Ham Stuffed Twice Baked Potatoes image

These twice baked potatoes are cheesy, filled with ham and have green onions sprinkled throughout.

Number Of Ingredients 6

4 baking potatoes
1/2 cup chopped ham
1/4 cup chopped green onion
1/2 cup sour cream
1/2 cup cheddar cheese
salt and pepper to taste

Steps:

  • Wash and pierce potatoes with a knife two or three times. Bake in a 425* oven for 60 minutes
  • Remove from oven and slice in half lengthwise. Scoop out potato filling and place in bowl
  • Add onions, sour cream and ham
  • Blend on medium speed until potatoes are whipped and creamy. Add salt and pepper to taste
  • Fill potato skins with mixture and top with cheddar cheese
  • Place under broiler and broil for 3 minutes or until cheese is bubbly. Serve immediately

These hearty potatoes are fully loaded. They can be changed up a zillion different ways, but this is my favorite, featuring three kinds of cheese plus cream cheese and cottage cheese. -Kathleen Gill, Pahrump, Nevada

2 large baking potatoes
1/2 cup cubed deli ham
1/4 cup chopped sweet onion
1/4 cup chopped celery
1/4 cup chopped sweet red pepper
1 tablespoon olive oil
2 ounces reduced-fat cream cheese
2 tablespoons cream-style cottage cheese
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup shredded sharp cheddar cheese
2 tablespoons shredded Swiss cheese
2 tablespoons 2% milk
1 tablespoon shredded Parmesan cheese
1 teaspoon minced fresh basil

Steps:

  • Scrub and pierce potatoes. Bake at 375° for 1 hour or until tender. When cool enough to handle, cut a thin slice off the top of each potato and discard. Scoop out the pulp, leaving a thin shell., In a large skillet, saute the ham, onion, celery and red pepper in oil until vegetables are tender. Set aside. In a large bowl, mash the pulp with cream cheese, cottage cheese, salt and pepper. Stir in the ham mixture, cheddar cheese, Swiss cheese, milk and Parmesan cheese. Spoon into potato shells., Place on a baking sheet. Bake, uncovered, at 375° for 25-30 minutes or until heated through. Sprinkle with basil.

4 (12 ounce) baking potatoes
2 tablespoons reduced-calorie stick margarine
2 cups broccoli florets
1/2 cup onion, chopped
1/2 cup low sodium chicken broth
1 cup lean ham, diced
1/4 teaspoon pepper
6 tablespoons nonfat sour cream, divided
cooking spray
1/2 cup reduced-fat cheddar cheese, shredded

Steps:

  • Preheat oven to 400 degrees fahrenheit.
  • Bake potatoes at 400 degrees for 1 hour and 15 minutes or until tender. Let cool slightly.
  • Melt margarine in a nonstick skillet over medium-high heat. Add broccoli and onion; saute' 3 minutes. Add broth; bring to a boil.
  • Cover, reduce heat, and simmer 5 minutes or until broccoli is tender. Remove from heat; stir in ham and pepper.
  • Cut a lengthwise strip from top of each potato; discard strips. Scoop out pulp, leaving 1/4 -inch-thick shells; set shells aside.
  • Place potato pulp in a bowl; add 2 tablespoons sour cream, and mash to desired consistency. Stir in broccoli mixture. Spoon mixture evenly into potato shells.
  • Place potatoes in an 11X7 inch baking dish coated with cooking spray. Bake at 400 degrees for 15 minutes or until thoroughly heated.
  • Top each potato with 2 tablespoons cheese, and bake an additional 3 minutes or until cheese melts.
  • Top each potato with 1 Tablespoon sour cream.

6 tablespoons butter
3 tablespoons grated onions
1/2 teaspoon pepper
2 medium eggs
1 1/2 cups shredded cheddar cheese, divided
1 cup diced cooked ham

Steps:

  • Preheat oven to 375 degrees.
  • Wash and pat dry potatoes.
  • Rub each potato with shortening.
  • Prick potatoes several times with fork.
  • Bake for 1 hour at 375 degrees.
  • Cut in half, and scoop out inside leaving shell, and place on a cookie sheet.
  • In a large bowl, beat potatoes for 1 minute.
  • Add butter,onion,eggs, and pepper.
  • Continue until smooth and fluffy.
  • Fold in 1 cup of cheese and 1/2 cup of ham, fill potato shells with mixture.
  • Top with remaining 1/2 cup of cheese , and 1/2 cup of ham.
  • Sprinkle with paprika.
  • Bake at 375 degrees for 15-20 minutes or until potatoes are throughly heated, and cheese is melted.

1 1/2 cups milk
1 cup ham, chopped
1/2 pint sour cream
1/2 teaspoon onion salt

Steps:

  • Bake potatoes at 400 degrees Fahrenheit for 1 hour until soft.
  • Slice potatoes in half lengthwise.
  • Scoop out insides, leaving a firm shell.

When I was growing up, there was always a potato on the table. This is one of my mom's favorite recipes & we still fix these potatoes regularly. It's a good replacement for regular baked potaotes! This recipe calls for the potatoes to be baked in the oven to cook but you can cook them in the microwave. I have not had as much luck getting the potatoes to stay together when cooked in the microwave but you can try either way you like. The microwave is much faster, of course!

4 large potatoes
1/2 cup milk
1 (3 ounce) package cream cheese, softened
2 tablespoons butter
1/2 cup shredded cheddar cheese
1 teaspoon salt
1 teaspoon pepper
1 cup cooked diced ham
2 teaspoons chopped chives

Steps:

  • Bake potatoes at 400 for 1 hr or until tender.
  • Cut each potato in half, carefully scoop out the inside of the potato leaving a 1/4 inch thick shell. Put scooped out potato in a large mixing bowl.
  • In the large mixing bowl with the potato inside, add milk, cream cheese, butter, swiss cheese, cheddar cheese, salt & pepper.
  • Mix the contents with a hand mixer or electric mixer until well blended.
  • Stir in ham and chives.
  • Spoon mixture back into potato shells.
  • Bake at 350 for 15 minutes.
