SALMON WITH LEMON AND DILL

Salmon with Lemon and Dill image

This is a wonderful (and easy) recipe I got from my Aunt. The flavors of lemon and dill really complement the fish. I like to use wild Alaskan salmon for this recipe, but any salmon will work. I usually don't measure, so these are all estimates. Play with the ingredients to suit your own tastes!

PERFECTLY BAKED SALMON WITH LEMON AND DILL

Perfectly Baked Salmon with Lemon and Dill image

The trick to perfectly baked salmon is to gently bake the fish in a little liquid - such as wine, stock, or water. Then cover the dish and bake until just cooked through. You could call this oven poached salmon. It's practically no-fail. If your fish is quite thick, expect that the cooking time will be a few minutes longer than what we share below.

Provided by Adam and Joanne Gallagher

Categories     Dinner

Time 30m

Yield Makes 4 Servings

Number Of Ingredients 5

One 1 1/2-pound salmon fillet, or two 12-ounce fillets, preferably wild-caught
1 tablespoon olive oil
Salt and fresh ground black pepper
1 lemon, cut into slices 3 to 4 sprigs of fresh dill, plus more for serving
1/2 cup dry white wine, such as Sauvignon blanc (substitute: fish stock, chicken stock, or water)

Steps:

  • Heat oven to 325 degrees F.
  • Lightly oil and season both sides of the salmon with salt and pepper.
  • Arrange lemon slices and fresh herbs on the bottom of a baking dish large enough to fit the salmon, and then place the salmon, skin-side down, onto the bed of lemon and herbs.
  • Pour wine (or stock) into the baking dish, and then cover with aluminum foil. Bake the salmon until the fish flakes and white bubbles of protein appear on the surface, 12 to 30 minutes, depending on the thickness of the fillets. Check the salmon after 10 minutes to see its progress.
  • Checking the temperature of the salmon using an internal thermometer is the best way to prevent overcooking. You want the thickest part of the salmon to read 125 degrees F. Take the salmon out of the oven and loosely cover with foil for 5 minutes (the fish will continue to cook during this time). Serve, scattered with chopped fresh herbs on top.

SALMON WITH LEMON DILL SAUCE

Salmon With Lemon Dill Sauce image

This simple salmon recipe is easy to prepare yet it's bursting with so much flavor. Fresh and tangy, the lemon dill sauce adds so much zing to the dish. Once cooked, the salmon is warm and flaky. After trying, you'll find yourself making this salmon again and again.

Provided by Giselle Gonzalez

Categories     Fish

Time 20m

Number Of Ingredients 6

1 wild caught salmon fillet or whole salmon 2 lbs.
2 lemons
1/2 Tbsp fresh dill
2 Tbsp extra virgin olive oil
4 Tbsp fresh unsalted butter
salt and pepper, to taste

Steps:

  • 1. Season the salmon with salt and pepper. Add the olive oil to your pan. I love using cast iron for this dish. It can go from stove top to oven. Bring it up to heat.
  • 2. When the pan is heated lay the fish skin side down. The salt and pepper will create the crispiness on the skin. When you see the flesh becoming opaque and you see the skin curling on the sides it's time to turn it.
  • 3. Cook other side to your liking. Remember if you like your salmon medium rare, remove when the middle is just about warmed through the residual heat will cook it to perfection.
  • 4. Add the butter, the juice of the one lemon, and minced the dill. Heat it through then spoon over the fish. Thinly slice the remaining lemon. You can lay on the side this gives it a wonderful aroma. This can be served with some creamy warm Colcannon. Enjoy!

  • Prep Salmon: Take out the salmon fillet 15 minutes prior to cooking. Pat dry the salmon fillets using a paper towel or a clean dish towel. This will prevent them from sticking to the skillet.
  • Heat Oil: Heat a skillet over medium-high heat. Use a cast iron skillet or a stainless steel skillet. Add the olive oil and butter and heat until butter melts and starts to bubble. Make sure the oil and butter coats the entire surface of the skillet.
  • Season Fillets: Season the salmon with salt and pepper just before adding to the hot skillet, then add the fillets to the pan. If using fillets with skin, place skin-side down first. I usually can add all 4 fillets at once and my skillet is 10 1/4 inches in diameter.
  • Cook: Cook the fillets for about 6 to 7 minutes for the first side. The first side takes the longest to cook. As the fish cooks you'll notice the color of the fillet will begin to lighten, starting at the bottom.

  • If your salmon is frozen, defrost it in the refrigerator the night before. Once thawed, remove any bones if you didn’t purchase a deboned fish. Season the fish lightly with salt and pepper. Using 1/2 C of flour, coat the fish completely in flour.
  • Warm 1 Tbsp of olive oil in a large skillet over medium heat for 1-2 minutes. If the oil begins to smoke it’s too hot, so reduce the heat. Add the salmon to the heated pan with the skin side up. Cook until golden brown, for about 4-5 minutes. Flip the fish so that it is skin side down and cook for another 2-3 minutes. The fish is done cooking when it is firm to the touch and has reached an internal temperature of 140ºF. Once cooked, place the fish on a plate and set aside while you make the sauce.
  • Melt 2 Tbsp of butter over medium heat. Once melted, add the garlic and sauté for 1 minute. Add 1 Tbsp of flour and cook for one additional minute.

  • Preheat the oven to 400 degrees. Line a baking sheet with parchment. Add the potatoes to the pan and toss with a little bit of olive oil, garlic powder, salt, and pepper. Roast for 25 minutes until lightly browned and delicious.
  • While the potatoes are roasting, make your sauce. Melt the butter over medium low heat (I usually start with 6 tablespoons and add the last two if needed once the sauce is cooked). Add the garlic, shallot, and thyme sprigs; sauté for 3-5 minutes until soft and fragrant. Add broth and cream; bring to a low simmer. Let the sauce hang out over low heat until it starts to thicken enough to coat the back of a spoon. Remove the thyme sprigs. Whisk in the lemon juice, stir in the herbs, and season with salt and pepper. Give it a taste. Yes, you’re in heaven now.
  • Add the broccoli and the salmon to the potato pan (keeping the potatoes on there). Toss or brush with a little more oil, salt, and pepper. Bake for another 10-15 minutes, until the salmon is fully cooked – I like it to be *just* past the point of translucent where it flakes apart very easily but isn’t dried out.
  • Serve salmon, potatoes, and broccoli with big spoonfuls of sauce, more herbs, and more lemon wedges. This is living. ♡

  • Preheat oven to 400 degrees F (204 C). If cooking on a baking sheet, line with parchment paper or a silicon baking mat. If using a skillet, ensure it’s oven safe (we prefer cast iron) and lightly oil and rub to coat. (Fish can stick to stainless steel pans, so we recommend using cast iron if possible.)
  • Prepare salmon by briefly rinsing under cold water and patting dry with a paper towel (this is an optional step, but recommended).
  • Once dry, drizzle both filets with a little oil and season each with a generous pinch of sea salt and black pepper. Next sprinkle on dill and top with fresh lemon slices (this is mostly for visual effect, but it also helps keep the fish more moist and infuses lemon flavor).
  • If cooking in a skillet: Heat a large oven-safe skillet over medium heat. Once hot, add a little oil. Then add salmon filets and sear on the underside for 2-3 minutes — this speeds the baking time and also makes the skin crispier and easy to peel away. Transfer to the preheated oven and continue cooking for 8-10 minutes, or until the center is fully cooked (check by cutting into the center of one of the filets). Set aside until serving. If cooking on a baking sheet: Transfer seasoned salmon directly to the parchment paper-lined baking sheet and bake for about 12-15 minutes, or until the center is fully cooked (check by cutting into the center of one of the filets). Set aside until serving.

  • To prepare sauce, combine the first 6 ingredients in a small bowl; stir with a whisk. Cover and refrigerate.
  • To prepare croquettes, combine flour and next 6 ingredients (through egg white) and 3 tablespoons breadcrumbs. Divide mixture into 4 equal portions, shaping each into a 1/2-inch-thick patty. Refrigerate for 1 hour. Place remaining 2 tablespoons breadcrumbs on a plate; dredge patties in breadcrumbs.
  • Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add patties to pan; cook 9 minutes on each side or until golden. Serve with sauce.
  • Wine note: Look for a crisp American pinot grigio to serve with these croquettes. Estancia Pinot Grigio 2006 ($12) is bolder than most Italian versions, with acidic verve and a little fizz that smooths out the horseradish sauce. The wine's green apple flavor and citrus acidity marry well with the dish's zesty lemon and herbal notes. —Jeffery Lindenmuth
