Adapted for tuna or salmon instead of the hake steaks that the recipe originally called for I always enjoy this light dish with a steamed thai vegetable mix that I get in the organic section of the supermarket and some sweet iced tea...

2 salmon steaks or 2 tuna steaks
salt (optional)
1/2 teaspoon black pepper
4 tablespoons olive oil
2 tablespoons white wine or 2 tablespoons white grape juice
3 garlic cloves, peeled and finely chopped
3 tablespoons fresh parsley sprigs, finely chopped
1 lime, cut in wedges

Steps:

  • Preheat oven to 375°; rinse the tuna or salmon and pat dry with a paper towel.
  • Place in a small shallow oven-proof dish, then season with salt and pepper; drizzle with half of the olive oil and all of the wine or grape juice.
  • Bake 20 minutes, basting every 5 minutes; when the fish is ready, place each fish steak on a plate and keep warm.
  • Heat the remaining olive oil in a small skillet; gently saute the garlic until lightly golden, do NOT burn or it will be bitter!
  • Throw in some of the parsley, shaking the skillet a few times to mix; Spoon mixture over the warm fish and serve garnished with lime wedges.
  • Note: if yellowfin isn't available, you may also use ahi tuna or albacore tuna steaks.

2 tablespoons kosher salt
1 cup freshly cracked black pepper
4 (8 ounce) tuna steaks, at least 1 inch thick
2 tablespoons olive oil
1/2 cup unsalted butter, softened
1 teaspoon minced garlic
2 tablespoons fresh lemon juice (about 1/2 lemon)
1/4 cup roughly chopped fresh parsley

Steps:

  • Make the butter: Combine butter, garlic, lemon juice and parsley and mix well. Cover and refrigerate.
  • In another small bowl, combine the salt and pepper and mix well. Press the tuna steaks into the mixture and coat on all sides; drizzle tuna lightly with olive oil.
  • Grill over a medium-hot fire for 4-5 minutes per side for medium rare, depending on thickness.
  • Serve with a large spoonful on the butter on top of each steak.

For this meal you can use any kind of tuna, Blue Merlin, or "palamida" fish (something like white tuna, I do not know the English name) which you can find in Adriatic Sea. Lemon-garlic sauce is also sauce you can use for any kind of grilled fish, although you must be careful if you use white meat fish with delicate flavor - garlic can overcome so you will not taste the fish at all. In the photo I have submitted there is this "palamida" fish.

500 g tuna (or 3 steaks)
5 g salt
10 g garlic (or 4 garlic cloves)
10 g lemon juice (fresh lemon juice)
10 g fresh parsley leaves
1/3 cup olive oil
1 teaspoon oregano
2 g black pepper (grounded)

Steps:

  • Season steaks with salt and soak them in olive oil 30 minutes before putting on grill (or grill pan). Grill steaks until done.
  • Before prepare lemon juice, finely minced garlic, finely minced parsley leaves, pepper, olive oil and oregano, stir all ingredients well and leave 30 minutes until all flavors combine and get used to each other.
  • Pour juice over fish before serving. That is it! (leftovers of lemon-garlic sauce can be preserved hermetically covered in refrigerator for 5 days).

1/2 teaspoon dried chili pepper flakes
4 tablespoons extra virgin olive oil
2 tablespoons water
1 1/2 tablespoons fresh lemon juice
1 garlic clove (peeled and finely chopped)
1 tablespoon fresh oregano, leaves (chopped)
2 tablespoons flat leaf parsley, chopped
2 tablespoons capers in brine (drained and finely chopped)
salt, to taste

Steps:

  • Preheat a griddle pan until smoking hot or preheat the broiler to high then reduce the heat to medium-high.
  • In a medium size bowl, whisk the oil with the water until thick and creamy. Whisk in the lemon juice with a few pinches of salt. Stir in the garlic, oregano, capers, chilies and parsley.
  • Lightly brush the tuna steaks with the spicy dressing and cook on the preheated griddle pan or under the broiler for 2 minutes on each side.
  • To serve, make a diagonal cut in the middle of the tuna steak so you get 2 pieces per portion. Place the pieces, overlapped, in the middle of a serving plate and drizzle over the spicy dressing.

1 tablespoon butter
2 (5 ounce) tuna steaks
salt and ground black pepper to taste
⅓ cup fat-free half-and-half
¼ cup garlic-and-herb spreadable cheese (such as Alouette®)
1 teaspoon lemon juice
2 cups fresh spinach

Steps:

  • Heat a nonstick skillet over medium heat. Melt butter in the hot skillet. Season tuna steaks with salt and pepper and place in the skillet. Cook for 3 to 4 minutes per side. Remove to a serving plate and keep warm.
  • Add half-and-half and spreadable cheese to the same skillet and stir until incorporated. Add lemon juice. Set 2 tablespoons of the sauce aside. Add spinach to the remaining sauce in the skillet and cook until wilted, 1 to 2 minutes.
