Glazed Salmon with Spiced Carrots image

Get ready for a fantastic one-pan dinner bursting with flavor. We broil this honey-mustard glazed salmon and serve it with carrots tossed in a spiced lime and almond dressing boosted with fresh mint.

4 tablespoons extra-virgin olive oil, plus more for the pan
1 pound carrots, thinly sliced
2 tablespoons honey or agave nectar
1 tablespoon Dijon mustard
2 tablespoons fresh lime juice, plus lime wedges for serving
4 6-ounce center-cut salmon fillets (about 1 1/2 inches thick)
Kosher salt and freshly ground pepper
1/2 teaspoon ground coriander
1/4 teaspoon ground cumin
Pinch of ground cinnamon
1/3 cup roughly chopped fresh mint
1/4 cup sliced almonds

Steps:

  • Preheat the broiler. Lightly oil the broiler pan. Toss the carrots with 1 tablespoon olive oil in a bowl, then spread out on one side of the pan. Broil until the carrots begin to soften, 2 to 3 minutes.
  • Meanwhile, whisk 2 tablespoons olive oil, the honey, mustard and 1 tablespoon lime juice in a small bowl. Brush the tops and sides of the salmon with the glaze. Put the salmon, skin-side down, on the other side of the broiler pan next to the carrots and season with salt and pepper. Broil until the salmon is golden brown and just cooked through and the carrots are crisp-tender, 5 to 7 minutes.
  • Whisk the remaining 1 tablespoon each olive oil and lime juice, the coriander, cumin, cinnamon, mint and almonds in a bowl. Add the carrots and toss to combine; season with salt and pepper. Serve the salmon with the carrots and lime wedges.

This caramelized salmon is simple, healthy and completely gorgeous. Just five ingredients and 20 minutes get that browned caramelized crust on the salmon.

1/2 cup sugar
1 teaspoon of salt (if using coarse salt, use 1 1/2 tablespoons and pulse it in a food processor a few times to make it less coarse)
a few dashes of freshly crushed black pepper
16 ounces salmon, cut into 4 filets, with skin
olive oil

Steps:

  • Combine the sugar, salt, and black pepper in a shallow bowl. Dip each filet into the bowl and coat the entire surface of the salmon with the sugar/salt mixture.
  • Heat a little bit of olive oil in a large nonstick skillet over medium heat. When the oil is hot, add the salmon, skin side down in the pan, and saute for about 5 minutes. If you're worried about the burnt sugar in the pan (or if there's too much oil/liquid) just drain it off or spoon it out of the pan. If there's a lot of oil splattering, turn the heat down. I would not recommend going higher than medium heat.
  • Flip each salmon filet (carefully! keep the skin on there because it helps the filets hold together) and saute for another 2-3 minutes. Flip to the side and saute each of the sides for another 2-3 minutes, if the filet is thick enough.
  • Preheat the broiler to 450 degrees. Sprinkle the top of each salmon filet with a teaspoon or two of additional sugar/salt mixture. Transfer the pan from the stovetop into the oven. Let the salmon broil for 5-10 minutes, checking occasionally to make sure it's not burning. The sugar in the pan might look burnt but that's okay as long as the tops of the salmon are looking golden brown. When the salmon is done cooking, remove from the oven and allow to cool for a few minutes (that sugar gets HOT). Gently peel off the skin before eating - it will be very dark because it's totally caramelized with sugar, and it should come off very easily.

Steps:

  • Combine the black pepper, paprika, cayenne pepper, minced garlic, Dijon mustard, brown sugar, onion powder, and salt in a small bowl. Stir in 1 tablespoon of olive oil to make a paste. Spread the paste all over the salmon fillets, and set aside to marinate at room temperature 30 minutes.
  • Heat the remaining 2 tablespoons of olive oil in a small pan over medium heat. Stir in the onion, and cook until tender and golden brown, about 10 minutes. Heat a separate non-stick skillet over medium-high heat. Cook the salmon fillets in the hot skillet until golden brown on each side, and no longer translucent in the center, about 4 minutes per side. 1 tablespoon olive oil
1 tablespoon butter
4 onions, coarsely chopped
16 ounces baby carrots
4 garlic cloves (or more to taste)
1 1/2 lbs salmon fillets, cut into 4 servings
1/4 cup white wine, dry
1/2 teaspoon sea salt
1/8 teaspoon fresh ground black pepper
1/2 teaspoon dried dill weed

Steps:

  • Steam carrots in micro for 2 minutes. Drain.
  • In large skillet that can be covered, heat oil and butter over medium heat until hot. Add onions, carrots and garlic. Saute vegetables until they begin to brown, but not burn! Add 1/4 cup white wine.
  • Place salmon filets on top of vegetables and sprinkle with salt, pepper and dill weed.
  • Cover skillet and steam salmon approx 15 minutes or until flaky. Remove salmon to platter and pour vegetables and juice over all.

This is something I just whipped up over the Christmas Holidays. Try to use larger carrots. My MIL loved it so much that she even asked me to write down the recipe. Hope you enjoy it as much as she did!

2 tablespoons butter, softened, divided
2 onions, diced
5 -6 carrots
1/4 cup orange juice
2 tablespoons honey
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1 teaspoon dill
1/8 teaspoon cayenne (optional)
2 tablespoons butter, melted
salt and pepper, to taste

Steps:

  • Grease the bottom and sides of a covered casserole dish with 1 tablespoon of butter and set aside.
  • Melt the other tablespoon of butter in a skillet and slowly cook the onions, stirring occasionally, until golden brown and tender.
  • Preheat oven to 180C/350°F.
  • While the onions cook, peel and THINLY slice the carrots and put them into the buttered casserole dish. The slices should be about the thickness of a nickel (or a pound coin in the UK). If they are too thick, they will take longer than noted to cook.
  • When the onions are cooked, add them to the carrots and mix them around a bit.
  • In a small bowl, combine the orange juice, honey, paprika, garlic powder, dill, cayenne (if using), melted butter, salt and pepper.
  • Pour this mixture over the carrots, cover and bake for one hour. Remove from oven and test to see that carrots are firm but tender. If need be, return to oven and cook an additional 5-15 minutes.
  • Enjoy now because I can almost guarantee that you won't have any leftovers!

It is not hard to make or too time consuming, the main time is spent caramelising the onion and reducing it down. I served ours with seasoned potato chips and asparagus for a great tasting healthy meal.

3 medium onions, sliced thinly
4 salmon fillets
salt & pepper, to season
2 tablespoons olive oil, divided use
6 -7 tablespoons fig preserves
1/2 cup white wine
1/2 cup water
1 teaspoon instant chicken bouillon granules
3 tablespoons balsamic vinegar
1 tablespoon honey
1 tablespoon fresh rosemary, chopped finely
fresh parsley, and
1 sprig fresh rosemary, to garnish (optional)

Steps:

  • Heat 1 tablespoon olive oil in a pan add sliced onion, cook until onions soften, approx 5-8 Min's, lower heat, cook onions for an additional 5-10 Minutes until they turn golden.
  • Add wine, water, vinegar, fig preserves, stock granules and honey, bring to the boil, reduce heat, simmer uncovered about 30 Minutes to caramelise onion and reduce liquid.
  • Season with salt and pepper and add rosemary, stir to combine.
  • For the Salmon.
  • Season salmon fillets on both sides with salt and pepper.
  • Heat remaining oil in a large pan add salmon, cook 3-6 Minutes a side depending on the thickness of the fillet.
  • As a general rule I cook mine until nice and golden and fish flakes easily when a fork is inserted into flesh.
  • Serve fish topped with onion and your favourite side dish.

6 ounces figs, stemmed and halved
1/2 cup red wine or 1/2 cup white wine
1/2 cup chicken broth or 1/2 cup vegetable broth
1 tablespoon balsamic vinegar
1 tablespoon chopped fresh rosemary or 1 teaspoon dried rosemary
fresh ground black pepper
1 -1 1/3 lb salmon fillet, skinned and cut into 4 portions
chopped parsley

Steps:

  • Swirl olive oil in bottom of medium nonstick skillet.
  • Add onions and sprinkle with 1/2 teaspoon salt.
  • Cover and cook over medium-low heat, stirring occasionally, until onions are soft, about 10 minutes.
  • Remove cover and cook, stirring often, until onions are golden, 15 to 20 minutes.
  • Stir in figs, wine, broth, vinegar and fresh rosemary.
  • Increase heat to high and simmer until sauce thickens, about 5 minutes.
  • Add salt and pepper to taste.
  • Keep warm.
  • Preheat oven to 450 degrees.
  • Sprinkle salmon with salt and pepper to taste.
  • Place on lightly oiled heavy baking sheet.
  • Roast for 7 to 10 minutes or until fish flakes.

500g carrot , peeled and cut into long chunks
50g butter
1 tbsp olive oil
8 red onions , peeled and quartered with root intact
3 sprigs thyme
1 tbsp soft brown sugar
3 tbsp red wine
1 tbsp good-quality balsamic vinegar

Steps:

  • Blanch carrots in a pan of boiling salted water for 3 mins, drain well, then pat dry. In a large pan, melt the butter and oil, then fry the carrots, onions and thyme over a low heat for 30 mins until golden.
  • Stir in the sugar and red wine and bubble for a few mins to boil off the alcohol. Add the vinegar, then continue to cook until syrupy, about 5 mins. Remove the sprigs of thyme and serve. Make up to 2 days ahead, stored in a covered container. Tip back into a pan and reheat or use a microwave.

4 leeks
2 tablespoons butter
1 tablespoon brown sugar
3 carrots, cut into matchsticks
kosher salt to taste
2 pounds salmon fillets
2 teaspoons olive oil
kosher salt and ground black pepper to taste

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C). Line a baking sheet with foil, and spray with cooking spray.
  • Trim away the root end, tough outer leaves, and dark green tops of the leeks. Cut the leeks lengthwise into quarters, then crosswise into thirds. Wash the leeks well to remove any grit, and drain in a colander.
  • Melt the butter in a large skillet over medium-high heat, and cook and stir the leeks until they have started to soften, about 5 minutes. Sprinkle the leeks with brown sugar, and cook until they turn brown, 15 to 20 minutes. Stir in the matchstick carrots, sprinkle with kosher salt, and cook and stir until the carrots are tender, about 5 minutes.
  • Place the salmon on the prepared baking sheet, rub the fillets with olive oil, and sprinkle with salt and pepper. Roast the salmon until the flesh is opaque and flakes easily but isn't dry, about 10 minutes per 1 inch of thickness. Remove the cooked fillets to plates, and top each fillet with 1/4 of the caramelized leeks and carrots.

Salmon Papillotes with Caramelized Onions and Currants image

1/4 cup brandy
1/2 cup dried currants
4 large sweet onions such as Walla Walla or Vidalia
1/4 cup olive oil
1/2 teaspoon cinnamon
1/2 teaspoon freshly grated nutmeg
four 24- by 16 1/2-inch pieces parchment paper
four 6-ounce salmon fillets
1/4 cup dry white wine

Steps:

  • In a small saucepan warm brandy over moderate heat and add currants. Remove pan from heat. Let mixture stand, covered, 20 minutes.
  • Halve onions lengthwise and cut crosswise into 1/4-inch-thick slices. In a large skillet heat oil over moderately high heat until hot but not smoking and cook onions, stirring occasionally, until softened, about 5 minutes. Reduce heat to moderate and cook onions, stirring occasionally, until golden, about 15 minutes more. Add currant mixture, cinnamon, nutmeg, and salt and pepper to taste and cook, stirring, 2 minutes. Transfer mixture to a bowl and cool. Caramelized onions may be made 1 day ahead and chilled, covered.
  • Preheat oven to 475°F.
  • Fold each parchment piece in half crosswise and cut each piece to make a large rounded heart shape. (Folded piece should be at least 2 inches larger all around than salmon fillet.) Open a parchment "heart" and put a salmon fillet in middle of one side. Sprinkle fillet with 1 tablespoon wine and salt and pepper to taste. Spread one fourth caramelized onions on fillet and fold other side of parchment over. Beginning at bottom end of center crease, in overlapping 1-inch segments fold edges of parchment, crimping as you go, to form a tight seal. Make 3 more papillotes in same manner. Papillotes may be made up to this point 4 hours ahead and chilled, covered.
  • Put papillotes on a large baking sheet and bake 9 to 15 minutes, or until a skewer inserted through parchment and into fish slides out smoothly.
  • Serve papillotes immediately, cutting them open at table.
