 1 cut into wedges
1 garlic clove , crushed
3 tbsp olive or rapeseed oil
3 peppers , cut into chunks
2 red onions , peeled and cut into wedges
2 x 400g cans black beans , drained
850g side of salmon , pin-boned and scaled
3 small or 2 large ripe avocados
1 small, firm ripe mango
1 red chilli , finely chopped
small bunch coriander , chopped

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the paprika, oregano, cayenne, sugar, lime zest, garlic and oil in a bowl with a good pinch of salt. Toss the peppers, onions and beans with half of the spice paste in a large roasting tin, then cook in the oven for 25 mins.
  • Remove from the oven and give the veg and beans a good mix. Lay the salmon on top, skin-side down, then brush over the remaining spice paste. Bake for a further 25 mins, until the salmon is cooked through.
  • Meanwhile, for the salsa, halve, stone and finely chop the avocados and mango. Mix with the lime juice, chilli, coriander and some salt. Serve the salmon, veg and beans with the salsa and lime wedges for squeezing over.

1/4 cup white wine or reduced-sodium chicken broth
1/4 cup reduced-sodium soy sauce
1-1/2 teaspoons brown sugar
1 garlic clove, minced
6 salmon fillets (4 ounces each)
SALSA:
1 can (15 ounces) black beans, rinsed and drained
1 cup frozen corn, thawed
1 medium sweet red pepper, diced
1/2 cup seedless red grapes, chopped
1/4 cup fat-free Italian salad dressing
1 tablespoon canned chopped green chilies
1 teaspoon brown sugar

Steps:

  • In a small bowl, combine the wine, soy sauce and brown sugar. Set aside 2 tablespoons mixture for basting. Stir garlic into remaining mixture. Place in a large resealable plastic bag; add the salmon. Seal bag and turn to coat; refrigerate for 30 minutes, turning occasionally., Meanwhile, in a small bowl, combine the salsa ingredients. My neighbor introduced me to this cool dish that can stand alone as an easy side dish or tastes great with chicken made up as fajitas. This is a recipe that can be altered to use up other fruits you have on hand. I have used a mix of mangoes and peaches to make this, and it would probably taste great with pineapple or other tart fruits, but if you like mangoes as much as I do, you will want to let that flavor dominate. Optional to chill before serving.

15 oz. can Black Beans (drained and rinsed)
15 oz. can Whole Corn (drained and rinsed)
1 jalapeno (seeds removed, finely diced)
1 Red Bell Pepper (seeds removed, diced)
1 Mango (peeled and diced)
1/4 Red Onion (finely diced)
1/4 Bunch Cilantro
Lime (zested and juiced)
1 Avocado (diced (optional))
Drizzle of Olive Oil (optional)
1 Avocado (large dice, (optional))
Salt (added to taste)

Steps:

  • Rinse and drain the black beans and the canned corn.
  • Remove the seeds from the jalapeno and finely dice. If you like added heat, leave the seeds in.
  • Finely dice a 1/4 of a red onion.
  • Remove the seeds and stem off of the red pepper and finely dice it.
  • Peel and dice a ripe mango. (check out this post on how to peel a mango)
  • Finely chop the cilantro.
  • I like to zest the lime in addition to juicing it. It adds just a bit more pop of flavor.
  • Stir all the black bean salsa recipe ingredients together.
  • Take a taste and adjust the seasoning to your taste.
  • It might need a sprinkling of salt or a drizzle of olive oil.
  • Another tasty addition is a diced avocado. YUMMY!

Add mango, beans, tomato, red onion, jalapeno, and cilantro and mix till well combined. Squeeze the juice from one lime over the top and toss to distribute. Season to taste with sea salt and fresh ground pepper.
