SALMON WITH AGRODOLCE BLUEBERRIES
Here, I paired fillets with a seasonal treat: fresh local blueberries. The berries would have been cloying with the fish by themselves, so I simmered them with white wine and vinegar, creating a sweet-and-sour sauce inspired by Italian agrodolce. The bracing blueberry agrodolce would have worked wonderfully on other fish, especially oily ones like mackerel and swordfish. I could also see spooning it over boneless chicken thighs before roasting, or pairing it with meaty pork tenderloin or chops that have just come off the grill in all their smoky glory.

Steps:
- Run your fingers over the salmon flesh and pull out any pinbones. Season fish generously with salt and let rest at room temperature while you prepare the sauce.
- Heat the oven to 400 degrees. Oil a large baking sheet.
- In a medium saucepan over low heat, simmer together shallots, wine, vinegar, thyme, cinnamon and a pinch of salt until most of the liquid has evaporated, 15 to 20 minutes. Toss in blueberries, butter and honey; cook until berries soften and turn the sauce pink, 2 to 4 minutes.
- Place salmon on baking sheet. Spoon berry mixture over salmon and season with pepper. Bake until salmon is cooked to desired doneness, 8 to 10 minutes for medium-rare.

SALMON WITH BLUEBERRY GRAPE SALAD

- Preheat oven to 400 degrees F. In medium bowl, combine blueberries, grapes, raspberries, and spinach. Drizzle with vinaigrette, toss gently, and set aside. Place salmon on baking pan and sprinkle with olive oil and lemon juice. Bake for 10-15 minutes or until fish flakes when tested with fork. Place salmon on serving plate and top with the salad. Serve immediately.

Steps:
- Place all marinade ingredients in large zip lock bag and mix.
- Add fillets and toss to coat. Place in refrigerator for 1 hour.
- Meanwhile prepare dressing by mixing all dressing ingredients together. Chill.
- Heat grill pan and large wok or large pan to medium high heat.
- Remove salmon from marinade.
- In heated non stick pour oil just to cover lightly the bottom of the pan.
- Pan sear salmon 2 minutes.
- Flip salmon and cook till desired.
- Toss greens and grapes together with 1/3 of the dressing. Place salmon on top and garnish with seeds and scallions.
- Pour remaining dressing in a small bowl and pass if more is desired.

- Preheat the oven to 375°F. Line a rimmed baking sheet with foil and drizzle lightly with olive oil or spray with a non-stick cooking spray.
- In a medium-sized saucepan combine Balsamic Blueberry Sauce ingredients. Heat on medium-low until reduced in half, approximately 20 minutes. Watch closely towards the end of cooking to prevent burning. Lightly mash any remaining whole berries. The sauce will thicken as it cools.
- Place the salmon on the rimmed baking sheet skin-side down. Drizzle lightly with olive oil. Salt and pepper lightly. Bake 12 to 15 minutes or until an instant-read thermometer measure 120°F and fish is flaky. I removed the foil from the pan with the fish on it immediately to stop any further cooking.
