For this easy balsamic salmon recipe you sear the salmon with a simple balsamic glaze. It's so tasty and takes less than 20 mins to whip up.

- Heat oil in a large skillet over medium to high heat. Season both sides of salmon with salt and pepper. Add salmon to skillet and cook 1 to 2 minutes per side, until golden brown.
- While the salmon is cooking, whisk together honey, vinegar and red pepper flakes in a small bowl. Add vinegar mixture to skillet and simmer until fish is fork-tender and liquid reduces and thickens, about 5 minutes. For a thicker, reduced sauce, simmer for 5 to 10 additional minutes. You may need to remove the salmon during this process, just to make sure it doesn't overcook.
- Plate salmon and serve with sides of your choice.

Steps:
- Allow salmon to rest 10 - 15 minutes at room temperature. Meanwhile, in a medium saucepan combine balsamic vinegar, white wine, honey, dijon mustard, rosemary and the garlic.
- Heat mixture over medium-high heat and bring to a boil, then reduce heat and simmer over medium-low heat until sauce has thickened and reduced to about 1/3 cup, about 10 - 15 minutes, stirring occasionally.
- Remove from heat and pour through a fine strainer into a heat proof dish. Set aside.
- Season both sides of salmon with salt and pepper. Heat oil in a 12-inch non-stick skillet over medium-high heat.
- Add salmon fillets and cook, without moving until salmon has nicely browned on bottom, about 3 - 4 minutes. Carefully flip salmon to opposite side and continue to cook 2 - 3 minutes longer until salmon has cooked through.
- Serve warm drizzling each fillet with balsamic rosemary glaze. Garnish with finely minced rosemary or parsley if desired

- Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil (avoid parchment paper), then coat with non-stick cooking spray.
- In a small skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant and beginning to brown, about 2 minutes, watching carefully so that it does not burn.
- Add the balsamic vinegar, honey, mustard, salt, and pepper. Whisk and simmer until the mixture thickens; about 4 minutes.
- Place salmon skin-side down on the prepared baking sheet. Brush liberally with the glaze.
- Bake for 5 minutes and then remove from the oven.
- Baste with the glaze, then bake 5 to 10 additional minutes, until the fish flakes easily with a fork and is cooked through.
- Sprinkle with chopped parsley and serve.

SALMON IN GARLIC BALSAMIC REDUCTION
I revised this recipe from a shrimp recipe I had, called Garlic Shrimp. I added the balsamic and a few other things, and - voilá! - a new meal. Very tasty!

- 1. If using frozen salmon patties, let them thaw in the refrigerator. Rinse patties under cool water; pat dry w/ a paper towel. Set aside. OR: if you're pressed for time, you can thaw the pre-packaged steaks in a bowl of cold water, leaving them in the plastic sealed bag until they are thawed. Don't soak the opened fish in water.
- 2. In a med. sauce pan, melt the olive oil and butter over medium heat. Add the pressed or finely minced fresh garlic and the red pepper to the heated oil/butter mixture, and stir just until the garlic is glisten-y and fragrant and golden, about 30 seconds! Do not let it brown. Garlic burns very easily, so be watchful!
- 3. Lay the salmon steaks on top of the garlic. Pour lemon juice, balsamic vinegar over salmon. Sprinkle with dill seasoning. Turn to low, and cover. Allow salmon to poach for approximately 15 minutes. Remove lid, and add 1 Tbsp. butter. Let the butter melt, and continue to cook, uncovered, for just a few minutes while the sauce thickens slightly and reduces to about half.
- 4. Season with coarse sea salt and fresh-ground black pepper. Serve immediately, pouring some of the balsamic reduction over each piece of salmon.
- 5. This is healthy and tasty, and goes well with a nice side of broccoli, brussels sprouts, or spinach ... something green and leafy!
PLANKED SALMON WITH HONEY-BALSAMIC GLAZE
Cedar-Planked Salmon, a smoky, earthy take on the favorite fish, is a dish commonly prepared in Washington State, where they are plentiful. - Preheat the broiler. Preheat the oven to 400 degrees F.
- If using a side of salmon, cut about halfway through the flesh about every 5 to 6-inches so there are some spaces for the glazes to sink in. If using salmon fillets, slice about 8 to 10 sliced angles into flesh, to help flesh more completely soak in the glaze.
- In a small bowl or cup, mix the salt, pepper, and dry mustard.
- In a medium glass bowl, heat the honey in the microwave for 30 seconds to liquefy further. Remove from the microwave and mix in balsamic vinegar.
- Brush the top of the salmon fillets (not the skin side) with the melted butter. Season the flesh side with the spice mixture. Brush with the honey-balsamic mixture, reserving some for later.
- Put the soaked planks under the hot broiler, about 5 inches from the heat source, until the wood is browned on top, about 3 minutes. With tongs, carefully remove the planks from the oven.
- Immediately brush the browned surface with olive oil, then lay the salmon fillets on the oiled surface, skin side down.
- Put 2 cookie sheets in the oven below where the planks will go to catch any glazes or juices that run off. Return the planks to the broiler and cook the fish for 10 minutes. Baste with honey-balsamic and place in oven. Cook until it is done to your taste, about 10 to 15 more minutes, or 20 minutes total for medium.
- Remove the fillets to a platter, or immediately serve directly from the planks.
